Beans and Egg Sandwich #SundaySupper

bean and egg sandwichI’m so exited with this theme today, 5 ingredients or less is my specialty, you know me, I love simple, easy and quit recipes for an everyday meal specially on sundays when you know is kind of difficult to cook just because we want some rest.
The recipe I prepare for you is so easy, the you are not going to believe it, perfect for the kids lunches or an afternoon picnic.
And I love this sandwich because is the one I eat in my favorite Dinner in Costa Rica when I was little and my family and me always went on the weekends.
I love how simple and delicious food can be, and I hope you love it too.

INGREDIENTS

  • 1 tablespoon refried beans
  • 1 egg
  • 1 slice of tomato
  • 2 slices of bread

DIRECTIONS

  1. Very simple, first, fry the egg leave the yolk runny, toast the bread, I used whole wheat but you can use anything you like, then once the bread is toast, smear the beans in each slice, place the egg and the slice of tomato and enjoy.
  2. So simple but oh my so good.

This recipe makes one sandwich.

RICE WITH SHRIMP

DSC_0814I enjoy making easy recipes, to help us prepare a delicious meal that does not require a lot of time when doing them.Exclusively for you at home who need quick recipes I made this delicious rice with shrimp that is full of flavor, it is very easy to make and is ideal to serve on special occasions like birthday parties.
Made with ingredients you usually have in the house, and very economical.
I invite you to prepare the rice and give me your opinion.

INGREDIENTS

11/2 cup uncooked parboiled rice
1 cup chopped onion
2 cloves garlic, minced
1 pound medium shrimp, clean and deveined
1/2 cup chopped green onions
1/2 cup finely chopped cilantro
3 cups water
1 teaspoon Old Bay season
1 teaspoon paprika
1 small bag of frozen mix peas and carrots
salt and pepper to taste

DIRECTIONS

In a saucepan heat 1 teaspoon of oil, add onion and garlic, sprinkle with a little salt and cook for 3 minutes, add the rice, paprika and old bay season, stir well.
Add mixed vegetables, green onions and shrimp, stir well. Season with salt and pepper, add the water, stir and cover the pan, lower the heat and let it cook for 20 minutes.
After 20 minutes turn off the heat and let the rice stand for 10 minutes.
Add the cilantro before serving.

This recipe makes 8 servings.

BLACK BEAN SOUP to keep you warm this #SundaySupper

I love this time of year, the cold air and winds that announce the arrival of Christmas.
And to keep us warm, the family of the #SundaySupper wants to give you a list of delicious recipes for those cold evenings.
For example, I want to invite you to try this delicious black bean soup is very easy to do. I also want to tell you that this is a very traditional soup in Costa Rica and is consumed every time you cook beans, very nutritious and hearty, my family loves it.
I highly recommend consuming it together with a blanket and a pillow next to the fireplace, is the best way to eat a soup like this.
I hope you enjoy this and all the recipes we have for you today.

INGREDIENTS

  • 4 cups black bean broth
  • 4 hard boiled eggs
  • 1/2 cup cilantro
  • 1/2 cup finely chopped onion
  • 1 teaspoon butter
  • salt and pepper to taste

DIRECTIONS
In a hot pan melt butter, add onion and cook for 5 minutes.
Add the bean broth, stir and boil for 5 minutes, remove from heat and serve in a bowl, add the peeled boiled eggs and cilantro.

Serve immediately.

This soup can be accompanied by white rice, avocado or white bread.

FRIED RICE

This is a great option to use the rice that was made before, and one of the quickest ways to prepare lunch or dinner that will delight the whole family.
These days we look for recipes with few ingredients that facilitate the day and not have to spend hours cooking, and a delicious flavor that will surprise you. Not forgetting that is low in fat.
The fried rice is delicious and you can vary the ingredients the way you like most, you can even make it completely vegetarian, if that’s the case.
Make this recipe for your family and surprise them with a new way of eating rice and maybe will become the favorite.

INGREDIENTS

  • 4 cups cooked white rice 
  • 1 red onion, finely chopped 
  • 1 red bell pepper, finely chopped 
  • 1 cup of chopped cilantro 
  • 200 grams of chopped cooked ham 
  • 4 tablespoons soy sauce, low sodium 
  • 2 tablespoons Worcestershire sauce 
  • Cooking spray 
  • salt and pepper to taste

DIRECTIONS

In a hot skillet spray with cooking spray and add the onion and red bell pepper, cook for 5 minutes, add the ham and stir.
Add rice and mix well, add the soy sauce and Worcestershire sauce, stir well until everything is completely incorporated, add salt and pepper.

Remove from heat and sprinkle the cilantro, serve with salad.
Makes 6 servings.

 Esta es una excelente opción para utilizar arroz del día anterior, y una de las formas mas rápidas de preparar un almuerzo o cena que encantara a toda la familia.

Y en estos días buscamos recetas de pocos ingredientes que nos faciliten el dia y no tengamos que pasar horas cocinando, lo mas importante es su sabor delicioso le sorprenderá.
El arroz frito es delicioso y puede variar los ingredientes de la forma que mas le guste, hasta puede hacerlo completamente vegetariano, si ese es el caso.
Haga esta receta para su familia y vera como les encantara, una nueva forma de consumir el arroz y puede ser que se convierta en la favorita.

INGREDIENTES

  • 4 tazas de arroz blanco cocinado del dia anterior
  • 1 cebolla morada picada finamente
  • 1 chile dulce rojo picado fino
  • 1 taza de culantro picado
  • 200 gramos de jamón cocido picado
  • 4 cucharadas de salsa de soya baja en sodio
  • 2 cucharadas de salsa worcestershire
  • spray de cocina
  • sal y pimienta al gusto
PREPARACION
En una saten caliente rocie con spray de cocina y agregue la cebolla y el chile dulce rojo, deje cocinar por 5 minutos, agregue el jamon y revuelva.
Agregue el arroz y mezcle bien, incorpore la salsa de soya y la salsa worcestershire, revuelva bien hasta que todo este completamente incorporado, agregue sal y pimienta.
Retire del fuego y rocie el cilantro, sirva acompañado de ensalada.
Rinde 6 porciones.

HOMEMADE POTATO HASH

One of the most comforting meals that can be made, available to everyone and full of nostalgia and flavor.
INGREDIENTS
2 pounds potatoes, peeled and diced.
1 pound ground pork
1 cup chopped onion
1 cup chopped red pepper
2 cloves garlic, minced
1 teaspoon oregano
1/2 cup chopped cilantro
1 cup water
1/2 teaspoon achiote paste or powder
DIRECTIONS
In a hot saucepan add oil and onion, cook until translucent, then add the oregano, garlic and ground meat, cook meat completely.
Once ready add the potatoes, red pepper and achiote, stir well until completely incorporated the achiote, add salt and pepper.
Add the water, cover, reduce heat and simmer for about 20 minutes or until potato is cooked.
Verify the seasoning and add more salt and pepper if necessary.
Add the cilantro before serving.
Can by accompanied by salad or corn tortillas.
You can substitute pork for chicken, turkey or beef.
