Basic Pasta Dough Recipe #FromScratch

pastadoughMy intention with this new theme is to show you how easy it is to make basic recipes from scratch, and for you to incorporated them in your every day.
We all watch a lot of cooking shows, but do you wonder if that is simple to make or is something the they rehearse previously?
And now you will have the answer, and you will see how easy it is.
Today you will learn an easy and basic pasta dough, that you can make in minutes and use for different shapes and recipes, the best part? Is completely homemade, how satisfying is that.
And here we go.

You need 2 cups of flour, 1 teaspoon salt, 4 tablespoons water, 2 eggs, 1/2 teaspoon extra virgin olive oil.

In a work area or bowl, mix salt and flour and form a mound, make a well in the center of the mound and add the eggs and oil.

Use a fork or a bench scraper and mix the dry with the liquid ingredients by dragging the flour into de center. Keep doing this until you have form a sticky ball, adding water as needed in the process.

This is how your dough should look like after mixing with all the ingredients, in my case I add 4 1/2 tablespoons of water, it all depends on the weather that day. Knead the dough util is smooth, elastic,. even in color and no longer sticky. About 10 minutes.

Wrap with plastic and let it rest for 30 minutes.

After 30 minutes your dough is going to be soft and smooth. Now you can star to make the different shapes for delicious recipes.

Cut the dough in half, and if you have a pasta machine star in 7 all the way to 1, just remember in 1 the dough will be super thin, perfect for lasagna sheets and ravioli, after you roll the dough in the thickness the you want, uses the other attachment to cut for spaghetti or fetuccini. If you don’t have this machine, just use a rolling ping to roll out the dough, and cut with a knife to make the different forms, its easy, just a little bit more labor intense.

Remember when working with fresh pasta you must cover with a damp towel to keep it form drying out, if you want you can wait until it dries and wrap in plastic wrap and store in the fridge for up to 2 days.

 

 

 

AVOCADO PESTO PASTA #WeekdaySupper

Avocado Pesto PastaIf you are looking for an easy, healthy and delicious recipe to start you weekend, I have it for you.
This is the most delicious pesto you’ll ever try, it become you must have for now on and is so rich and soft in flavor the even your kids will love it.
Made with avocados, this is a better for you pesto, lest calories and fat, no oil needed, fresh ingredients are always better for your family, lets talk pasta, you can used any kind, but I recently discover Quinoa Pasta, witch is gluten free and low in fat and calories, so as I said before use any kind you like for this dish but as always Enjoy.

INGREDIENTS

  • 1 pound of Pasta
  • 3 avocados
  • 3 cups cilantro
  • juice of 1 lemon
  • 1/2 cup hold almonds
  • 1 small garlic clove
  • 1/3 cup Parmesan cheese
  • salt and pepper to taste

DIRECTIONS

  1. Cook pasta according package directions.
  2. While the pasta cooks, in a food processor or blender add all the ingredients, process or blend until well incorporate.
  3. After the pasta is cook, mix with the pesto and serve.

Yields 6 servings.
Serve with a side of green salad or steam vegetables.

Spaghetti With Mushroom Sauce #WeekdaySupper

DSC_0007-2This is a recipe inspired by my pantry, yes pantry you read it right, well the history is very simple, I was doing some cleaning one day and I came across cans of tomato and mushroom, I was a little worry because I try to buy fresh products and don’t remember when I buy those. But of course I was going to use them and what better way the in a sauce, my daughters love pasta and this sauce is just what you need when you don’t want any type of meat.
So I create this easy recipe with pantry items the I know you have in your house and just like me make this delicious sauce and impress your family with something different that day for dinner.
Enjoy.

INGREDIENTS

  • 1 can 14 oz diced Tomato
  • 2 cans 4 oz each slice mushroom
  • 1/4 cup ketchup
  • 2 tablespoons tomato paste
  • 1 onion julienne
  • 2 mince garlic cloves
  • 1 teaspoon oil
  • 1 cup pasta water
  • 1 pound pasta
  • 1/2 cup chopped basil
  • salt and pepper to taste

DIRECTIONS

Cook the pasta according to package directions, I used Fusilli but you can use wherever you want.

Heat a pan to medium low heat, add oil, onion and garlic, cook until onion is soft, add the can of tomato, drain and rinse the mushroom and add to the pan, add the rest of the ingredients except the basil, this one is better at the end, cover and cook for 5 minutes.
Drain the pasta mix with the sauce sprinkle some parmesan cheese and serve immediately, serve with a side of salad (optional).

This recipe makes 6 servings.

Preparation time: 20 minutes
Cooking time: 25 minutes

PASTA IN TOMATO SAUCE WITH TURKEY MEATBALLS for #SundaySupper

That the name does not scare you, this delicious dish is very easy and quick to make.
This week at the #SundaySupper, we want to share recipes quick, easy and delicious for back to school.
So all you need to do is join us and enjoy a variety of recipes we have prepared for you.
This recipe is ideal for sharing with family after the first day of school, one of which I consider the most tired because I spent a couple of hours at school getting ready for the school year.

INGREDIENTS

  • 1 lb. ground turkey
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 cup of parmesan cheese, more for garnish
  • 1 lb. spaghetti
  • 2 cans of tomato sauce 15 oz
  • 1 cup of ketchup
  • 1/2 cup of basil chopped.
  • salt and pepper to taste

DIRECTIONS

Cook spaghetti according to package directions.

In a bowl place the ground turkey, mustard, Worcestershire sauce, salt, pepper, garlic powder, oregano and parmesan cheese, mix well and form meatballs. In a saucepan heat the tomato sauce with ketchup. Add meatballs and cook for 8 minutes.

Once the pasta cooked, pass it through a strainer, place in a serving bowl and add the sauce with meatballs on top.
Sprinkle with more Parmesan cheese and basil.

Serve immediately.

This recipe makes 6 servings.

LOW FAT PASTA SALAD 4th OF JULY CELEBRATION FOR #SundaySupper

This is definitely a day to celebrate, we’ve cleaned the grill and the table is ready with all the delights that the family has prepared.
And this year I try to change a little and I make a salad a little bit more healthy, after all we have plenty to eat on this day.
This recipe is the perfect choice to celebrate without guilt of what we are eating, you can say it’s a full meal or a great side dish.
It is definitely an option a little bit more healthy to enjoy this special day.
Celebrate this July 4th in a big way alongside your friends and family.

INGREDIENTS

  • 1 pound pasta of your choice
  • 1/4 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup nonfat sour cream
  • 1 teaspoon garlic powder
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 cup chopped green onions
  • 1/2 cup chopped cilantro or parsley
  • juice of 1 lemon
  • 4 ounces diced cooked ham low fat
  • salt and pepper to taste
DIRECTIONS

Cook pasta according to package directions. Remember to add enough salt to the water where cooking the pasta this way will have a better flavor.
Once ready pass through a colander and sprinkle with cold water to stop the cooking procces.
In a separate bowl stir all ingredients except the cilantro or parsley.
When the pasta is ready incorporate all the ingredients and stir well.
Chill at least an hour.

Before serving add the cilantro or parsley.

I recommend serving it very cold, but also may be served at room temperature.
This recipe makes 14 servings.

Cooking time: 8 minutes

HEALTHY PASTA SALAD

I tried to find healthier options for my family, as the children get older it is important to take care of the fat and starch a day.

This recipe has a history, my grandmother made ​​us pasta with tuna salad because nobody in my house could eat as hot plate and for many years this has been our preference.
I started making this salad for my family and they loved it.
Now I’m traing of changing it and look for better options, more healthy for everyone to enjoy at dinner.
I make enough and keep in the refrigerator, my daughter is so fond of repeating and requests take to school for lunch.
It’s an incredible feeling when you’re feeding the family better and see that your children appreciate the effort, I do not sacrifice taste, I am convinced that no matter how healthy it must have a unique flavor and we all know that children sometimes are difficult to please.

INGREDIENTS

1 package of pasta you prefer
2 cups chopped spring onions
1 cup chopped cilantro
1/4 cup light mayonnaise
3 teaspoons Dijon mustard
1 can tuna in water
1/2 cup chopped red bell pepper
the juice of half lemon
salt and pepper to taste

DIRECTIONS

Cook pasta according to package directions.
When is ready sprinkle with cold water to stop the cooking process.
In a bowl mix scallions, cilantro, red bell pepper, mayonnaise, mustard, tuna and pasta stir well.
Add salt and pepper, bring to refrigeration for 30 minutes.

Serving Size 2/3 cup.
Calories per serving 243.

Preparation time 20 minutes.

CAPRESE STYLE PASTA SALAD

I belong to a group of parent volunteers in my daughter’s class.

And there was an activity for the teachers and each class had to bring a meal.
I offered to bring pasta salad, and my great interest was give them something very tasty.
It is truly an excellent way to impress in any activity that you have.

INGREDIENTS

1 box of Penne pasta style
3 / 4 cup pesto (you can buy in any supermarket)
11 / 2 cup cherry tomatoes, halved
2 balls of fresh Mozzarella cheese cut into small pieces.

DIRECTIONS

Cook pasta according to package directions.
Once ready, remove from heat, drain well and pour cold water to stop the cooking process.
Pour into a large bowl and add the pesto, stir until well incorporated, add the tomatoes and cheese, stir gently to avoid damage the texture of the tomatoes.

Cool for 15 minutes before serving or serve immediately.

I would not recommend making this recipe from one day to another because the texture of the pasta will not be the same.

Remember to buy a good quality pesto.

Serves 8 people.

SPAGHETTI AND SHRIMP IN LIGHT TOMATO SAUCE

Let me tell you it’s a light sauce because it does not contain any kind of cream and is an excellent choice for dinner, you will not have that sensation the ate too much.
INGREDIENTS
1 package of spaghetti pasta
2 diced tomatoes
1 teaspoon dried oregano
1 cup chopped onion
1/2 cup chopped cilantro
1 teaspoon oil
1 teaspoon butter
1 tablespoon ketchup
1/2 cup pasta water
the juice of half lemon
salt and pepper to taste
DIRECTIONS
Cook pasta according package directions.
In a skillet heat oil over medium heat and add butter, saute onion, tomatoes and oregano, add a pinch of salt let it cook until the tomatoes are softened and released their juices.
Followed add the ketchup, water and the shrimp, cook until they are pink in color on both sides, season generously ( try to corroborated the seasoning ) and add the lemon juice finally gently toss the pasta and sprinkle with cilantro before serving.Versión en español CLICK AQUI

SPAGHETTI IN TOMATO SAUCE

The most classic recipe simple and inexpensive, enjoy with any type of pasta, you will loved.
INGREDIENTS
1 package spaghetti pasta
1/2 onion, chopped
1 teaspoon oregano
1 teaspoon oil
2 tablespoons of butter
1 can of 411 grams.chopped tomato
2 tablespoons of ketchup
1/2 cup chopped cilantro
1/2 cup pasta water
salt and pepper to taste
DIRECTIONS
Cook spaghetti according to package directions.
In a saucepan over low heat melt butter and oil, add onion, garlic and oregano cook until onions are softened, add the can of tomatoes and stir, once boiling add the ketchup and water season well, let it cook for 5 minutes, apart from heat , add the cilantro o parsley if you like that better, and gently toss the spaghetti.
Now is ready to serve.
Toss the pasta with the sauce minutes before serve.
Sprinkle Parmesan Cheese.
