I want to share with you today and easy and delicious cheesy recipe, sometime you can make in only 20 minutes and is perfect for a quick dinner.
I really the different meals I can create with Hamburger Helper®, not only they are affordable, but also super easy and fast to make.
You can find this delicious product in your nearest Walmart, and of course purchase the different presentations of the same product.
Well as I mentioned, I love this product and this time decided to give it an even more personal touch by adding other ingredients, I know my family is going to love this variation.
Hamburger Helper® is my go to for a easy meal, and I also love to make more than one when we have company, is perfect when the kids had friends for lunch or dinner and of course when my hubby has unexpected company, and let me tell you this happen very often.

If you have a super busy week, make sure to add to your grocery list some delicious Hamburger Helper® products, not only you will have a very relax dinner with your family, but also will have a helper by your side all the time. There are so many, and you can add veggies, salad, make a taco, a quesadilla or even a fried rice, yes it is really a perfect fit in your kitchen and also a very delicious one.

INGREDIENTS

  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 1/3 cup red bell pepper
  • 1 cup of broccoli florets
  • 1 cup of chopped carrots
  • 1/2 cup chopped cilantro
  • 1 pound ground beef
  • 1 cup hot water
  • 2 cups milk
  • 1 Hamburger Helper® Cheeseburger Macaroni Box
  • Salt and pepper to taste

DIRECTIONS

In a 10-inch skillet heat to medium heat melt butter, add onion and ground beef and cook until brown, add some salt and pepper.

Then add broccoli and carrots, cook for 2 minutes, add hot water, milk, seasoning mix and pasta, let it boil lower the heat, cover and cook for 12 minutes.

Once ready remove from heat, stir creamy cheddar cheese sauce and cilantro, mix well and serve.

I love the theme this month, making crunchy like cookies is my favorite and adding different nuts, bits and more.
I made this kinds of cookies specially when am cleaning my pantry and the only things I have are nuts, sprinkles, bits or chips; I’m sure todays recipes will be great inspirations to you.
This cookies are perfect for a party, made with English Toffee Bits, they add a bit of sweet, crunch and mild nut flavor.
I love to make them for my kids, believe or not they are a favorite in the summer time, and I think is because my daughters can help me with all the process.
As a good family favorite, am sure your family also will be in love of this cookies so easy, delicious and fast, oh and I did not tell you one important detail, you can eat this dough raw, yes it is save to eat it raw if you want.

INGREDIENTS

  • 2 cups flour
  • 1/4 cup powder milk
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 2 sticks of soften butter
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups English Toffee Bits

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. In the bowl of a stand mixer cream both sugar and butter for 5 minutes; in a different bowl mix flour, powder milk, baking powder and the toffee bits.
  3. Add vanilla extract to the butter mixture and then add the dry ingredients, mix just to incorporate.
  4. Place tablespoons of the dough in baking sheet, leave some space between then because they can spread out.
  5. Bake for 12 minutes, once ready place in a cooling rack to cool completely.
  6. This recipe makes 26 cookies.

INGREDIENTS

  • 1 TBS butter
  • 1 Package of Hamburger Helper® Cheddar Broccoli
  • 1 LB uncooked Boneless skinless chicken breasts
  • 1 1/2 cups hot water
  • 1 1/4 cup milk
  • 2 cups frozen peas and carrots

DIRECTIONS

  1. COOK.
    Cut chicken into 1/2 inc pieces.
    Melt butter in 10-inch skillet over medium-high heat. Add chicken; cook about 3 minutes, stirring often.
  2. STIR.
    In hot water, milk, seasoning mix and pasta. Heat to boiling.
  3. SIMMER.
    Reduce heat. Cover, simmer about 12 minutes, stirring occasionally, until pasta is tender.
  4. STIR.
    Remove from heat. Stern crazy cheddar sauce, and serve.

This month was a little challenging for me because rocky road is not something we eat on a daily basics, but I’m always up for a good challenge and I made this one a very personal one.
First I want it to make a different bundt cake this month for #BundtBakers and a brownie kind sound delicious in my head, and because chocolate is one key ingredient in brownies only need it to add the rest marshmallows and graham crackers.
At the end my bundt is not perfect but let me tell you that it is super delicious, it has lots of melted marshmallows and little bits of cookies, pack in chocolate flavor and super easy to make.

INGREDIENTS

  • 1 box of brownie mix.
  • 2 eggs
  • 2 tablespoons milk
  • 1/3 cup vegetable oil
  • 1 1/2 cup mini marshmallows
  • 1/2 cup graham cookie crumbs.

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. Make the brownie mixture, follow add eggs, milk and oil, mix until well combine, then add marshmallows and cookies, mix well and place the mixture in a mini bundt cake mold, grease and flour the mold for a no sticky mess.
  3. Bake for 34 minutes.
  4. Let it rest for 10 minutes once bake and place on a rack to cool completely or you can eat it warm with a cool glass of milk.
  5. This recipe makes 1 bundt cake.

In this occasion I partner with the fabulous Ginger Stark from Stark Raving Delicious, a local California girl with great ideas and delicious recipes too.
Know her allergy to dairy, I want it to make something different with a healthy approach and with the lest or zero dairy possible, and I think this chewy almond bars are the perfect idea.

INGREDIENTS

  • 1 cup quick plain oats
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 cup substitute butter, it needs to be very cold (you know the one I can’t believe)
  • 1/4 cup almond butter

DIRECTIONS

Preheat the oven to 350 degrees.
In a bowl combine oats, sugar, flour and “butter”, you can use a fork for this we just need to form little pieces like sand.
Place half or the mixture in a square baking dish, and press well to form the base, then add the almond butter on top and cover with the other half of the oats mixture.
Bake for 35 minutes. Wait until completely cool to cut in pieces and take it out of the pan.

This is great for a afternoon pick me up, when you need a little energy.

This recipe makes 12 servings.

Today, I want to share with you a fast, easy, delicious and perfect #WeekdaySupper; empanadas are maybe not something you think about it when is dinner time, but they are perfect to make especially when you want something fast and simple during dinner time.
Made with Masa Harina, completely gluten free, the flavor is different to anything you’ve tried. The variation I made today, with grated mozzarella cheese and ham, two things am sure you have in the fridge right know, is the most common you will find because those are two basic ingredients in almost every household.
Serve them hot or at room temperature, with a side of salad or leftover tomato sauce, the same you use for spaghetti.
You can Serve the empanadas with anything you like, am sure your family is going to enjoy this different and delicious dinner.

INGREDIENTS

  • FOR THE DOUGH
  • 2 cups Masa Harina
  • 1 teaspoon Achiote powder
  • 1 teaspoon garlic powder
  • 1 1/4 cup warm water
  • 1 teaspoon salt
    FOR THE FILLING
  • 2 cups grated mozzarella cheese
  • 1 cup ham strips
  • Enough oil for frying.

DIRECTIONS

Have the oil any kind, except olive oil, in a heavy bottom pot and heat in medium heat to reach 325 degrees.
Mix water and achiote powder, add to the Masa Harina, salt and garlic powder, mix, the add the water mixture little by little until all the dough is moist and soft, if you see the is to dry add a little water and if it is to soft almost watery add more masa harina.

Divide the dough in balls, and using a plastic bag cut in half and a big plate, place the ball in the center of the plastic, cover with another piece of plastic and press with the plate to form the tortilla.

Add some cheese and ham in one of the sides and them close to form the empanada with the other side of the tortilla.

Fry until golden brown, both sides of the empanada, about 5 minutes. Place 3 at a time, so the oil don’t get to cold. You can see the difference of color from one cook and the other one not ready.

Serve with a side of your favorite salad, sauce or salsa.

This recipes makes 14 empanadas.

Pineapple Pork #SundaySupperAs the summer comes closer and closer we want to share some tropical ideas so you can have lots of options to make in the summer for dinner, lunch, breakfast you name it.
Easy and delicious recipes like my Pineapple Pork a very simple way to incorporated some everyday recipes in a very peculiar way.
This is a dish inspired by one of my favorites Chinese Restaurants in Costa Rica, they make a dish very similar to this one and it was my favorite. The best part it was the amount of pineapple and sometimes coconut they use to put in the sauce.
Since we move here I try to find sometime similar but it was impossible, so I decided to make my own version and that is the history of how this delicious Pineapple Pork was born.
Like I said before is super easy to make, with a few ingredients, perfect over rice or pasta, and the best part you can make it in 20 minutes.

INGREDIENTS

  • 4 boneless pork chops
  • 1 20 oz can pineapple chunks
  • 1 large onion chop
  • 3/4 cup pineapple juice
  • 1/2 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon of corn starch
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste

DIRECTIONS

Heat a large pan to medium heat, add salt and pepper to the porch chops and sear each one just to make it golden brown delicious, at this point they don’t need to be completely cook.

Place the chops on a plate and add the onion to the pan, cook for 3 minutes then add the pineapple chunks and cook for 5 minutes in medium low heat.
In the meantime mix together soy sauce, pineapple juice and oyster sauce, reserve 1/4 cup of this sauce.

Add the chops to the pineapple and onion, and add the previously mix sauce, and lower the heat cook for 5 more minutes; add the corn starch to the remain 1/4 cup of sauce, mix and add to the delicious stuff you have cooking, and just cook for 2 minutes and that is it, ready to serve and eat.

Just one more thing, I add the cilantro at the end for a fresh herb finish.

This recipe makes 4 servings.

This month we have sandwich cookies for you, and we love Alfajor cookies.
The cookies are original from Peru and every country has there variation, I love to make this one the crumbles a little while you eat it.
In the center of the cookie you will find super delicious Dulce de Leche, I know I use it a lot, but it is completely addictive and that is the filling for this cookies.
So easy to make and very delicious, great for parties or any kind of fun activity like a picnic; a plus to these cookies is the they don’t melt.

INGREDIENTS

  • 2 cup flour
  • 3 tablespoons sugar
  • 6 egg yolks
  • 2 tablespoon milk
  • 1 stick butter, melted
  • 1 can Dulce de Leche
  • Powder sugar for decoration

DIRECTIONS

Preheat the oven to 350 degrees.

In the bowl of a electric mixer add sugar, flour, butter and egg yolks, mix for 2 minutes, then add the milk.
Place the dough in a lithely flour surface and roll out, using a small cookie cutter cut the cookies and place on a baking sheet, repeat until you run out of dough.
Bake for 15 minutes.

Place on a cooling rack and let it cool completely before adding 2 tablespoons of Dulce De Leche to on cookie, cover with the other, sprinkle some powder sugar and Bum! ready to eat.

I love holidays a lot and my family too, sharing and spending time together are great things about this events, the only part that I don’t really like is the amount of leftovers I have during this times of the year.
Sometimes we eat leftovers for like a week, specially in thanksgiving, and by the time we finish I don’t really know what else to make with turkey; for easter, it very similar, but easier for me to create different recipes for my family to enjoy.
This time I have lots of bread, and the perfect way for me to use day old bread it’s to make bread pudding. This is a great recipe if you want a bread pudding with a different twist, cheese and pineapple are the perfect combinations to make it more interesting and a little different from everything else.
Not very sweet and cook to perfection, is definitely a new favorite in my house and maybe the new request for our easter dinner.

INGREDIENTS

  • Any kind of day old bread that you have, cut in pieces.
  • 1 can condensed milk
  • 1 can evaporate milk
  • 1/2 cup asiago cheese, grated
  • 3 eggs
  • 1 teaspoon ground nutmeg
  • 1 stick melted butter
  • 1 small can pineapple chunks
  • 1/2 cup pineapple juice

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. In a bowl mix together, condensed milk, eggs, evaporated milk, nutmeg, pineapple juice and butter, then add cheese and pineapple, add to the bread cut in pieces, I used 1 loaf of french bread cut in cubes.
  3. With your hand start mixing all the ingredients until the bread is super soft and the liquid is completely absorb by the bread.
  4. Place in a grease mold, I used 4 little baking dishes the I recently bought but you can use any kind you like, just make sure you can fix all the mixture in it, don’t want to waste any drop.
  5. Bake for 50 minutes, serve hot or at room temperature.
  6. This recipe makes 4 small pans or 1 normal size.

This are products that I personally use every day for different activities, lunch for the kids to take to school, an easy dinner with the Kraft Mac n Cheese and Caparison juice for them to enjoy with friends at the playground.

They make my life so easy, affordable and delicious; so versatile the I can created any recipe, like my delicious and different Tres leches.
This is a dessert the my father and I used to make, a delicious cake with lots of different milks and my own twist a Cream Cheese filling.

A tradicional dessert in the latino culture the everybody can enjoy and you can definitely put a twist on it.
Add some rum, coffee or chocolate and you will have a completely different kind of tres leches, you can even add Jell-o to the filling just like me any flavors and it is even better.

INGREDIENTS PART 1

  • 6 eggs (separated the yolk from the white)
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 3/4 cup salt
  • 1 teaspoon lime zest

Directions

Preheat the oven to 350 degrees.
In the bowl of an electric mixer with a whisk attachment, add whites and salt, beat until soft picks are form, then add the sugar by spoonfuls, then add the egg yolks one by one and lime zest, beat for 3 minutes. By hand and using a sifter add flour and by using a sifter incorporate the flour with the baking powder folding gently with a spoon.
Place in a 9×13 baking pan and bake for 25 minutes or until golden brown.

  • 1 cup whipping cream
  • 1 can evaporated milk
  • 1 can condensed milk

DIRECTIONS

In a bowl mix all the ingredients until well incorporated.

1 8 oz package of PHILADELPHIA Cream Cheese
3 tablespoons strawberry Jell-O
1/4 cup hot water
1 cup heavy whipping cream

DIRECTIONS

In a bowl mix water and Jell-O until dissolve add the cream cheese and mix until incorporated, then add the heavy whipping cream and beat until soft picks are form.

TO ASSEMBLE THE CAKE

Once the cake is completely cooled pierced the surface with a fork and cut in half, add some of the condense milk mixture to the bottom, about 1/2 cup, place have of the cream cheese filling and place the other half of the cake on top and add another 1/2 cup of the condense milk mixture; then add the rest of the filling on top and refrigerated over night.
