One thing the I love to make during the summer is my Dad’s classic salad. I remember that he always make this salad with any kind of veggie he will find in the fridge, it was so funny and at the same time a great opportunity to utilize all the veggies we had.

I decide to make it for my family and share with my girls this super easy recipe, so they can carrie the tradition and and make a fresh salad during the hot summer days.

The first thing we did was checking the fridge to see what we have for the salad; we found some very tasty ingredients as well as sweet corn that my little one loves. But to make the dressing I need it the key ingredient, Chipotle sauce, this is the main ingredient in this salad, it give it a delicious kick.

INGREDIENS

  • 1 small grated cabbage
  • 1 cup red bell pepper strips
  • 1 15 ons can sweet corn
  • 2 cups grated carrots
  • 1 cup chopped green onions
  • 1 cup chopped cilantro
  • 3 tablespoons Adobo Sauce
  • 1 cup mayonnaise
  • 1/4 cup milk
  • 2 teaspoons mince cilantro
  • juice of 1/2 lemon
  • Salt and pepper to taste

DIRENTIONS

In a bowl mix all the veggies, add some salt and pepper. In another bowl combine, mayonnaise, milk, chipotle sauce, cilantro and lemon, mix until combine.

Then add this delicious sauce to the veggies and mix well.

Let it rest on the fridge for about an hour so it bring the flavor to a different delicious level.

chorizo and beans burrito with chipotle sauceI recently found La Morena products in my local Ralph’s, I love my grocery store it always have fresh products and a good variety of the latino products.
And let me tell you, first I’m from Costa Rica and finding good quality latino products is being a little difficult, but am happy with all the products I can find there.
So lately I went for a hunt of Chipotle pepper in adobo, and I really want good flavor because spicy food is not very common in my country, I need something with a good kit, with a traditional flavor, and 100% Mexican, yes my daughter love burritos and a good burrito have to be 100% authentic.
I find La Morena Chipotle Peppers in Adobo, and let me tell you it was an amazing find, the flavors is amazing and the smokiness is perfect, and of course the perfect heat.

Heres the recipe I made with the delicious Chipotle Peppers

INGREDIENTS

  • 1 can of refried beans
  • 3 La Morena Chipotle Pepper (units not cans)
  • 1 cup of beef chorizo
  • 1/2 cup of dice onion
  • 6 medium size flour tortillas
  • 2 cups sour cream
  • a handful of cilantro
  • 1 cup queso fresco
  • Salt and Pepper to taste

DIRECTIONS

In a pan on medium heat, add oil and cook the onion with the chorizo about 3 minutes, add the beans, mix well and cook for 2 more minutes, set aside.

chipotle sauce

In the food processor place cilantro, chipotles, sour cream. salt and a little pepper, pulse until all is combine.

burrito

To form the burrito, heat up the tortillas, smear some of the sauce and add a spoonful of the chorizo and bean mixture, top with some queso fresco and listo.

This recipe makes 6 burritos.
