CHOCOLATE CHIP CUT-OUT COOKIES Celebrating a One Year Anniversary of #SundaySupper

This is definitely a very special week for the family of #SundaSupper, as it is celebrating one year of sharing dinner around the family table.
For me personally it is an honor to be part of such a wonderful family and share the love of food that we all have.
To celebrate this event we chose recipes from different contributors that have this family, and believe me it was very difficult to choose among so many delicious and different cuisines.
After reviewing I chose a recipe that is not only easy to make and at the same time you can make this recipe with your children, and my children love to help for that reason I knew this is the perfect recipe. This recipe is originally from my colleague Carla of Chocolate Moosey and I personally recommend it, is simple and very delicious made ​​with ingredients you always have on hand, which is very important.

INGREDIENTS COOKIES
1/2 cup unsalted butter, softened
1/4 cup brown sugar
2 1/2 Tbsp sugar
1 tsp vanilla extract
1/4 tsp salt
1 egg yolk
1 1/4 cups flour
3/4 cup mini semisweet chocolate chips

VANILLA BUTTERCREAM
3/4 cup powdered sugar
1/4 cup unsalted butter, room temperature
Pinch of salt
1/4 tsp vanilla Sprinkles to decorate

CHOCOLATE GLAZE 
1/4 cup mini semisweet chocolate chips

DIRECTIONS

For the cookies: In a large bowl, beat together butter, both sugars, vanilla, and salt until creamy.
Beat in egg yolk. Gradually beat in flour then stir in chocolate chips.
Remove the dough from the bowl and place it between two sheets of plastic wrap.
Roll the dough flat until it is 1/4-inch thick.
Chill in the refrigerator for at least an hour or until firm.
Line two cookie sheets with either silicone mats or parchment paper.
Remove the dough from the refrigerator and remove the top layer of plastic wrap.
Cut into shapes and place shapes on the cookie sheets.
As you run out of dough to cut, gather up the dough scraps and reroll.
Repeat until all of the dough is used up.
Chill the cookie sheets in the refrigerator while you preheat the oven to 350F.
When the oven is ready, bake the cookies 9-11 minutes or until golden brown.
Let stand for 3 minutes then remove to wire racks to cool completely.

Vanilla buttercream. In a medium bowl, beat together sugar, butter and salt until creamy. Increase the speed to high and beat until creamy, 3-5 minutes.
Add vanilla and beat for another minute.
When the cookies are ready, decorate with sprinkles and buttercream

For the chocolate glaze
Place the chocolate chips in a plastic sandwich bag – do not seal.
Microwave for 45 seconds then knead until smooth. Squeeze all of the chocolate to one corner of the bag then make a small cut to the corner. Pipe the chocolate onto the cookies as desired. Let the chocolate harden before serving.

Preparation time: 1 hour 15 minutes
Cooking time: 9-10 minutes
Level of the recipe: Easy

ALMOND COOKIES WITH WHITE CHOCOLATE

Delicious cookies that will delight your family.
Perfect for a snack after school or accompany the afternoon tea with these delicious cookies.
These cookies are a temptation, you can not eat just one.
So make and enjoy these cookies with milk, chocolate, coffee, tea or just alone.
I’m sure you will love them.

INGREDIENTS

  • 2 cups of flour
  • 2 cups of chopped almonds
  • 2 sticks of butter
  • 1 cup of brown sugar
  • 2 eggs
  • 1 teaspoon of vanilla
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of almond extract
  • 1 1/2 cup of white chocolate chips
  • pinch of salt

DIRECTIONS

Preheat oven to 350 degrees F (176 degrees C).

In the mixer place the butter and brown sugar, beat until well incorporated. Add eggs, vanilla and almond extract. In a bowl sift together the flour, baking powder and salt, gradually add to the above mixture.

In a tray lined with parchment paper, place spoonfuls of the mixture and bake for 12 minutes or until golden brown.
Once baked place on a rack to cool completely.
The cookies remain soft in the center.

This recipe makes 36 cookies.

Preparation time: 20 minutes
Cooking time: 12 minutes

Deliciosas galletas que deleitaran a su familia.
Ideales para una merienda después de la escuela o acompañe el cafe de la tarde con estas deliciosas galletas.
Estas galletas son una tentación, no puedes dejar de comer solo una.

  • 1 taza de azúcar moreno
  • 2 huevos

  • pizca de sal

PREPARACION

Precaliente el horno a 350 grados F (176 grados C ).

En la batidora coloque la mantequilla y el azúcar moreno, bata hasta que quede bien incorporado.
Agregue los huevos, vainilla, extracto y el almendra.
En un tazón cernir la harina, polvo de hornear y sal, agregue poco a poco a la mezcla anterior.

En una bandeja forrada con papel encerado, coloque cucharadas de la mezcla y hornee por 12 minutos o hasta que esten doradas.
Una vez horneadas coloque en una rejilla a que enfríen completamente.
Las galletas quedaran suaves en el centro.

De esta receta salen 36 galletas.

NUTELLA COCONUT COOKIES

Nothing better to add some sweet to your life then cookies. For example my nutella cookies with coconut, delicious flavor of chocolate with hazelnuts and coconut, which is an incredible explosion of taste in your mouth.
Completely different and delicious, a combination that you did not expected.
These cookies are ideal for preparing ice cream sandwich, or with a good cold glass of milk.
Either way they are delicious, the most important thing is to prepare them and enjoy and these cookies will be a hit at home.

INGREDIENTS

  • 1 stick of unsalted butter at room temperature
  • 1 cup of sugar
  • 1 cup of flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon coconut extract
  • 3/4 cup grated coconut
  • 1/2 cup of Nutella
  • pinch of salt

DIRECTIONS

Preheat oven to 350 degrees F (176 degrees C).

Cream butter with sugar until it turns a light yellow, add the Nutella and coconut extract. In a bowl mix flour, baking powder, pinch of salt and grated coconut, add to above mixture.

Beat until mixture forms a ball, about 3 minutes. Roll into balls and place on a tray, bake for 10 minutes.

Once they are ready, place on a rack to cool completely, store in an airtight container.

This recipe makes 20 cookies..

  • 1 taza de azúcar
  • 1 taza de harina

  • 3/4 taza de coco rallado
  • 1/2 taza de Nutella
  • pizca de sal

PREPARACION

Precaliente el horno a 350 grados F ( 176 grados C ).

En la batidora creme la mantequilla con el azúcar, deje batir hasta que tome un color amarillo claro, agregue la nutella y el extracto de coco.

Bata hasta que se forme una bola, aproximadamente 3 minutos. Forme bolitas y coloque en una bandeja, hornee por 10 minutos.

BRAZILIAN STYLE COCONUT COOKIES

This recipe is dedicated to all my friends from Brazil. I decided to devote the first recipe of the month to a Latin American country, to know much more about the culture and traditions of the country.

As you know Brazil is famous for its beaches, beautiful women and carnivals which they feel very proud because it is a very important event in the country.
Besides this they have a very delicious variety of meals, which cost me a little to pronounce, but thanks to my Brazilian friends I have known and tasted much more of this delicious culture.
The exotic fruits are part of the appeal they have and coconut is one that is used constantly in the Brazilian food.
It caught my attention, is that it does not contain gluten and are not made with flour, are made with cornstarch.
This is the first time I make cookies of this type.
They are very quick and easy to make, the texture is completely different from any cookie, you must be very careful not to brown too much or burn. It is important to include different styles of cuisines to our family, show our children that the world has great variety of ingredients and different dishes.
And to start you can make these delicious cookies and so we tasted a bit of this exotic and beautiful country.

INGREDIENTS

1 stick butter at room temperature
2 egg yolks
3/4 cup coconut milk
1 cup sugar
4 1/2 cup cornstarch
1 teaspoon coconut extract
1 cup shredded coconut
1 pinch of salt

DIRECTIONS

In a large bowl cream butter with egg yolks and sugar, set aside.
Combine the cornstarch with the grated coconut.
Alternate adding the coconut milk and the cornstarch mixture in to the creamed mixture. Then add a pinch of salt and teaspoon coconut extract.
Mix well until dough is formed soft but not sticky.
Roll balls of dough and place them on a grease baking tray. Press with a fork to give them a simple decoration.

Bake at 350 degrees F (175 degrees C) for 35 minutes or until cookies fell tight when you press them in the center.
When ready, removed them from the oven and place on a rack, allow to cool completely. Store in an airtight container.

This recipe makes 22 cookies.

Preparation time 1 hour.

CHOCOLATE CHIPS COOKIES WITH MIXED NUTS

We are closer to the holidays, and there is nothing better than fill our home with homemade delights.

The homemade cookies are a necessity in my house, we could say that almost every day I bake cookies. These chocolate and nuts are delicious and very easy to do.
Surprise your family with homemade treats, will change the way in which they enjoy meals at home.

INGREDIENTS

1/2 cup sugar
1/2 cup brown sugar
1 stick of room temperature butter
11/2 cup of flour
1 teaspoon of baking powder
1 egg
1 teaspoon of vanilla
1/2 cup of chocolate chips
1/2 chopped mix nuts

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).
In a bowl mix the flour with the baking powder.
Cream butter with both sugars.
Add egg, vanilla and flour gradually, when it well incorporated add the chocolate chips and mixed nuts. The dough will be soft.
Spoon the mixture into a tray lined with parchment paper.

Bake for 11 minutes.

Immediately place on a rack to cool completely.

This recipe makes 18 cookies.

SNICKERDOODLES WITH A TWIST


This classic recipe, it became a favorite of my family when we add chocolate chips to the batter.
And it’s been a hit in any activity.

INGREDIENTS  

3/4 cups of sugar
1 1/3 cups of all-purpose flour
1 teaspoon of cinnamon
1 teaspoon of cream of tartar
1/2 teaspoon of baking soda
1 stick of butter
1 egg
1 tablespoon of each white and dark chocolate chips

DIRECTIONS


Preheat the oven to 400 degrees F (200 degrees C).
Beat the sugar and the butter until creamy. Add the egg and the chocolate chips.
Combine in a bowl flour, cinnamon, cream of tartar, and baking soda.
Gradually add the flour mixture to the butter mixture until is completely combine.
Roll into 1-inch balls.
Place on a tray.

Bake for 10 minutes or until set.

DOUBLE CHOCOLATE CHIPS COOKIES

We all like something sweet from time to time, these cookies are addictive, crispi on the outside and soft on the inside, make your afternoon coffee in one of the best moments.

INGREDIENTS
2 sticks unsalted butter
1 cup sugar
2 3/4 cup flour
1 teaspoon vanilla
1/4 cup semi-sweet chocolate chips
1/4 cup white chocolate chips
DIRECTIONS

CLASSIC SUGAR COOKIES

So simple and delicious these cookies will delight the whole family.
INGREDIENTS
2 sticks unsalted butter
1/2 cup sugar
3/4 cup powdered sugar
2 egg yolks
1 teaspoon vanilla
1 tablespoon lemon zest
2 1/4 cups flour
1/2 teaspoon baking powder
pinch of salt
DIRECTIONS
Cream butter with sugar until fluffy, add lemon zest, vanilla and egg yolks. Apart incorporate the dry ingredients together and add them to the previous mixture slowly.
Let it cool for about 30 minutes.
In a tray lined with wax paper place tablespoons of the mixture separated by 3 inches between them, mash with the hand lightly.
Bake a 350 degrees for 15 minutes.
