CLASSIC SUGAR COOKIES

So simple and delicious these cookies will delight the whole family.
INGREDIENTS
2 sticks unsalted butter
1/2 cup sugar
3/4 cup powdered sugar
2 egg yolks
1 teaspoon vanilla
1 tablespoon lemon zest
2 1/4 cups flour
1/2 teaspoon baking powder
pinch of salt
DIRECTIONS
Cream butter with sugar until fluffy, add lemon zest, vanilla and egg yolks. Apart incorporate the dry ingredients together and add them to the previous mixture slowly.
Let it cool for about 30 minutes.
In a tray lined with wax paper place tablespoons of the mixture separated by 3 inches between them, mash with the hand lightly.
Bake a 350 degrees for 15 minutes.

ARROZ CON LECHE COSTA RICAN STYLE ( RICE PUDDING )

This is a classic desert from my beloved Costa Rica, with some changes to give it a taste even more delicious.

INGREDIENTS
2 cups of long grain rice
5 cups of milk
1/3 cup sugar
3 cinnamon sticks
5 cloves
1 can condense milk
1 can evaporate milk
1 egg yolk
zest of one lemon
1 cup raisins
1 teaspoon vanilla
1 tablespoon butter
DIRECTIONS
In a large saucepan over low heat put the rice, milk, cloves, cinnamon and lemon zest. Stir with a wooden spoon. Let it cook until the rice is ready in about 30 minutes. Move constantly to avoid sticking to the bottom of the pot. When the rice is almost dry, add butter, and three quarters of evaporated milk. Stirring constantly add the egg yolk with the remaining quarter of evaporated milk, sugar and condensed milk. Remember to move constantly. Finally raisins, move, leave Boil for three minutes and remove from heat. You can add coconut, ground cinnamon or grated cheese without salt.

FAST RICE

Made with ingredients that we all have in the house, this rice really take you out of trouble.
INGREDIENTS
1 cup long grain rice
1 onion, chopped
1/2 teaspoon of dried oregano
2 cloves garlic, minced
5 strips of bacon, chopped
1 / 2 pound of chicken or turkey ham diced
1 pound of chicken or turkey ham diced
1 / 4 teaspoon achiote paste or powder
1 cup chopped cilantro
1 cup red pepper cut into strips
2 cups water
salt and pepper to taste
DIRECTIONS
Heat a large skillet and add the baconfollowed add onion, oregano, celery, red pepper and garlic let the vegetables cook, add the rice and followed achiote, stir well, salt, pepper to taste, add the ham turkey, water, cover and lower heat.
Simmer until water is completely evaporated and rice is cooked through, about 25 minutes.
Once ready, sprinkle the cilantro and serve.
Serves 4 people.
