Pineapple Pork #SundaySupperAs the summer comes closer and closer we want to share some tropical ideas so you can have lots of options to make in the summer for dinner, lunch, breakfast you name it.
Easy and delicious recipes like my Pineapple Pork a very simple way to incorporated some everyday recipes in a very peculiar way.
This is a dish inspired by one of my favorites Chinese Restaurants in Costa Rica, they make a dish very similar to this one and it was my favorite. The best part it was the amount of pineapple and sometimes coconut they use to put in the sauce.
Since we move here I try to find sometime similar but it was impossible, so I decided to make my own version and that is the history of how this delicious Pineapple Pork was born.
Like I said before is super easy to make, with a few ingredients, perfect over rice or pasta, and the best part you can make it in 20 minutes.

INGREDIENTS

  • 4 boneless pork chops
  • 1 20 oz can pineapple chunks
  • 1 large onion chop
  • 3/4 cup pineapple juice
  • 1/2 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon of corn starch
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste

DIRECTIONS

Heat a large pan to medium heat, add salt and pepper to the porch chops and sear each one just to make it golden brown delicious, at this point they don’t need to be completely cook.

Place the chops on a plate and add the onion to the pan, cook for 3 minutes then add the pineapple chunks and cook for 5 minutes in medium low heat.
In the meantime mix together soy sauce, pineapple juice and oyster sauce, reserve 1/4 cup of this sauce.

Add the chops to the pineapple and onion, and add the previously mix sauce, and lower the heat cook for 5 more minutes; add the corn starch to the remain 1/4 cup of sauce, mix and add to the delicious stuff you have cooking, and just cook for 2 minutes and that is it, ready to serve and eat.

Just one more thing, I add the cilantro at the end for a fresh herb finish.

Cheese and Pineapple Bread Pudding

I love holidays a lot and my family too, sharing and spending time together are great things about this events, the only part that I don’t really like is the amount of leftovers I have during this times of the year.
Sometimes we eat leftovers for like a week, specially in thanksgiving, and by the time we finish I don’t really know what else to make with turkey; for easter, it very similar, but easier for me to create different recipes for my family to enjoy.
This time I have lots of bread, and the perfect way for me to use day old bread it’s to make bread pudding. This is a great recipe if you want a bread pudding with a different twist, cheese and pineapple are the perfect combinations to make it more interesting and a little different from everything else.
Not very sweet and cook to perfection, is definitely a new favorite in my house and maybe the new request for our easter dinner.

INGREDIENTS

  • Any kind of day old bread that you have, cut in pieces.
  • 1 can condensed milk
  • 1 can evaporate milk
  • 1/2 cup asiago cheese, grated
  • 3 eggs
  • 1 teaspoon ground nutmeg
  • 1 stick melted butter
  • 1 small can pineapple chunks
  • 1/2 cup pineapple juice

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. In a bowl mix together, condensed milk, eggs, evaporated milk, nutmeg, pineapple juice and butter, then add cheese and pineapple, add to the bread cut in pieces, I used 1 loaf of french bread cut in cubes.
  3. With your hand start mixing all the ingredients until the bread is super soft and the liquid is completely absorb by the bread.
  4. Place in a grease mold, I used 4 little baking dishes the I recently bought but you can use any kind you like, just make sure you can fix all the mixture in it, don’t want to waste any drop.
  5. Bake for 50 minutes, serve hot or at room temperature.
  6. This recipe makes 4 small pans or 1 normal size.

Cooking time: 50 minutes

And we are getting ready for the Oscars; today we want to share with all of you a little bit of elegant, diferente and delicious recipes so you can make a fabulous red carpet meal, and of course enjoy the finest represent to Hollywood.
I made for you a favorite, Strawberry Galette in a mini form, yes this is the most easy, delicious and elegant dessert you can serve tonight, it have fresh fruit and some of the most incredibles combinations ever sweet and tart, yes tart, because the addition of lime zest give this dessert a freshness the is completely necessary cut some of the sweetness.
Serve with a side of whipped cream and I smuggle some blueberries just because is my daughter favorite fruit, is the best late night dessert, light, fresh and delicious.

INGREDIENTS

  • 1 package Storebought Pie Crust (2 Rounds Of Dough)
  • 3 cups of strawberries, cut in pieces
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • Zest of 1 lime
  • You can also add blueberries or raspberries

DIRECTIONS

  1. Preheat the oven to 400 degrees.
  2. In a bowl mix strawberries, cornstarch, sugar and lime zest, set aside.
  3. Unroll the dough and cut rounds of pastry with a 5-inch bowl or cookie cutter, I used a tart mold so the galette don’t falls apart, this help to keep the fruit inside de dough.
  4. You can easily get about 10 disk of dough total.
  5. Ok, know place about 2 tablespoons of the fruit in the middle and you can fold the edges or just leave free form in the mold.
  6. Bake for 20 minutes.
  7. Serve with a side of whipped cream.
  8. This recipe makes 10 mini Galettes.

So happy to be back this Sunday to share delicious and fabulous food with all of you. And what better way that with the #SundaySupper family.
Today we have delicious hometown food, smoothies classic and unique the you love to eat growing up.
When I was little my favorite food was always rice, yes, rice with all things you can imagine, and very close to my house was this place where they had all things rice, sweet, savory, baked, fried, Oh My! delicious, and once my family and I used to go.
I prepare for you one of my all time favorites, this rice is just the perfect combination of, sweet and savory food, a classic in my hometown and now a go to for your family supper.

INGREDIENTS

  • 1/2 cup minced onion
  • 1/2 cup minced red bell pepper
  • 1/2 cup minced cilantro
  • 3 cups parboil rice, already cook
  • 1 small can crushed pineapple
  • 3 cups cook pull pork
  • 3 teaspoon achiote powder
  • 1 teaspoon oil

DIRECTIONS

  1. Heat a pan to medium high heat, add the oil, onion and bell pepper, cook for 2 minutes, add the rice (remember the rice needs to be completely cook, and season with salt) and the achiote powder, mix until combine, than add the pull pork and mix until all the rice is uniformly with achiote and pork.
    Before serving add the cilantro.
  2. This recipe makes 6 servings.

Cooking time: 15 minutes

Baked Rice With MushroomsHave you ever went on the hunt for a ingredient? Something you know you need it just because you want to make that specific recipe?
Well this is the case of a lot of cook everywhere and let me tell you sometimes it is hard even create a recipe with this specific ingredient.
But don’t today we have a lot of recipes with unusual ingredients the are difficult to find or you just went on a hunt for them.
I made a delicious and easy baked rice with mushrooms, and I know the this is a very easy ingredient to find but the recipe is something unusual and you know me I love to cook with rice, and show you the there are so many recipes you can make with simple and basic ingredients.

INGREDIENTS

  • 1 cup parboiled uncooked rice
  • 1 bag of frozen peas with carrots
  • 1 pound of crimini sliced mushrooms
  • 1/2 tablespoon salt
  • 1 teaspoon pepper

DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Brush 1 tablespoon of butter in a baking dish.
  3. In a bowl mix all the ingredients except the water, place the mixture in the baking dish, put it in the oven and add the water, this is the safest method you can used, and bake for 40 minutes.
  4. After the time is done, add the rest of the butter to the rice, combine well and place in the oven for 5 more minutes.
  5. Once ready, serve immediately or cover and reheat later. This rice is a great side dish for your turkey, fish or a good salad if serve cool just add some dressing.

This recipe makes 6 servings.

Peanut Butter Coconut Mini Bars #SundaySupperWelcome to another delicious #SundaySupper, I’m so happy the you decide to join us for a light, easy and different recipes to make on the holidays.
We want for you to have options in all the meals, so your family can enjoy and also eat a little healthier this holiday season.
You know how difficult it is to say no to a delicious pie, baked ham with lots of gravy, or the most buttery, dripping and succulent meal.
And who can forget the most decadent desserts? Well for this one I have the perfect option, a delicious, sweet and salty in a tiny bite peanut butter and coconut mini bar, with all the things you can combine peanut butter, coconut is the most least expected.
And this little bite is just perfection, in like I said one bite.
It is better when served super cool or freeze, because the flavors are more intense. Packed in protein, and you will feel satisfied, no need to reach the leftover candy.

INGREDIENTS

  • 3/4 cup peanut butter
  • 1 cup of quick cooking oats
  • 1 cup dry coconut
  • 1 tablespoon crystalized ginger, dice
  • 1 cup mix nuts chopped
  • 1 teaspoon oil
  • 1 cup melted dark chocolate

DIRECTIONS

  1. This is a very simple recipe, to a food processor add, peanut butter, oats, ginger and nuts, pulse until all is combine.
    In a plastic container smear the oil, eliminating the excess.
  2. Place the yummy concoction to the container and form using your fingers, and just pour the melted chocolate on top.
  3. I put mine on the freezer for 1/2 hour, flip it to get it out of the container, cut in pieces and cover with plastic, and place it in the fridge this time, like I said, cool is even better to eat.

This recipe makes about 20 little bites.

I decided to make a jelly because I want it to offer a different and unique way to feature the Red Moscato Wine. The flavors in the wine like citrus, peach and berries are a fabulous complement to all kinds of cheese or if you want to top a piece of baked ham.
The Red Moscato Jelly is perfect to serve at a dinner party, with crackers, figs, or as a complement on a Charcuterie board.

The Red Moscato is a fruity sweet delicious wine, and is perfect to complement any meal, but when you use the wine in a jelly or a sauce the flavor enhance more and you can have a glance of a different taste. All the berries and peach are highlighted in a very different and delicious way. This is why I enjoy and love to cook with Gallo Family Wines: they are not only for drinking but you can also enjoy them in a recipe.

Draculas Wine Jelly

INGREDIENTS

  1. 3 ½ cup of Red Moscato wine
  2. 4 tablespoons of pectin
  3. ½ cup lemon juice
  4. 1 ½ cups sugar

DIRECTIONS

  • In a heavy bottom pot heat to medium low heat, add the wine, and let it simmer until reduced by half, add the lemon juice and the pectin, stir constantly to avoid the form of lumps.
  • Gradually add the sugar, and cook for 10 minutes in a low heat.
  • Then, add the jelly to the jars already clean.
  • You can start serving some Dracula jelly in your Halloween party, after refrigerated for at least 4 hours.

This recipe makes 4,½ pint jars of jelly.

vegetable fried rice 2So many things to do the sometime we forget the most essential things, and off course with that I mean food, if you notice how fast the year go by know and how expensive it is to grocery shopping, it is important to incorporated budget friendly recipes to our everyday meal plan.
And this is why today the #SundaySupper team have some easy, fast, delicious and economical recipes for our super busy everyday life.
Like my vegetable fried rice, super fast and easy made with leftover rice, for any occasion and if you know me you will see how I love rice, rotisserie chicken and pasta, you need to make those ingredients a must in your house ASAP.

INGREDIENTS

  • 2 cups already cook white rice
  • 1 1/2 cup dice celery
  • 1 1/2 cup dice red bell pepper
  • 2 cups shredded carrots
  • 1/2 cup chopped cilantro
  • 1 tablespoon oyster sauce
  • 3 tablespoons soy sauce
  • 1 teaspoons sesame oil

DIRECTIONS

  1. Heat a pan to medium low heat and add the oil, celery and bell pepper, cook for about 3 minutes, don’t cook to long or they turn soft and we want crunchy vegetables.
  2. Add the rice and mix then add the carrots, oyster sauce, soy sauce and cilantro, and mix just to incorporated everything.
  3. Serve immediately with a side of salad or more vegetables.
  4. This recipe makes 3 servings.

Homemade Hash Browns #SundaySupper #Unprocessed

homemade hash brownI’m so happy you are join us for today #SundaySupper and be part of the Unprocessed movement, the Andrew Alder started a few year ago.
Although we know, must of the food we buy at the supermarket is brain processed in some way, we want to encourage you to eat more healthy, local, and even plant by your own hands.
That’s what we mean with unprocessed, just by trying a homemade everyday food, makes this a unique way to eat everyday and you can feel better knowing whats in your plate.
Like my Homemade Hash Browns,is so easy and so delicious the nobody is going to believe they are homemade, with little crispy bits and the fresh flavor of cilantro, this makes a unique and perfect way to start your sunday morning.
Enjoy and remember, homemade is better.

INGREDIENTS

  • 3 Idaho potatoes
  • 1/2 cup dice onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon oil
  • 4 teaspoons butter
  • Salt and pepper to taste

DIRECTIONS

Preheat the oven to 350°F. Rinse and dry the potatoes, bake for 1 hour. Once ready let it cool and peel them.

Using a grater or a food processor, grate the potatoes, yes I used the one you see on the photo.

Heat a pan to medium heat add oil and 1 teaspoon of butter, add the onion and cook until it become transparent, about 3 minutes.

Add the grated potatoes, a good amount of salt, pepper and the rest of the butter, and cook for about 8 minutes.

After that time it would look like this, sprinkle the cilantro for a fresh flavor, I love soft with little pieces of crispiness, but if you like more crunchy just leave it longer.
They are perfect as a complement to a meat, breakfast or just because you are hungry and want a midnight snack.
