There is nothing better than start the week with a good, delicious and healthy recipe, specially when is so good for you and super easy to make. I love to create healthy side dishes for my family and to teach my kids that all foods are good for you and good for your body.
This recipe is inspired by a stew that my mom used to make when we were little and she make it for us specially after a long day of study and doing homework, what a great way to have an excuse to eat a healthy meal.
As a side dish this stew always is a great complement to make for fish, or just prepare white rice and this stew and that is it, you don’t need a piece of meat or poultry.
In my case I make it for my kids once a week, you guess it on Mondays, I think that when you start the week with a healthy stomach it help you with the daily routine of the rest of the week, and let me tell you there is nothing better than a light meal on a Monday night, it helps you to sleep better, keep your kids focus and ready for the next day and you can save the leftovers (if you have some) for lunch and it would taste amazing.

- 3 zucchinis cut in chunks
- 1 cup chopped onion
- 2 cups chopped tomatoes
- 2 teaspoons garlic, mince
- 1/2 teaspoons cumin
- Salt and pepper to taste
- 1 teaspoon olive oil
- In a saucepan on medium low heat, add oil, onions and garlic, cook for about 3 minutes. Add the tomatoes and the zucchinis, season with salt, pepper and cumin. Lower the heat and cook for 10 minutes.
- One ready don't forget to taste to check the salt. Serve as a side dish or to complement any rice recipe.
