If I learned anything since I was little, is that on occasion the food budget was cut and the meat was not an option, so as good Costa Rican girl I ate what my grandmother prepared.
One of the favorite dishes at home was the Arroz con Palmito (Hearts Of Palm Mix Rice) is very inexpensive and easy to make, the big advantage is that you can use leftover rice from the previous day and believe me in my house rice was one of the things that always leftovers.
So this week we bring you delicious recipes that will help keep the budget in line and not have to break the piggy to prepare delicious meals for your loved ones.

INGREDIENTS
- 1 can 14 ounces of Hearts of Palm cut in pieces.
- 4 cups cooked rice from the previous day
- 2 cups mozzarella cheese
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 1/2 cup fat-free half and half
- 1/2 cup chopped cilantro
- 1 cucharada de mantequilla
- Salt and pepper to taste
DIRECTIONS
Preheat oven to 400 degrees F.
In a hot pan melt butter add onion and garlic cook for 3 minutes or until onion is very soft.
Add the hearts of palm, stir well, add the half and half and rice stir well, season with salt and pepper.
Finally add the cilantro and turn off the heat.
In a greased baking dish place a layer of cheese on the bottom and half the rice, place another layer of cheese and the rest of the rice and sprinkle the remaining cheese on top.
Bake for 15 minutes.
Makes 6 servings.
