Hi, thinking about the goals that we intend to start each year and people who need help to accomplish them.

Diets are really successful if we intend to comply with them, but more important to follow a diet is to maintain an ideal weight.

CHICKEN VEGETABLE STEW

I am very proud to present this recipe.

In search of delicious flavors and healthier meals for my family, I made this recipe is not only delicious but also low in calories.
As impressive as it may seem only has 180 calories per serving and the secret is to use not starchy vegetable.
So enjoy a good plate of this delicious and healthy stew.

INGREDIENTS

5 grams of skinless chicken breast cooked diced small
1 can diced tomatoes
2 tablespoons spicy homemade salsa
2 carrots, cut into half-moon
1 onion, chopped
2 cloves garlic, minced
1 cup chopped green onion
1 cup chopped cilantro
1 head broccoli, cut into flowers
1 teaspoon salt 1 teaspoon black pepper
1 tablespoon chopped fresh sage
1 teaspoon dried oregano
Cooking spray

DIRECTIONS

Spray a hot pan with cooking spray, place the onion, garlic and tomato can, let it begin to boil and add remaining ingredients.
Let it cook for 15 minutes or until carrot is tender.
Serve immediately and accompany this stew with 2 tablespoons of white rice.

Additional Information:

A can of tomato contains 40 calories and 0 fat.
The spicy homemade sauce contains 10 calories per 2 tablespoons and 0 fat.

You must use the cooking spray when cooking rice.

Serves 6 people.

BREAD STUFFED WITH GARLIC BUTTER, PARMESAN CHEESE AND BASIL

Simple is always delicious.

This recipe is inspired by my daughter.
She loves bread in all its forms, and I recently discovered this great tool to make bread more often,refrigerated dough for bread.
But do not think the dough is so simple, prepared butter gave it a unique flavor, my family loved it I hope that yours too.
Enjoy it.

INGREDIENTS

1 stick unsalted butter at room temperature
1 tube of French-type bread dough Pillsbury brand
2 cloves of garlic
8 fresh basil leaves
1 / 2 teaspoon salt
3 tablespoons grated Parmesan cheese

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).

For the next step I recommend using a food processor.
Place the garlic, basil, salt and butter in processor and press until well incorporated.
Place mixture in a bowl and add the Parmesan cheese.
Remove the dough from the package and make a cut in the center, brush the butter and place on tray.

Bake for 30 minutes.

It is an excellent choice to accompany any meal or event.

Holiday Tradition

I want to share this delicious tradition.
In Costa Rica each year we make pork tamales, which are a must on the table this holiday season.
The whole family participates and collaborates in different taskssince this process is very long and tiring. At the end of the day the reward is great, we enjoy the Tamale in the company of our loved ones and is one of the most important moments.
Remember that the family must stay together and traditions are a very important thing to keep forever.

FRUIT DELIGHT

This dessert is special for busy days.

Super fast and delicious.
The taste and texture is the best and for this time of year is what is needed.
I hope you will try and enjoy.

INGREDIENTS

1 can condensed milk
1 can evaporated milk
1 can fruit cocktail 14 ounces
2 envelopes unflavored gelatin
1 / 4 cup water

DIRECTIONS

Place the gelatin in the water and leave for 5 minutes.
In a bowl, mix condensed milk, evaporated milk and fruit cocktail with juice.
Put the gelatin in the microwave for 30 seconds to dissolve.
Add to the mixture, stirring constantly.

Place in a rectangular pyrex and put the dessert in refrigerator for 4 hours or overnight if possible.

Before serving, cut into small pieces and carefully remove the pieces and serve.

This recipe makes 20 servings.

CAPRESSE PITA

In order to make life easier for everyone in these days, it is important for me to provide some quick and delicious recipes.

One of them is this Pita, perfect for lunch, picnic or simply to enjoy after a busy morning.
Fast food does not need to stop being delicious and healthy, and is much better when we make at home.

INGREDIENTS

For one pita
1 pita bread
1 tomato, sliced
1 ball of mozzarella into slices
6 basil leaves
1 tablespoon mayonnaise
1 / 2 teaspoon Dijon mustard
salt and pepper to taste

DIRECTIONS

Warm pita bread for 30 seconds in the microwave.
Cut in half and open each half, mix the mayonnaise with the mustard, spread on both sides of each pita half.
Place in each half of pita bread 3 slices of tomato, 3 basil leaves and 2 or 3 slices of mozzarella cheese, sprinkle with salt and pepper.

Serve and enjoy.

Double the recipe if you want to make more of a pita.

CAPRESE STYLE PASTA SALAD

I belong to a group of parent volunteers in my daughter’s class.

And there was an activity for the teachers and each class had to bring a meal.
I offered to bring pasta salad, and my great interest was give them something very tasty.
It is truly an excellent way to impress in any activity that you have.

INGREDIENTS

1 box of Penne pasta style
3 / 4 cup pesto (you can buy in any supermarket)
11 / 2 cup cherry tomatoes, halved
2 balls of fresh Mozzarella cheese cut into small pieces.

DIRECTIONS

Cook pasta according to package directions.
Once ready, remove from heat, drain well and pour cold water to stop the cooking process.
Pour into a large bowl and add the pesto, stir until well incorporated, add the tomatoes and cheese, stir gently to avoid damage the texture of the tomatoes.

Cool for 15 minutes before serving or serve immediately.

I would not recommend making this recipe from one day to another because the texture of the pasta will not be the same.

Remember to buy a good quality pesto.

Serves 8 people.

CHOCOLATE CHIPS COOKIES WITH MIXED NUTS

We are closer to the holidays, and there is nothing better than fill our home with homemade delights.

The homemade cookies are a necessity in my house, we could say that almost every day I bake cookies. These chocolate and nuts are delicious and very easy to do.
Surprise your family with homemade treats, will change the way in which they enjoy meals at home.

INGREDIENTS

1/2 cup sugar
1/2 cup brown sugar
1 stick of room temperature butter
11/2 cup of flour
1 teaspoon of baking powder
1 egg
1 teaspoon of vanilla
1/2 cup of chocolate chips
1/2 chopped mix nuts

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).
In a bowl mix the flour with the baking powder.
Cream butter with both sugars.
Add egg, vanilla and flour gradually, when it well incorporated add the chocolate chips and mixed nuts. The dough will be soft.
Spoon the mixture into a tray lined with parchment paper.

Bake for 11 minutes.

Immediately place on a rack to cool completely.

This recipe makes 18 cookies.
