Strawberry Cheese Cake Bundt Cake

I’m so happy to be able to share with all of you this recipe, it was a pretty difficult week, and I wasn’t sure I was going to make it but I did it.
This month our host Anshie give us a challenge, make a bundt with a filling, and it was a really difficult task, not only because sometimes making a cake with a filling its messy, but because, the it has to stay inside the cake, like when you cut and is like a hidden surprise.
So in the spirit of spring and because I love cheese, I made for you this delicious tangy and super soft bundt, it is perfect for tea or coffee in the afternoon and the flavors are just the perfect combination for this recipe.
I really love this cake and I know the the filling is not in the center but it tastes really good and am sure you will love it too.

INGREDIENTS

  • 3 cups of flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 2 sticks room temperature butter
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 cup milk
    FOR THE FILLING:
  • 1/4 cup sour cream
  • 1 8 onz package cream cheese
  • 1/2 cup fresh strawberries cut in fine pieces
  • zest of half a lemon

DIRECTIONS

Preheat the oven to 350 degrees.

In a bowl sift together flour, baking powder, baking soda, salt and nutmeg, set aside
In the bowl of a stand mixer cream sugar and butter for 5 minutes, then add eggs one by one, vanilla extract; add dry ingredients alternating with the milk, beat just until combine.
In another bowl, mix sour cream, cream cheese, strawberries and lemon zest.

Now in a bundt pan previously grease, add the cake batter, then add tablespoons of the filling in the center of the cake, mix a little with the batter to cover the filling.

Bake for 1 hour and 10 minutes or until completely cook in the center.

This recipes makes 20 servings of cake.

And we are getting ready for the Oscars; today we want to share with all of you a little bit of elegant, diferente and delicious recipes so you can make a fabulous red carpet meal, and of course enjoy the finest represent to Hollywood.
I made for you a favorite, Strawberry Galette in a mini form, yes this is the most easy, delicious and elegant dessert you can serve tonight, it have fresh fruit and some of the most incredibles combinations ever sweet and tart, yes tart, because the addition of lime zest give this dessert a freshness the is completely necessary cut some of the sweetness.
Serve with a side of whipped cream and I smuggle some blueberries just because is my daughter favorite fruit, is the best late night dessert, light, fresh and delicious.

INGREDIENTS

  • 1 package Storebought Pie Crust (2 Rounds Of Dough)
  • 3 cups of strawberries, cut in pieces
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • Zest of 1 lime
  • You can also add blueberries or raspberries

DIRECTIONS

  1. Preheat the oven to 400 degrees.
  2. In a bowl mix strawberries, cornstarch, sugar and lime zest, set aside.
  3. Unroll the dough and cut rounds of pastry with a 5-inch bowl or cookie cutter, I used a tart mold so the galette don’t falls apart, this help to keep the fruit inside de dough.
  4. You can easily get about 10 disk of dough total.
  5. Ok, know place about 2 tablespoons of the fruit in the middle and you can fold the edges or just leave free form in the mold.
  6. Bake for 20 minutes.
  7. Serve with a side of whipped cream.
  8. This recipe makes 10 mini Galettes.

Strawberry Lemonade #SundaySupper

strawberry lemonadeI’m so happy to be back and posting for this amazing family, is bean a long time since my last recipe in the group and let me tell you sharing with all of you my recipes and all the recipes from the #SundaySupper family is amazing.
Today we have BBQ inspired ideas for summer, and I made this delicious and different strawberry lemonade, nothing like a good homemade lemonade.
It 100% natural with organic strawberries and lemons, and just because I like to make all things different I use sparkling water, which give a different kind of tone to the lemonade.
You will see the it is delicious and refreshing.

INGREDIENTS

  • 1 cup whole strawberries the bigger the better
  • 1/2 cup lemon juice
  • 1 cup sugar
  • 4 cups sparkling water

DIRECTIONS

  1. In a pitcher mix lemon juice and sugar, then add about 4 strawberries and crush them with the juice and sugar, add the water, cut the rest of the strawberries in pieces, ad to the lemonade.
  2. Place in the refrigerator for 1 hour.
  3. Serve super cold.

Strawberry Pound Cake #TwelveLoaves

strawberry pound cakeI’m so happy to be back and baked in this group, it fell really good.
And this month we are baking with my daughter favorite fruit, Strawberry, oh my all the possibilities the you can make with this fruit is just perfect for anything.
I made a pound cake, classic and delicious, perfect for a rainy or snowy afternoon; if thats the case, and of course you can eat it just like that it is the most fabulous and easy cake you can make.
I hope you make it and love it just as much as my family do.

INGREDIENTS

  • 3 cups flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 sticks butter
  • 1 1/2 cups sugar
  • 1 cup milk
  • 3 cups of chopped fresh strawberries
  • 1 tablespoon orange zest

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl sift flour, baking powder and salt, sit aside.
  3. In a stand mixer with a paddle attachment cream sugar and butter for 5 minutes, add eggs one by one, mix vanilla with milk and start adding dry ingredients with wet ingredients in 3 additions, starting with dry and finishing with dry.
  4. Then add by hand the strawberries, be very careful and incorporate well.
  5. Pour the batter in 2 loaf pans equally distributed.
  6. Bake for 1 hour, once bake let cool for 20 minutes take out of the pan and place on a rack to cool completely.

This recipe makes 2 small pound cakes.

Strawberry Spinach Feta Salad #TheSaladBar

And we want to share with you different ways to make it, if you love salad this is the day for you, is everywhere and so good for you.
I make in this occasion a simple but yet delicious strawberry spinach feta salad with a simple low fat dressing the I know you are going to love, and because this days with want to spend a lot of time outside this is a perfect picnic, or side dish for you.
Enjoy with us this month easy, delicious and good salads.

INGREDIENTS

  • 1 pound Baby Spinach
  • 1 1/2 cup Strawberries cut in half
  • 1 1/2 cup cherrie tomatoes (I used yellow, you can use any)
  • 1 cup crumble feta cheese
  • 2 tablespoons fat free sour cream
  • 2 tablespoons buttermilk
  • 1/4 teaspoon paprika
  • Salt and Pepper to taste

DIRECTIONS

In a bowl mix spinach, strawberries and tomatoes, pour the feta cheese, make the dressing as simple as mixing together sour cream, buttermilk, paprika, salt and pepper.
Drizzle the dressing before you serve the salad.
I toast some bread you don’t have to but I love bread and salad together.

Strawberry Bundt Cake #Easter/Passover #SundaySupper

INGREDIENTS

  • 8 ounces cream cheese at room temperature
  • 1 stick butter at room temperature
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cup sugar
  • 1/2 cup half and half
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 3/4 cup strawberry preservers
  • Pinch of salt

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl sift together the flour, baking powder, baking soda and salt.

Cream the butter with the cream cheese and sugar for 5 minutes. Add eggs one at a time and the vanilla extract, alternate the half and half with the dry ingredients, finally fold the strawberry preservers in to the batter.

Place in greased and floured pan, bake for an hour.
Remove from oven let cool in pan for 15 minutes, remove from pan place the cake on a wire rack and cool completely.

Yield 12 portions.

MORE THAN A STRAWBERRY SMOOTHIE

First I want to tell a little story, a few weeks ago my husband bought a Vitamix and for those who know this brand will know that this is the most popular blender at the moment, does much more than blending, is almost magical says my daughter.

Well, my youngest daughter was so excited, she loves being in the kitchen with me, we were trying to see what kind of recipe we made first, my precious baby said she wanted a milkshake, I saw her very surprised because I did not know where she had seen that you could make smoothies and I saw that she had the recipe book in hand.
We started to make the smoothie and everyone loved it, my Vitamix has officially become the tool of the smoothies.
I made this smoothie the day that my daughter did not want anything to eat, she has only 3 years so sometimes it is difficult for her to eat.
I try to use fruit that she likes and I add a couple of secret ingredients that nobody would notice. Some times we have to disguise some meals for the children.
This is a unique and fun way to share with family and eat better.
Enjoy it.

INGREDIENTS

*1-1/2 cups nonfat milk
*1 pint fresh strawberries
*2 bananas, peeled and cut into 2-inch pieces
*1/4 cup powdered milk
*1/4 cup oatmeal
*1/4 cup honey
*2 cups cracked ice

DIRECTIONS

In a blender combine all the ingredients until you have a smooth, thick texture.
Serve immediately, preferably chilled glasses.

Makes 4 servings.
Total time counter 10 minutes.

MAS QUE UN BATIDO DE FRESAPrimero quiero contarles una pequeña historia, hace unas semanas mi esposo me compro una Vitamix y para muchos que la conocen sabrán que es la licuadora mas popular en este momento, hace mucho mas que licuar, es casi mágica dice mi hija.
Bueno, mi hija menor estaba muy emocionada, a ella le encanta estar en la cocina conmigo, estábamos tratando de ver que tipo de receta hacíamos primero, mi bebe tan preciosa dijo que quería un batido, yo la volví a ver muy sorprendida ya que no sabia donde había visto que se podían hacer batidos y en eso vi que tenia el libro de recetas en la mano.
Hicimos el batido y le encanto, mi Vitamix se ha convertido oficialmente en la herramienta de los batidos.
Este en particular lo hice un dia que ella no quería nada de comer, tiene solo 3 anos así que aveces es difícil que coma. Trate de utilizar frutas que le gustan y ademas le agregue un par de ingredientes secretos que no iba a notar y que para su alimentación son muy importantes.
Esta es una forma diferente y divertida de compartir en familia.

INGREDIENTES

*1-1/2 taza de leche sin grasa
*1 pinta de fresas frescas aproximadamente 20 fresas medianas
*2 bananos pelados y cortados en trozos de 2 cm.
*1/4 de taza de leche en polvo
*1/4 de taza de avena tradicional
*1/4 taza de miel de abeja
*2 tazas de hielo en triturado

PREPARACION

En la licuadora combine todos los ingredientes hasta que tenga una contextura suave y espesa.
Sirva inmediatamente, preferiblemente en vasos que hallan estado previamente en el congelador para mantener el smoothie bien frio.

STRAWBERRY PANNA COTTA

This is a delicious and delicate ideal dessert to serve after a heavy dinner.

The strawberry flavor is delicious and is a different way of eating this fruit.
It’s so easy to do that will impress your family and so transform a simple night in an elegant and formal dinner.
Delight your family with this delicious flavor.

INGREDIENTS

1 1/2 cup strawberry puree
1 cup heavy cream
1/2 cup milk
1/2 cup powdered sugar
1 envelope unflavored gelatin
2 tablespoons water

DIRECTIONS

Mix gelatin with water and allow it to make solid.
In a bowl mix the strawberry puree, heavy cream, milk and sugar, stir well until fully incorporated.
Heat the gelatin for 30 seconds in the microwave and add to mixture.
Place in ramequins and refrigerate for 4 hours.
For the decoration of strawberries, cut into small squares and add 5 strawberries 1/2 teaspoon sugar.
To unmold place ramequin in hot water, being careful not to touch the Panna Cotta, dump on a plate garnish and serve.

Preparation time 4 hours and half.

This recipe makes 4 Panna Cotta.
