chorizo and beans burrito with chipotle sauceI recently found La Morena products in my local Ralph’s, I love my grocery store it always have fresh products and a good variety of the latino products.
And let me tell you, first I’m from Costa Rica and finding good quality latino products is being a little difficult, but am happy with all the products I can find there.
So lately I went for a hunt of Chipotle pepper in adobo, and I really want good flavor because spicy food is not very common in my country, I need something with a good kit, with a traditional flavor, and 100% Mexican, yes my daughter love burritos and a good burrito have to be 100% authentic.
I find La Morena Chipotle Peppers in Adobo, and let me tell you it was an amazing find, the flavors is amazing and the smokiness is perfect, and of course the perfect heat.

Heres the recipe I made with the delicious Chipotle Peppers

INGREDIENTS

  • 1 can of refried beans
  • 3 La Morena Chipotle Pepper (units not cans)
  • 1 cup of beef chorizo
  • 1/2 cup of dice onion
  • 6 medium size flour tortillas
  • 2 cups sour cream
  • a handful of cilantro
  • 1 cup queso fresco
  • Salt and Pepper to taste

DIRECTIONS

In a pan on medium heat, add oil and cook the onion with the chorizo about 3 minutes, add the beans, mix well and cook for 2 more minutes, set aside.

chipotle sauce

In the food processor place cilantro, chipotles, sour cream. salt and a little pepper, pulse until all is combine.

burrito

To form the burrito, heat up the tortillas, smear some of the sauce and add a spoonful of the chorizo and bean mixture, top with some queso fresco and listo.

This recipe makes 6 burritos.

Preparation time: 10 minutes
Cooking time: 5 minutes

got milkAs a mom of two wonderful girls I’m always worried about my family nutrition, and because a good source of calcium, protein and vitamins is essential for our body, I just simply and always give my daughters milk.
Milk is an amazing fuel and we must drink it everyday.
Early on, we are introduced to the daily practice of drinking milk, not just at mealtimes, but also to act as a source of energy throughout the day. The main concern today, is to find the healthiest way to feed the family, and what many may not know, is that milk is an essential food full of vitamins needed to help grow and strengthen our bones and teeth.
An addition to drinking milk every day, we must add daily exercise, this is a great combination for the future!
Personally I recommend, especially because milk is not only great to accompany cereal or cookies and prepare smoothies, drinking a glass of warm milk before bedtime will help you to sleep better.
And you are asking me why should I care? Well my goal is to invite you to get more and more involved in you family nutrition by adding a glass of milk to your table, substitute sodas, juices and other drinks. Milk is necessary and must be part of your daily diet; you can even bring the cow to the table,…Not really, it’s just a joke, but you know what I mean.
And I’m sharing this with you because as I said before, I want my kids to be their strongest every day. Not only my kids, but my husband, my mother, my sister, just everybody in my family, needs to be more and more involved.
I also want to let you know a little secret, in my house I keep 3 different kinds of milk, yes I know, but this is why. I just love cold milk for my coffee, smoothies, and warm at night is delicious; but I also have fat free that I use for my recipes. I make a lot of recipes with skim milk, and 1 percent, just because sometimes I feel dangerous.
Well there you have it, the best way to introduce more and more milk every day to your family.

Pumpkin and Apple Bundt Cake #BundtBakers

pumpkin and apple bundt cakeWelcome to another recipe with the #BundtBakers family, this month ingredients is, well actually are many ingredients we can use this month for our recipe, like apples, pumpkin, pear, squash, anyway, all the autumn harvest.
And you all know the I love baking with this kind of ingredients, they are great in flavor, texture and you can combine them to give a new level to your daily bundt recipe.
I incorporate 2 of my favorites in one, apples and pumpkin, I just fell like I need it to say hello to Fall, and what better way to do it, the with this two ingredients.
Perfectly mix together, and you will have a kind it flan-ish like bundt cake, you’ll see when you make it.

INGREDIENTS

  • 2 apples peel and cut in little pieces
  • 1 cup pumpkin puree
  • 1 teaspoon grown cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup brown sugar
  • 2 teaspoons baking powder
  • 3 cups AP flour
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • pinch of salt
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a saucepan combine apples, pumpkin puree, cinnamon, brown sugar and nutmeg, cook for 3 minutes, one ready place the mixture in the bowl of the electric mixer and beat in low speed for 5 minutes, this help to cold down.
  3. Add buttermilk and oil, speed up a little and add eggs, vanilla extract, in a separate bowl sift flour, salt and baking powder, add to the mixture above and beat for only 3 more minutes, this is enough time for the mixture to get well combine.
  4. Pour into a prepared bundt pan and bake for 1 hour and 20 minutes of until the center of the cake is completely cook.
  5. Allow to cool and invert into a cooling rack.
  6. This recipe makes one bundt cake.
Preparation time: 15 minutes
Cooking time: 1 hour 20 minutes
Level of the recipe: Easy

This are the best cookies for you to take to any party, special occasion or simple because is rainy outside.
I made this not so sweet but burst in nutty flavor, oh yes this are very, very nutty cookies, and I hope you like them.
So grab a glass of milk because we have the cookies.

INGREDIENTS

  • 2 sticks of soft butter
  • 4 tablespoons confectionary sugar
  • 2 cups AP flour
  • 1 cup mix nuts, any kind you like finely chopped
  • 1 tablespoon vanilla extract

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Add butter and sugar to the mixer and beat for 5 minutes, add flour and vanilla, beat for 2 minutes, then add the nuts mix for just 1 minute.
  3. In a baking sheet with parchment paper, place 2″ ball of the dough, and pound a little with a fork.
  4. Place in the oven and bake for 20 minutes, until holder brown.

This recipe makes 24 cookies

Preparation time: 10 minutes
Cooking time: 20 minutes

Potato Bread With Raisins #BreadBakers

Ok, I know it is still hot outside but, you can’t say the making homemade bread is something imposible, the smell and flavors are so different and of course your family will fell so happy to be eating a bread they can actually pronounce the ingredients.
You know me a little humor makes a difference.
I made for you, soft, crispy and delicious Potato bread, yes this bread is made with real potatoes, this is my favorite bread to make, the crumb is soft, not to sweet not to salty and brown to perfection.
The perfect afternoon or breakfast bread, with some cream cheese, jam or butter, oh my! I need a piece know.

INGREDIENTS

  • 3 yucan gold or 2 Idaho potatoes peel, cut in pieces and cook in water with salt.
  • 2/3 cups milk
  • 2/3 cups sugar
  • 1/2 teaspoon salt
  • 2/3 cup butter
  • 3 egg and 1 yolk
  • 1 teaspoon of milk
  • 2/3 cup warm water
  • 2 packages of active dry yeast
  • 6 cups flour
  • 1 cup raisins
  • Zest of 1 lemon

DIRECTIONS

  1. Preheat the oven to 400°F.
  2. In a sauce pan on medium low heat add milk and bring to boil, turn off the heat and add butter, lemon zest, salt and sugar, make a mash with the potatoes and add 1 1/3 cup to the above mixture.
  3. Add the yeast to the water and le it sit for 5 minutes, you”ll see the it starts to make an sponge, then add to the milk and potato mixture, let it cool for a bit and place in a bowl of a stand mixer, you don’t need a hook mi mix the dough.
  4. Begin to beat the mixture on medium high speed, add the eggs one by one and 3 cups of flour, one at a time, beat for 1 minute and place dough on a floured surface, this is when you will add the rest of the flour, do not use more then the 3 cups left.
  5. Knead the dough for 10 minutes, do not be gentle she needs a lot of stress relive therapy, add the raisins while your kneading.
  6. Let it rest for 5 minutes, in the meantime mix the yolk with the milk.
  7. Cut the dough in half and place each peace in a loaf bread mold, and brush the yolk and milk mixture on the top, let it rise for 45 minutes.
  8. Once all big and delicious, bake for 30 minutes.
  9. This recipe makes 2 loaf breads.

Coconut Meringues #TheLeftoverClub

coconut meringuesOk is that time again, the one when we are sending and sharing delicious recipes to other members of the club.
And this month I was really into light and different specially because summer is not very pleasant to weather to be baking a lot.
Thats why I make this light and super delicious coconut meringues, with a touch of sunset, because I add some orange color, they look pretty.

INGREDIENTS

  • 3 egg whites
  • 3/4 cup sugar
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon coconut extract
  • 1/8 teaspoon salt
  • orange food coloring

DIRECTIONS

  1. Preheat the oven to 200°F.
  2. Line a cookie sheet with parchment paper; set aside.
  3. In the bowl of a electric mixer, combine, egg whites, salt, cream of tartar and coconut extract, beat on medium speed until soft peaks form.
  4. Gradually add sugar, about 1 tablespoon at a time, beating on high speed until stiff peaks form.
  5. With a toothpick, paint stripes of the orange food coloring on the inside of a pastry bag fitted with a 1/2 inch open star tip, and carefully transfer meringue into the bag.
  6. Pipe the meringues in the shape the you like, I like a flower type shape.
  7. Bake for 2 hours or until meringues appear dry and firm when lightly touched.

This recipe makes 28 meringues.

Preparation time: 25 minutes
Cooking time: 2 hours

Pear and Almond Muffins #TwelveLoaves

pear and almond muffinsI’m so exited to share this recipe with you, and specially with the #TwelveLoaves group.
We are inspired this month by pears, making all kinds of incredible, different and delicious recipes, the I’m sure you can’t wait to make at home.
I made for you this low, sugar, gluten free muffins, yes gluten free, my first recipe like this, and let me tell you’re not going to miss the flour, because I add some almond flour to complement and to give this muffins a different twist.
Made with cook pear and a lot of love, are our new favorite, not because I made but because my family love to try new and different recipes.
So I really hope you make them and let me know if you like them.

INGREDIENTS

  • 2 pears peal and dice
  • 1/2 cup brown sugar
  • 1 teaspoon grown cinnamon
  • the juice of 1/2 lemon
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1/3 cup coconut oil
  • 1/8 teaspoon salt

DIRECTIONS

  1. Preheat the oven to 350°f.
  2. In a sauce pan, place pears, cinnamon, brown sugar and lemon juice and cook for 5 minutes in low heat or until the pears are soft.
  3. In a bowl mix together oats, almond flour, salt and baking soda. In other bowl mix eggs, vanilla, oil and sugar.
  4. Once the pears are ready add to the oats mixture and stir then add that mixture to the egg mixture and stir until well blended.
  5. You need to have ready a muffin tin with some liners, them add 2 tablespoons of the mixture, bake for 26 minutes.
  6. Let cool completely before serving.
  7. This muffins are a great snack for school or as a breakfast.

This recipe makes 12 muffins.

Puff Pastry Cheese Sticks #SundaySupper

puff pastry cheese sticksI love, love, love, a good holiday party, bean with friends and enjoy good food, is what we need specially for this Labor Day.
And the #SundaySupper team just got what you need, a lot of different ideas for an awesome entertainment day.
We have easy, delicious and all kinds of ideas for a tray full of sweet and savory appetizers.
In this occasion I made for you, some cheese puff pastry sticks, easy and fast, and the best part you can buy the puff pastry, peeper and bake this stick in just 25 minutes.
Try them in your next party or just make them for the pleasure to eat.

INGREDIENTS

  • 1 package of puff pastry
  • 3/4 cup grated parmesan cheese
  • 1 teaspoon dry oregano
  • 1 teaspoon black pepper
  • 2 tablespoon melted butter

DIRECTIONS

  1. Preheat the oven to 325°F or 160°C.
  2. Place the 2 sheets of puff pastry in a flour base table or cutting boar, and roll out just to even it.
  3. Mix together cheese, oregano and pepper.
  4. Brush melted butter in one side and sprinkle some of the cheese mixture, do the same in both sheets.
  5. You can brush melted butter in both sides of the puff pastry sheet, but is not necessary.
  6. Cut the puff pastry in 1″ strips and place in a baking sheet, if some of the cheese falls of just put it back.
  7. Bake for 20 minutes and let it cool completely before serving.

Lemon Lime Wine Sparkle

INGREDIENTS

• 1 bottle of Riesling Gallo Wine
• 500 ml of lemon lime soda
• 2 lemons
• 4 cups of ice

DIRECTIONS

• This is a very simple drink to make, just cut the lemons in slices, add to a pitcher with the ice, wine and the lemon lime soda, mix and let it cool for ½ hour, and is ready.
• I also recommend to cool the wine and the soda the day before for less ice and clean and better flavor.
• Or just make the drink the day before and let it sit in the fridge, this is even better to keep the delicious flavor of the wine.

I made this soft and chewy coconut cookies, with corn flakes and sweet condensed milk, two of my daughters favorites, no bake, no problem because they love them, easy and fast, for a simple dessert after a great meal.

INGREDIENTS

  • 4 cups corn flakes
  • 1 can sweet condense milk
  • 1 cup grated coconut
  • 1 teaspoon vanilla extract
  • 1 stick butter

DIRECTIONS

  1. In a sauce pan ad butter and condensed milk and let ir bowl in low heat for 1 minute, then ad vanilla, coconut and corn flakes and mix until combine.
  2. Place tablespoons of the cookie in a wax paper and let ir cool completely.

This recipe makes 30 cookies.
