GARLIC SHRIMP

Who said the this dish is hard to make?
We can enjoy the best gourmet food at home without any complication.
INGREDIENTS
1/2 pound of shrimp peeled and deveined
4 cloves garlic minced
1/2 cup chopped cilantro
1/2 cup julienne onion
1/2 cup red pepper into thin strips
3 tablespoons butter
half a lemon zest
the juice of half lemon
salt and pepper to taste.
DIRECTIONS
Salt and pepper the shrimp.
In a saucepan over low heat melt the butter and add the onion and red pepper.
Once already softened, add garlic and shrimp let them cook until the shrimp take a pink color, immediately add the zest and lemon juice.
Remove from heat and sprinkle with cilantro.
serve and enjoy.

SPAGHETTI AND SHRIMP IN LIGHT TOMATO SAUCE

Let me tell you it’s a light sauce because it does not contain any kind of cream and is an excellent choice for dinner, you will not have that sensation the ate too much.
INGREDIENTS
1 package of spaghetti pasta
2 diced tomatoes
1 teaspoon dried oregano
1 cup chopped onion
1/2 cup chopped cilantro
1 teaspoon oil
1 teaspoon butter
1 tablespoon ketchup
1/2 cup pasta water
the juice of half lemon
salt and pepper to taste
DIRECTIONS
Cook pasta according package directions.
In a skillet heat oil over medium heat and add butter, saute onion, tomatoes and oregano, add a pinch of salt let it cook until the tomatoes are softened and released their juices.
Followed add the ketchup, water and the shrimp, cook until they are pink in color on both sides, season generously ( try to corroborated the seasoning ) and add the lemon juice finally gently toss the pasta and sprinkle with cilantro before serving.Versión en español CLICK AQUI

SIMPLY GRANOLA

The best way to start or end your day is to eat granola, super simple with few ingredients, but more importantly quick and delicious. So enjoy this homemade granola.
 INGREDIENTES
3 cups of old-fashioned oats
1 cup of sheered sweet coconut
1 cup of dried cherries
1 cup of slivered almonds
1/2 cup vegetal oil
1/2 cup honey
1 teaspoon cinnamon
pinch of salt
DIRECTIONS
In a bowl combine the oats, coconut, almonds, cinnamon and salt.
In another bowl mix the honey and oil.
Stir the mixture and place on a tray.
Bake at 325 degrees for 40 minutes, after the first 20 remove the tray stir to cook evenly. Remove from the oven and transfer to a bowl, add the dried cherries.
Cool completely and store in an airtight container.

CHICKEN ENCHILADAS

Especially for those days where you do not know what to do for dinner, even when we have unexpected guests, very fast to do, it will become a favorite.
INGREDIENTS
2 chicken breasts without skin or bone, cut into thin strips
1 onion, cut into strips
1 red pepper, cut into strips
2 cloves garlic, finely chopped
1 1 / 4 teaspoon oregano
1/ 2 cup chopped cilantro
1 teaspoon oil
1 tablespoon butter
1 cup shredded mozzarella cheese
salt and pepper to taste
18 corn tortillas
1 jar mild chunky salsa
DIRECTIONS
In a skillet melt butter and heat oil, add onion and 1 teaspoon of oregano, cook for 3 minutes, add garlic and fresh chile. Immediately add the chicken and cook for 10 minutes, season with salt and pepper to taste. Add the cilantro at the end.
Meanwhile, place the tortillas in the microwave to heat for 1 minute.
Grease with a little butter a rectangular pyrex.
Spoon the filling into the tortillas and taco-shaped fold place it in the pyrex and sprinkle over chunky sauce and mozzarella cheese with 1 / 4 teaspoon oregano remaining.
Bake at 350 degrees for 25 minutes.
Serves 6.

DOUBLE CHOCOLATE CHIPS COOKIES

We all like something sweet from time to time, these cookies are addictive, crispi on the outside and soft on the inside, make your afternoon coffee in one of the best moments.

INGREDIENTS
2 sticks unsalted butter
1 cup sugar
2 3/4 cup flour
1 teaspoon vanilla
1/4 cup semi-sweet chocolate chips
1/4 cup white chocolate chips
DIRECTIONS
Cream butter with sugar, leave it until it turns a very light yellow. Add the vanilla and chocolate chips and flour gradually. The dough is ready when it is completely separated from the bowl of the mixer and form a ball. In a baking tray place spoonfuls of the mixture and flatten a bit, do not need to be completely flat. Put the trays in a preheated oven at 325 degrees and bake for 15 minutes. Once ready place it directly on a rack to cool.

HOMEMADE POTATO HASH

One of the most comforting meals that can be made, available to everyone and full of nostalgia and flavor.
INGREDIENTS
2 pounds potatoes, peeled and diced.
1 pound ground pork
1 cup chopped onion
1 cup chopped red pepper
2 cloves garlic, minced
1 teaspoon oregano
1/2 cup chopped cilantro
1 cup water
1/2 teaspoon achiote paste or powder
DIRECTIONS
In a hot saucepan add oil and onion, cook until translucent, then add the oregano, garlic and ground meat, cook meat completely.
Once ready add the potatoes, red pepper and achiote, stir well until completely incorporated the achiote, add salt and pepper.
Add the water, cover, reduce heat and simmer for about 20 minutes or until potato is cooked.
Verify the seasoning and add more salt and pepper if necessary.
Add the cilantro before serving.
Can by accompanied by salad or corn tortillas.
You can substitute pork for chicken, turkey or beef.

TUNA SANDWICH

Economic and delicious, one of the best ways to take care of your pocket.
INGREDIENTS
1can light tuna in water of 198g.
1 tablespoon of low-fat mayonnaise
1/2 teaspoon dijon mustard
1 tablespoon ketchup
1/4 cup chopped red onion
1/4 cup chopped red pepper
1/4 cup chopped cilantro
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon unsalted butter
2 French style bread rolls
DIRECTIONS
In a bowl combine the onion, cilantro, red pepper, mayonnaise, dijon mustard, and ketchup, salt and pepper, add the tuna (strained) and combine.
Melt the butter in a skillet and place the rolls to brown completely, so they are more crisp.
Fill the buns and serve.
You can prepared for lunch or a picnic, and you can add lettuces and tomato.

HOMEMADE SWEET TAMALE

This is an excellent choice to share at breakfast or afternoon coffee and needs nothing more. I really hope you enjoy it.
INGREDIENTS
2 cups of corn flour ( search for Maseca in the latin food aisle )
4 cups of buttermilk
2 eggs
11/2 cup sugar
Zest of one lemon
1 teaspoon vanilla
2 sticks of unsalted butter melted
2 cups of shredded Parmesan Cheese
1/2 cup shredded coconut
1/2 cup raisins
DIRECTIONS
Preheat the oven to 350 degrees
In a blender or food processor place the corn flour, buttermilk, eggs and sugar, blend or process everything until well blended, then add the lemon zest, vanilla and butter.
Transfer the mixture to a bowl and add cheese, coconut and raisins mix well.
Place in a greased 9×13 inch baking dish.
Bake at 350 for an hour, then put it , if you want to broil to brown on top, do it for 10 minutes with the oven door almost close.
