So happy to be back this Sunday to share delicious and fabulous food with all of you. And what better way that with the #SundaySupper family.
Today we have delicious hometown food, smoothies classic and unique the you love to eat growing up.
When I was little my favorite food was always rice, yes, rice with all things you can imagine, and very close to my house was this place where they had all things rice, sweet, savory, baked, fried, Oh My! delicious, and once my family and I used to go.
I prepare for you one of my all time favorites, this rice is just the perfect combination of, sweet and savory food, a classic in my hometown and now a go to for your family supper.

INGREDIENTS

  • 1/2 cup minced onion
  • 1/2 cup minced red bell pepper
  • 1/2 cup minced cilantro
  • 3 cups parboil rice, already cook
  • 1 small can crushed pineapple
  • 3 cups cook pull pork
  • 3 teaspoon achiote powder
  • 1 teaspoon oil

DIRECTIONS

  1. Heat a pan to medium high heat, add the oil, onion and bell pepper, cook for 2 minutes, add the rice (remember the rice needs to be completely cook, and season with salt) and the achiote powder, mix until combine, than add the pull pork and mix until all the rice is uniformly with achiote and pork.
    Before serving add the cilantro.
  2. This recipe makes 6 servings.

Baked Rice With MushroomsHave you ever went on the hunt for a ingredient? Something you know you need it just because you want to make that specific recipe?
Well this is the case of a lot of cook everywhere and let me tell you sometimes it is hard even create a recipe with this specific ingredient.
But don’t today we have a lot of recipes with unusual ingredients the are difficult to find or you just went on a hunt for them.
I made a delicious and easy baked rice with mushrooms, and I know the this is a very easy ingredient to find but the recipe is something unusual and you know me I love to cook with rice, and show you the there are so many recipes you can make with simple and basic ingredients.

INGREDIENTS

  • 1 cup parboiled uncooked rice
  • 1 bag of frozen peas with carrots
  • 1 pound of crimini sliced mushrooms
  • 1/2 tablespoon salt
  • 1 teaspoon pepper

DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Brush 1 tablespoon of butter in a baking dish.
  3. In a bowl mix all the ingredients except the water, place the mixture in the baking dish, put it in the oven and add the water, this is the safest method you can used, and bake for 40 minutes.
  4. After the time is done, add the rest of the butter to the rice, combine well and place in the oven for 5 more minutes.
  5. Once ready, serve immediately or cover and reheat later. This rice is a great side dish for your turkey, fish or a good salad if serve cool just add some dressing.

This recipe makes 6 servings.

vegetable fried rice 2So many things to do the sometime we forget the most essential things, and off course with that I mean food, if you notice how fast the year go by know and how expensive it is to grocery shopping, it is important to incorporated budget friendly recipes to our everyday meal plan.
And this is why today the #SundaySupper team have some easy, fast, delicious and economical recipes for our super busy everyday life.
Like my vegetable fried rice, super fast and easy made with leftover rice, for any occasion and if you know me you will see how I love rice, rotisserie chicken and pasta, you need to make those ingredients a must in your house ASAP.

INGREDIENTS

  • 2 cups already cook white rice
  • 1 1/2 cup dice celery
  • 1 1/2 cup dice red bell pepper
  • 2 cups shredded carrots
  • 1/2 cup chopped cilantro
  • 1 tablespoon oyster sauce
  • 3 tablespoons soy sauce
  • 1 teaspoons sesame oil

DIRECTIONS

  1. Heat a pan to medium low heat and add the oil, celery and bell pepper, cook for about 3 minutes, don’t cook to long or they turn soft and we want crunchy vegetables.
  2. Add the rice and mix then add the carrots, oyster sauce, soy sauce and cilantro, and mix just to incorporated everything.
  3. Serve immediately with a side of salad or more vegetables.
  4. This recipe makes 3 servings.

Tuna with Rice for #WeekdaySupper

tuna with rice #weekdaySupperYou all know I love simple and easy recipes, specially for weekdays, and this one is not exception.
This tuna with rice is made with canned tuna and leftover rice, because in my house we always have leftover rice, is perfect for a quit dinner and you can also eat it cool as a salad, because the tuna taste good hot or cool, and my family love anything with rice so this is right out our alley.
So I hope you like and enjoy this recipe as much as we do.

INGREDIENTS

  • 3 cups of cook white rice
  • 1 can of tuna preferably in water
  • 1 small bag of frozen peas
  • 2 cups of sheered carrots
  • Salt and pepper to taste
  • 4 tablespoons low sodium soy sauce
  • 1 teaspoon of oil

DIRECTIONS

  1. Heat the oil in a pan and add the rice, tuna , carrots and peas, mix until incorporate, add the soy sauce, and mix for about 3 minutes until hot and a little toasty, taste the rice and if needed add salt and pepper, and is ready to serve.
  2. Serve with a side of salad, or vegetables.

Yields 4 servings.

Green Rice #SundaySupper

green riceToday we are getting ready for ST. Patrick’s Day and we put together our most amazing green recipes for this day, a little help to get you up and ready for tomorrow.
And because spring is here is a good excuse to start with some greens by your side.
So grab a chair, a drink and enjoy this fabulous recipes.
I made for you Green Rice, this is a very popular side among my family, is my grandmother favorite rice, because is full of cilantro and of course as a good latin woman, cilantro is always in our house.
Is easy and good with any type of meat or fish, great for a family gathering or even a social event.
I’m sure you are going to love it.

INGREDIENTS

  • 3 cups water
  • 1 1/2 cups long grain rice
  • 2 big handfuls of cilantro
  • 2 mince garlic cloves
  • 1/4 cup mince onion
  • 1/2 teaspoon oil
  • Salt to taste

DIRECTIONS

  1. Heat a heavy-bottomed pot to medium low heat add oil, onion, garlic and rice, cook for 2 minutes, add salt to taste, blend water with cilantro, add to the rice, when start boiling, lower the heat and cover with the lit, and cook for 20 minutes.
  2. After the 20 minutes check the rice, stir and taste a little peace this one have to be soft and completely cook, it doesn’t cook for 10 more minutes.
  3. Serve warm and the leftovers are delicious the next day too.

This recipe makes 3 cups of rice one cook.

The best part of this recipe is the you can used leftovers rice and rotisserie chicken and maybe the only ingredient the you have to buy are the bean sprouts.
This is another great recipe in our book of easy rice dish, and I encourage you to make it and share with friends and family.

INGREDIENTS

  • 3 cups cook white rice
  • 1 cup shredded carrots
  • 2 cup rotisserie chicken
  • 1 cup bean sprouts
  • 1 cup slice mushroom
  • 3 tablespoons soy sauce
  • 1 teaspoon vegetable oil

DIRECTIONS

In Wok or pan heat the oil add mushrooms, bean sprouts and carrots, cook for 3 minutes, add rice, chicken stir well then add the soy sauce and stir for 2 more minutes.
Now its ready to serve with a side of greens just perfect.

Yield 6 servings.

Our friend Foodie Stuntman is hosting this week a fabulous event, celebrating Labor Day and the unofficial ending of the summer, which is really sad, and we join him with delicious recipes so you can also be inspired by great food, drinks and desserts.
So grab a chair a plate and some napkins because you are here for a feast.

INGREDIENTS

  • 8 slices of turkey bacon chopped
  • 3 cups of cooked white rice
  • 2 garlic cloves mince
  • 2 cooked scramble eggs
  • 1 teaspoon sesame oil
  • 4 tablespoons soy sauce
  • 2 cups frozen peas
  • Salt to taste (if necessary)

DIRECTIONS

Heat a pan to medium high heat, add the oil,  turkey bacon and garlic, cook for 5 minutes, add the rice and soy sauce, mix add the peas and the eggs, stir until well combined. Taste the rice before serving to check the salt.
Serve immediately, is better hot with a side of cucumbers or a salad.

Chicken Fried Rice #WeekdaySupper

Chicken Fried RiceLike I always promise this week #weekdaysupper is a simple recipe that can be made with leftovers rice and rotisserie chicken.
This is my version of a chinese classic in Costa Rica and I love it, it was my go to dish when I did not have time to cook.
A complete meal that only need a good salad, because you will feel very full with this.
A fast and simple fried rice my personal option even for a party, and the addition of carrots give it a nice crunch.

INGREDIENTS

  • 3 cups of  cook white rice
  • 2 cups of rotisserie chicken in bite side pieces
  • 1 cup green onion chopped
  • 2 cups carrots minced
  • 6 tablespoons soy sauce
  • 1/2 teaspoon of salt
  • 1 tablespoon sesame oil

DIRECTIONS

Heat a skillet to medium high heat and add the sesame oil, wait a minute and add the carrots, rice and chicken, stir for 3 minutes, add the soy sauce, green onions and salt, stir until everything is well combine, about 3 more minutes.

Put a lid on and let this delicious rice rest for a minute.
Serve with a side of salad or just like this.

Yields 6 servings.

Easy Spanish Rice for #weekdaysupper

Easy Spanish RiceIf you need an easy and fast recipe for dinner, this is the right place for you.

In this occasion I took two of my favorite thinks rice and chorizo, to make for you this super easy Spanish Rice.
Is a complete meal or a side for any occasion you have, a fast dinner or supper and of course delicious.
So come with me and enjoy this easy, easy rice, I’m sure you’r going to love it.

INGREDIENTS

  • 1 bag 12 oz green peas
  • 5 oz Pork Chorizo
  • 1/2 onion dice
  • 3 cups of cooked white rice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

DIRECTIONS

In a hot pan add the Chorizo and cook for 5 minutes, stirring constantly, add the onions and the rice, cook for another 5 minutes, season with salt-pepper and garlic powder, ad the green peas, mix and serve.
This is an ideal dish when you have leftover rice or you can cook rice in the morning and make this later.

This recipe makes 6 servings.

A side of salad is ideal to make it even more delicious.

Drunken Rice Pudding

DSC_0016-m2I love making desserts that satisfy me after a light dinner and no doubt that rice pudding is one of them.
This is definitely one of my favorites and is on my list of foods that children can eat without feeling guilty because it is a full meal.
I grew up watching my grandmother make rice pudding for years and believe it or not still can not get the exact recipe, I think the secret to their successful rice pudding she never gave it to me, but oh well this was very close and as I love to improvise I add an unexpected ingredient, liqueur, to be more specific Rum, makes it taste very delicious and different without feeling that we are consuming large amount of liquor.
I hope you like it and prepare it soon, I assure you will become one of your favorites.

INGREDIENTS

  • 3 cups water
  • 11/2 cup uncooked rice
  • 5 cloves
  • 1 large cinnamon stick
  • zest of 1 lemon
  • 21/2 cup milk
  • 1 can evaporated milk 14 ounces
  • 1 14-ounce can sweetened condensed milk
  • 1/4 cup of rum
  • 1/4 cup raisins
  • 1/4 cup cramberries
  • 1 teaspoon vanilla extract
  • 1 teaspoon unsalted butter
  • 1/8 teaspoon salt

DIRECTIONS

In a heavy-bottomed saucepan place the water, cinnamon, cloves, lemon zest and rice, simmer for 15 minutes over low heat or until rice is fully cooked.
Add milk and remaining ingredients except butter, stir well cook for 20 minutes over low heat, stirring constantly.
Once the mixture is a little thick turn off the heat and add the butter, cover tightly.
You can substitute the Rum for coffee liqueur, Amaretto liqueur or Chocolate liqueur.

It can serve at room temperature or place in the refrigerator for 2 hours before serving.

This recipe makes about 5 cups of rice pudding.
