A while back a dear friend recommended to me a new show the her kids were watching, fun, entertain, and full of great values and lessons of faith.
Of course I was very intrigue and we went directly home that day just to watch the new show.
And let me tell you VeggieTales is not only fun but it is also full of great lessons for my kids, a great understanding of values of faith and a huge deference from others shows too all the snappy songs but you can see how they learn more and more everyday and share with there friends a new way to see the challenges of growing up.

The best news we have this week was to know the now we can have our own VeggieTales at home, and you too, you can fun this funny and amazing characters at your local Walmart and that was exactly what we did.

VeggieTales has been making great songs and shows for years, but now it is time to bring the stories that you love to life with their toys. Your kids will be able to sing and play all day long with the toys available at Walmart.

This was a total adventure definitely going shopping with my girls is really fun. We enter the store and as all of you know it is a BIG store, so we play a game and of course the price was an adorable VeggieTales toy of their choice.

We start our game very easy, first we count the aisle, then we read the list in the aisle and last we look for the toys with the picture I show to the girls, as a good VeggieTales always said, togethers is always easy and better to find the solution, so we play until we find the toys.

My girls were so happy and my little daughter, which “won” the game, was so exited to choose the new addition to the family.

Her favorite caracter is Larry, a good friend and companion to all her adventures and share with her friends the good lessons she is learning thanks to the VeggieTales.

I really encourage you to start this adventure with your kids, go and take home one of this amazing friends and watch with your kids the adventures of the VeggieTales, a fun way to learn.

Cheese and Pineapple Bread Pudding

I love holidays a lot and my family too, sharing and spending time together are great things about this events, the only part that I don’t really like is the amount of leftovers I have during this times of the year.
Sometimes we eat leftovers for like a week, specially in thanksgiving, and by the time we finish I don’t really know what else to make with turkey; for easter, it very similar, but easier for me to create different recipes for my family to enjoy.
This time I have lots of bread, and the perfect way for me to use day old bread it’s to make bread pudding. This is a great recipe if you want a bread pudding with a different twist, cheese and pineapple are the perfect combinations to make it more interesting and a little different from everything else.
Not very sweet and cook to perfection, is definitely a new favorite in my house and maybe the new request for our easter dinner.

INGREDIENTS

  • Any kind of day old bread that you have, cut in pieces.
  • 1 can condensed milk
  • 1 can evaporate milk
  • 1/2 cup asiago cheese, grated
  • 3 eggs
  • 1 teaspoon ground nutmeg
  • 1 stick melted butter
  • 1 small can pineapple chunks
  • 1/2 cup pineapple juice

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. In a bowl mix together, condensed milk, eggs, evaporated milk, nutmeg, pineapple juice and butter, then add cheese and pineapple, add to the bread cut in pieces, I used 1 loaf of french bread cut in cubes.
  3. With your hand start mixing all the ingredients until the bread is super soft and the liquid is completely absorb by the bread.
  4. Place in a grease mold, I used 4 little baking dishes the I recently bought but you can use any kind you like, just make sure you can fix all the mixture in it, don’t want to waste any drop.
  5. Bake for 50 minutes, serve hot or at room temperature.
  6. This recipe makes 4 small pans or 1 normal size.

Cooking time: 50 minutes

This month we are baking inspired by girls scout cookies, because they are delicious and why not using this cookies as inspirations for great bundt cakes.
I love a good classic, for me shortbread and lemon are two of my favorites, so it was super easy for me to choose what type of bundt I want it to make.
Am also trying to eat smaller portions and a mini bundt its the perfect size to assure me the portion I want, lately I’m trying really hard to short my list of sweet treats.
Ok back to the bundt, this deliciously made mini bundt look super cute, taste amazing and you can easy share this as a party favor or a kids birthday dessert.
The lemon drizzle gives it some freshness and citrus flavor, to make it more appealing to the senses.

INGREDIENTS

  • 2 sticks of soften butter
  • 1 1/2 cups sugar
  • 2 cups flour
  • 4 eggs
  • 1 teaspoon baking powder
  • 1 vanilla bean
  • 1 1/2 cups whole milk
  • pinch of salt
    DRIZZLE
  • 4 tablespoons powder sugar
  • 2 teaspoons of lemon juice

DIRECTIONS

Preheat the oven to 350 degrees.

Cream butter and sugar for 5 minutes. In a bowl sift flour, baking powder and salt, set aside.
Add the eggs one by one to the butter mixture and beat for 2 minutes.

I was drinking coffee while making my second batch.
Anyways, cut the center of the vanilla bean and with the other side of the knife remove all the caviar, yes caviar.

Alternate dry ingredients with the milk until the mixture is combine.
Ok so I use a Wilton mini bundt cake for this recipe, but if you don’t have one just use your normal bundt cake pan, don’t buy one just for this recipe.
Add 1/4 cup of the mixture to each cavity and bake for 40 minutes or until golden brown and cook in the center.
To make the drizzle just combine the powder sugar with the lemon juice until it is runny but not super runny, don’t let it run :).
Drizzle each mini bundt and enjoy.

This are products that I personally use every day for different activities, lunch for the kids to take to school, an easy dinner with the Kraft Mac n Cheese and Caparison juice for them to enjoy with friends at the playground.

This is a dessert the my father and I used to make, a delicious cake with lots of different milks and my own twist a Cream Cheese filling.

A tradicional dessert in the latino culture the everybody can enjoy and you can definitely put a twist on it.
Add some rum, coffee or chocolate and you will have a completely different kind of tres leches, you can even add Jell-o to the filling just like me any flavors and it is even better.

INGREDIENTS PART 1

  • 6 eggs (separated the yolk from the white)
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 3/4 cup salt
  • 1 teaspoon lime zest

Directions

Preheat the oven to 350 degrees.
In the bowl of an electric mixer with a whisk attachment, add whites and salt, beat until soft picks are form, then add the sugar by spoonfuls, then add the egg yolks one by one and lime zest, beat for 3 minutes. By hand and using a sifter add flour and by using a sifter incorporate the flour with the baking powder folding gently with a spoon.
Place in a 9×13 baking pan and bake for 25 minutes or until golden brown.

  • 1 cup whipping cream
  • 1 can evaporated milk
  • 1 can condensed milk

DIRECTIONS

In a bowl mix all the ingredients until well incorporated.

1 8 oz package of PHILADELPHIA Cream Cheese
3 tablespoons strawberry Jell-O
1/4 cup hot water
1 cup heavy whipping cream

DIRECTIONS

In a bowl mix water and Jell-O until dissolve add the cream cheese and mix until incorporated, then add the heavy whipping cream and beat until soft picks are form.

TO ASSEMBLE THE CAKE

Once the cake is completely cooled pierced the surface with a fork and cut in half, add some of the condense milk mixture to the bottom, about 1/2 cup, place have of the cream cheese filling and place the other half of the cake on top and add another 1/2 cup of the condense milk mixture; then add the rest of the filling on top and refrigerated over night.

INGREDIENTS

  • 1 3/4 cup flour
  • 1/2 cup sugar
  • 1/4 instant oats
  • 1 stick cold butter
  • 1 egg
  • 1 can condensed milk
  • 1 cup mini chocolate chips
  • 1 cup chopped almonds
  • 1 cup M&M’s® Crispy

DIRECTIONS

Preheat the oven to 350 degrees fahrenheit.
In the bowl of a stand mixer add sugar, oats, flour and mix, add the cold butter (cut the butter in pieces first) and mix until crumbs are form, by hand add the egg and reserve 1 cup of this mixture.

In microwave safe bowl add the condense milk and heat it in the microwave for 1 minute then add the chocolate chips and mix until completely melted.
Know in a 9×13 pan well grease, add the first flour mixture and spread well, then add the condensed milk mixture on top, to the remaining flour mixture mix almonds and M&M’s® Crispy and spread it on the top.

The best part the smell of bacon is irresistible, everybody want it to help me make the tortilla, it is so inspiring to see all my family gather in the kitchen laughing and eating almost all my Farmland® bacon.

This Tortilla is inspired by a version of my grandmother, she used to make eggs with lots of bacon, onions and tomatoes, but I change it a little bit, by adding red bell pepper and sour cream to the eggs.

  • 8 Hold Eggs
  • 1/4 cup sour cream
  • 1 12 oz package Farmland® bacon
  • 1 onion chopped
  • 1/2 cup red bell pepper
  • Salt and pepper to taste

  1. Heat a pan to medium low heat and cook the bacon, I prefer my bacon on the crispy side, and set aside; in the same pan cook onions and red bell pepper for 3 minutes, in a bowl mix eggs, pepper, salt and sour cream, add the egg mixture to the onions, then add the bacon, already mince and cover the pan lower the heat and le it cook for 10 minutes.
  2. Check the tortilla about 5 minutes trough cooking, add the cheese, cover and let it finish cooking.
  3. You can perfectly place this in the oven, but the method of covering the pan with a lid works perfectly.
  4. Once ready place the tortilla on a plate and serve hot or a room temperature.
  5. This recipe makes 1 tortilla, you can always double the recipe and make more.

I decide to make a bread to welcome the spring, I know we are  not there yet, but I can smell it in the air already, beautiful lemons and strawberries, Yum!; ups, ok yes lemons and chia seed, because why not, this are very popular right know and make a very taste and nutty combination.
And if you want your kids to try it, just make this quick bread and I asure you they will love it.

INGREDIENTS

  • 2 1/4 cup AP flour
  • 3 teaspoons baking powder
  • pinch of salt
  • zest of 2 lemons
  • 3 teaspoons Chia seed
  • 4 eggs
  • 1 1/4 cup sugar
  • 1 cup sour cream
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • The juice of 1 lemon

DIRECTIONS

  • Preheat the oven to 350 degrees Fahrenheit.
  • In the bowl of an electric mixer, beat sugar and sour cream for 3 minutes, then add vanilla extract eggs 1 by 1 and oil, mix for 3 more minutes.
  • Sift together, flour, baking powder and salt, then add lemon zest and the chia seed.
  • To the sugar mixture, add lemon juice and the dry ingredients, mix just to combine.
  • I use mini loaf bread mold to make it pretty and tiny, but you can use a normal size one, spray some oil and pour the mixture in the mold.
  • Bake for 45 minutes or until golden brown and cook in the center.
  • This recipe makes 4 mini loaf breads or 1 normal size.

Welcome to another month of delicious recipes, I love to share with all of you my creations, and I really love to be able to send some of those treats to great friends in the #TheLeftoversClub.
This month am partner with Shaina from Take A Bite Out Og Boca, she is a very talented cook and I love all the recipes she share in her blog.

This month I decide to make something different, a delicious bite to welcome spring and say a shy hi to summer, Tropical Fudge is made with coconut and lime zest a super easy dessert to enjoy any time of the day, refreshing and not to sweet.

I’m crossing my fingers the she love it and of course that you enjoy this recipe too.

INGREDIENTS

  • 1 can condense milk
  • 2 cups powdered milk
  • 3 tablespoons butter
  • zest of 1 lime
  • 3/4 cup unsweetened grated coconut

DIRECTIONS

  1. In a heavy bottom pot heat to medium low heat add the butter to melt, add condense milk and mix well to incorporate, add the lime zest, powdered milk and coconut; mix to incorporated and low the heat completely, cook until the mixture separated from the bottom of the pot.
  2. You can make tablespoon balls with the mixture still hot or place in 2 8in. pie pans and let it cool completely.
  3. If you decide to use the pie pans, once the fudge is cool cut in pieces and enjoy.

This recipe makes about 24 pieces of fudge.

This month we have the great inspiration of the Italian bread, the best of the best in this cuisine.
I love a good focaccia bread, but sometimes I don’t have the time to make it with yeast, so I try and experiment with different recipes and methods and found the perfect compromise to this delicious bread.
So easy and fast you will love the crunchiness and the flavor, a mixture of basil oil with oregano and parmesan cheese.
Perfect for a side in salads or pasta, and of course just for the pleasure of eating perfectly delicious Italian bread.

INGREDIENTS

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon basil oil or olive oil and more for the baking sheet
  • 1 teaspoon dry oregano
  • 1/3 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 cup water

DIRECTIONS

  1. Preheat the oven to 425 degrees F.
  2. In a bowl add, water, flour, baking powder, salt, oregano and garlic powder, mix until everything is incorporated, then turn the dough onto a floured surface and knead for about 3 minutes. Form a ball and place it in a previously grease baking sheet, pour a little oil in the surface of the dough and spread into a rectangular shape.
  3. Sprinkle the parmesan cheese and bake for 25 minutes or until golden brown.
  4. This recipe makes 1 focaccia bread.

And we are getting ready for the Oscars; today we want to share with all of you a little bit of elegant, diferente and delicious recipes so you can make a fabulous red carpet meal, and of course enjoy the finest represent to Hollywood.
I made for you a favorite, Strawberry Galette in a mini form, yes this is the most easy, delicious and elegant dessert you can serve tonight, it have fresh fruit and some of the most incredibles combinations ever sweet and tart, yes tart, because the addition of lime zest give this dessert a freshness the is completely necessary cut some of the sweetness.
Serve with a side of whipped cream and I smuggle some blueberries just because is my daughter favorite fruit, is the best late night dessert, light, fresh and delicious.

INGREDIENTS

  • 1 package Storebought Pie Crust (2 Rounds Of Dough)
  • 3 cups of strawberries, cut in pieces
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • Zest of 1 lime
  • You can also add blueberries or raspberries

DIRECTIONS

  1. Preheat the oven to 400 degrees.
  2. In a bowl mix strawberries, cornstarch, sugar and lime zest, set aside.
  3. Unroll the dough and cut rounds of pastry with a 5-inch bowl or cookie cutter, I used a tart mold so the galette don’t falls apart, this help to keep the fruit inside de dough.
  4. You can easily get about 10 disk of dough total.
  5. Ok, know place about 2 tablespoons of the fruit in the middle and you can fold the edges or just leave free form in the mold.
  6. Bake for 20 minutes.
  7. Serve with a side of whipped cream.
  8. This recipe makes 10 mini Galettes.
