Pineapple Pecan Bundt Cake #BundtBakers

What a great theme we have this month at the #BundtBakers table, making a mix of fruit and nuts has always been one thing I enjoy doing. The combinations are endless and you can make simple bundt cakes as other very elaborate.
I love this combination of pineapple and pecans, this kind of cake I have done on other occasions but this time decided to add grated coconut for a touch pina colada style.
It is very simple and delicious, definitely very different from any that have tried it before, I assure you that you will love it.
This particular recipe, enough to make two cakes, so if you wish you can prepare and give one or can also make cupcakes and place frostin.
Definitely the possibilities are endless. It is ideal for summer for its tropical flavors, and it is very hot, but you must prepare this cake.
If you want you can vary the ingredients and have different recipes for all seasons of the year.
The only thing you should consider is that only fruit and nuts must change, not the proportions of the cake.

INGREDIENTS

  • 1 20 oz can pineapple chunk
  • 3 cups flour
  • 1 teaspoons baking soda
  • 2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 1 cup grated coconut
  • 2 sticks soften butter
  • 2 cups brown sugar
  • 2 teaspoons vanilla extract
  • 3 eggs
  • 1 cup sour cream
  • 1 1/4 cup chopped pecans

DIRECTIONS

Preheat the oven to 350 degrees.
In the bowl of a stand mixer, cream sugar and butter for 5 minutes, then add the vanilla extract and the eggs one by one.pineapple pecan bundt
In another bowl mix, flour, baking soda, baking powder, cinnamon, salt, coconut and pecans.
Mix the juice of the pineapple with the sour cream, then alternate this mixture with the dry ingredients.
Mix just until combine, add the pineapple chunks by hand.
Place the mixture in 2 bundt cake molds, already spray with cooking spray, and bake for 1 hour or until completely cook in the center.pineapple pecan bundt 2
Let it cool in the mold for 20 minutes, then place in a cooling rack to cool completely.

This recipe makes 2 bundt cakes.

Pineapple Pork #SundaySupperAs the summer comes closer and closer we want to share some tropical ideas so you can have lots of options to make in the summer for dinner, lunch, breakfast you name it.
Easy and delicious recipes like my Pineapple Pork a very simple way to incorporated some everyday recipes in a very peculiar way.
This is a dish inspired by one of my favorites Chinese Restaurants in Costa Rica, they make a dish very similar to this one and it was my favorite. The best part it was the amount of pineapple and sometimes coconut they use to put in the sauce.
Since we move here I try to find sometime similar but it was impossible, so I decided to make my own version and that is the history of how this delicious Pineapple Pork was born.
Like I said before is super easy to make, with a few ingredients, perfect over rice or pasta, and the best part you can make it in 20 minutes.

INGREDIENTS

  • 4 boneless pork chops
  • 1 20 oz can pineapple chunks
  • 1 large onion chop
  • 3/4 cup pineapple juice
  • 1/2 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon of corn starch
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste

DIRECTIONS

Heat a large pan to medium heat, add salt and pepper to the porch chops and sear each one just to make it golden brown delicious, at this point they don’t need to be completely cook.

Place the chops on a plate and add the onion to the pan, cook for 3 minutes then add the pineapple chunks and cook for 5 minutes in medium low heat.
In the meantime mix together soy sauce, pineapple juice and oyster sauce, reserve 1/4 cup of this sauce.

Add the chops to the pineapple and onion, and add the previously mix sauce, and lower the heat cook for 5 more minutes; add the corn starch to the remain 1/4 cup of sauce, mix and add to the delicious stuff you have cooking, and just cook for 2 minutes and that is it, ready to serve and eat.

Just one more thing, I add the cilantro at the end for a fresh herb finish.

Cheese and Pineapple Bread Pudding

I love holidays a lot and my family too, sharing and spending time together are great things about this events, the only part that I don’t really like is the amount of leftovers I have during this times of the year.
Sometimes we eat leftovers for like a week, specially in thanksgiving, and by the time we finish I don’t really know what else to make with turkey; for easter, it very similar, but easier for me to create different recipes for my family to enjoy.
This time I have lots of bread, and the perfect way for me to use day old bread it’s to make bread pudding. This is a great recipe if you want a bread pudding with a different twist, cheese and pineapple are the perfect combinations to make it more interesting and a little different from everything else.
Not very sweet and cook to perfection, is definitely a new favorite in my house and maybe the new request for our easter dinner.

INGREDIENTS

  • Any kind of day old bread that you have, cut in pieces.
  • 1 can condensed milk
  • 1 can evaporate milk
  • 1/2 cup asiago cheese, grated
  • 3 eggs
  • 1 teaspoon ground nutmeg
  • 1 stick melted butter
  • 1 small can pineapple chunks
  • 1/2 cup pineapple juice

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. In a bowl mix together, condensed milk, eggs, evaporated milk, nutmeg, pineapple juice and butter, then add cheese and pineapple, add to the bread cut in pieces, I used 1 loaf of french bread cut in cubes.
  3. With your hand start mixing all the ingredients until the bread is super soft and the liquid is completely absorb by the bread.
  4. Place in a grease mold, I used 4 little baking dishes the I recently bought but you can use any kind you like, just make sure you can fix all the mixture in it, don’t want to waste any drop.
  5. Bake for 50 minutes, serve hot or at room temperature.
  6. This recipe makes 4 small pans or 1 normal size.

So happy to be back this Sunday to share delicious and fabulous food with all of you. And what better way that with the #SundaySupper family.
Today we have delicious hometown food, smoothies classic and unique the you love to eat growing up.
When I was little my favorite food was always rice, yes, rice with all things you can imagine, and very close to my house was this place where they had all things rice, sweet, savory, baked, fried, Oh My! delicious, and once my family and I used to go.
I prepare for you one of my all time favorites, this rice is just the perfect combination of, sweet and savory food, a classic in my hometown and now a go to for your family supper.

INGREDIENTS

  • 1/2 cup minced onion
  • 1/2 cup minced red bell pepper
  • 1/2 cup minced cilantro
  • 3 cups parboil rice, already cook
  • 1 small can crushed pineapple
  • 3 cups cook pull pork
  • 3 teaspoon achiote powder
  • 1 teaspoon oil

DIRECTIONS

  1. Heat a pan to medium high heat, add the oil, onion and bell pepper, cook for 2 minutes, add the rice (remember the rice needs to be completely cook, and season with salt) and the achiote powder, mix until combine, than add the pull pork and mix until all the rice is uniformly with achiote and pork.
    Before serving add the cilantro.
  2. This recipe makes 6 servings.

Cooking time: 15 minutes

Pineapple Coconut Cupcakes Happy Birthday #SundaySupper

Pineapple Coconut CupcakesThis week is so special and important to us, can you believe there is bean 2 year since #SundaySupper star? Well amazingly true this is.
And am so happy and honored to part of this group, that have bring me so much, new friends, new opportunities, new challenges and of course a better view of what I love to do, cook for all of you and sharing my recipes.
I grow so much in blogging since I join this fabulous family and all the support the I receive is incredible.
This is my favorite moment and feeling, knowing the I have a second family and we can support and advice each other.
To celebrate this occasion I made the most delicious and easy pineapple coconut cupcakes, so easy and light you won’t believe this is a cupcake.

INGREDIENTS

  • 1 box of yellow cake mix
  • 1 cup of pineapple juice (I used the juice of one can of 14 ounces)
  • 1/2 cup applesauce
  • 3 eggs
  • 1 cup shredded coconut

Frosting:

  • 1- 8 ounces package of low fat cream cheese
  • 4 cups powder sugar
  • 2 teaspoon of Meringue Powder

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl mix pineapple juice, applesauce, eggs, coconut and cake mix until incorporated.
  3. Line a cupcake pan with cupcake liners and add about 1/4 cup of the mix to each.
  4. Bake for 20 minutes.
  5. To make the frosting, just place all ingredients in a bowl of a stand mixer or hand mixer, and mix for 5 minutes.

This recipe makes 22 cupcakes.

BRAIDED BREAD STUFFED WITH PINEAPPLE JELLY

Among the great variety of bread that exists, I personally love this braided bread for my family, which can be filled with a lot of things, herbs, cream cheese, dulce de leche, jellies, etc.
It’s delicious and essential in the table at breakfast time.
I usually whenever I visit a girlfriend took some pastry with me, because my grandmother taught me that it’s rude to arrive empty-handed, so this type of bread is perfect for such an occasion.
Enjoy this bread re very easy to do and change your mornings with a little something homemade and full of flavor.

INGREDIENTS

  • 3/4 cup pineapple jam
  • 1 tube of bread dough ready, brand of 13.2 OZ PILLSBURY
  • 1 egg
  • 1 teaspoon of water
  • 2 tablespoons of flour

DIRECTIONS

Preheat the oven at 350 degrees F (175 degrees C).

Sprinkle the work table with flour and stretch the dough into a rectangle.
In the center of the dough measures 3 in and mark on each side.
Cut 9 strips diagonally to the 2 sides of the dough using a pizza cutter.
Place the pineapple jam in the center and spread the jam carefully.

Start building the braid by placing a strip of dough above the other alternately.

Beat egg with water and brush the braid put on a tray lined with parchment paper and bake for 25 minutes.

This recipe makes one braid bread.

De los panes que mas gustan en mi familia esta el pan trenzado el cual se puede rellenar de una gran cantidad de cosas, hiervas, queso crema, dulce de leche, jaleas, etc.
Es delicioso y esencial en la mesa a la hora del desayuno.
Yo en lo personal acostumbro cada vez que visito a alguna amiga llevo repostería casera porque mi abuela me enseño que es de mala educación llegar con las manos vacías, así que este tipo de panes es perfecto para una ocasión como esa.
Disfrute de este pan relleno, muy facil de hacer y cambie un poco sus mananas con algo casero y lleno de mucho sabor.
Que lo disfrute.

INGREDIENTES

  • 3/4 taza de jalea de pina
  • 1 tubo de masa preparada para pan marca PILLSBURY de 13.2 OZ
  • 1 huevo
  • 1 cucharadita de agua
  • 2 cucharadas de harina

PREPARACION

Precaliente el horno a 350 grados F ( 175 grados C )

Rocie la mesa de trabajo con harina y estire la masa para formar un rectángulo.
En el centro de la masa mida 8 cm y haga una ralla a cada lado.
Corte 9 tiras diagonalmente a los 2 lados de la masa utilizando un cortador para pizza.
Coloque la jalea de pina en el centro y extienda con cuidado.

Empiece a formar la trenza colocando las tiras de masa una encima de la otra alternadamente.

Bata el huevo con el agua y pinte la trenza, coloque en una bandeja forrada con papel encerado y hornee por 25 minutos.

Esta receta hace una trenza de pan.
