BLACK BEAN SOUP to keep you warm this #SundaySupper

I love this time of year, the cold air and winds that announce the arrival of Christmas.
And to keep us warm, the family of the #SundaySupper wants to give you a list of delicious recipes for those cold evenings.
For example, I want to invite you to try this delicious black bean soup is very easy to do. I also want to tell you that this is a very traditional soup in Costa Rica and is consumed every time you cook beans, very nutritious and hearty, my family loves it.
I highly recommend consuming it together with a blanket and a pillow next to the fireplace, is the best way to eat a soup like this.

INGREDIENTS

  • 4 cups black bean broth
  • 4 hard boiled eggs
  • 1/2 cup cilantro
  • 1/2 cup finely chopped onion
  • 1 teaspoon butter
  • salt and pepper to taste

DIRECTIONS
In a hot pan melt butter, add onion and cook for 5 minutes.
Add the bean broth, stir and boil for 5 minutes, remove from heat and serve in a bowl, add the peeled boiled eggs and cilantro.

Serve immediately.

This soup can be accompanied by white rice, avocado or white bread.

TORTILLA SOUP


This recipe takes me back to my childhood.
My grandmother made ​​us this soup on rainy afternoons, or when there was a lot of tortillas at home.
I’m not sure who invented the soup, I only know that for many years was consumed in my house and we all loved it.
I was surprised when one day my husband told me that he also made ​​him this soup as a child and is one of their favorites.
What I do now is to make it on occasion for my family, trying to follow the tradition that started many years ago my grandmother.

INGREDIENTS

4 cups of milk
12 corn tortillas
1 1/2 teaspoon salt

DIRECTIONS

In a saucepan, heat milk and crumble the tortillas, add salt and stir.
Wait until the milk begins to boil and apart from the fire.
You will notice that it will thicken as they cool.

Serve immediately.

Preparation time 10 minutes.

Makes 4 servings.

MY CHICKEN SOUP

 A necessity in these rainy afternoons or early winter when all we want is to stay in bed in pajamas with a delicious soup.
But our history with this recipe is very different.
We love it for the cold wheather but is delicious and comforting when we are sick, is an excellent choice it fills us with energy and as my granny said there is no better medicine than this soup.
So enjoy.

INGREDIENTS


2 whole chicken breasts
8 medium potatoes in chunks
1 onion, into chunks
1 red pepper in chunks
2 bay leaves
2 cups cilantro, not minced
2 teaspoons garlic powder
6 cups water
8 eggs
1 package of angel hair pasta
salt and pepper to taste

DIRECTIONS

Put to cook the chicken in water with onion, red pepper, bay leaves, garlic powder, cilantro and potatoes about 45 minutes over medium heat.
Remove chicken and shred.
Add the eggs with the shell and let it cook for 5 minutes, during this time can also add the pasta.
Remove from heat and add the chicken.
Before serving, keep in mind to remove the egg shell.

Serve with toast and if you want you can add tabasco.

Serves 8 people.
