I’m so happy for the theme this month, this is definitely a great opportunity to show you my youngest daughter favorite oatmeal flavor. This is her favorite every Saturday morning and it is just the perfect combination of flavors that made this bread so deliciously good.

Banana Oatmeal Loaf, combines also one of my all time favorite breakfast bread, banana bread, the smell, the flavors and the different ways you can make this classic bread is why I love it so much. You can make the same recipe and add some chocolate chips or peanut butter chips, or you can add nuts or coconut, the list is infinite, and my mind is just writing new recipes.

INGREDIENTS

  • 3/4 cups quick oats
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1 tablespoons oil
  • 2 bananas
  • 1/2 cup half and half

DIRECTIONS

Preheat the oven to 350 degrees.
In a bowl mix oats, flour, sugar, baking powder, baking soda and cinnamon, set aside.
In other bowl, mash the bananas to form a puree, add oil, eggs and mix.
To the bowl with the dry ingredients, add the banana mixture mix and add the half half, mix until well combine.

Prepare a loaf pan with some cooking spray, add the mixture and bake for 35 to 40 minutes, or until the center of the bread is completely cook.
You can also make 3 mini loaf, this is perfect for a gift or to take on a picnic.

This recipe makes 1 entire loaf or 3 mini.

Coconut Banana Bundt Cake #BundtBakers

Coconut Banana Bundt CakeDelicious and different is what I made this month for the #BundtBakers group and our goal it was to make a delicious bundt with coconut.
And of course coconut is one of my favorite ingredients ever, am always trying to make different recipes sweet and salty so you can incorporate this versatile ingredient.
Even the most simple recipe turn into something so delicious with just a pinch of coconut.
My bundt cake is so easy, moist and tropical, I know we need more tropical recipes in winter, so cold outside.
If you want your house to smell amazing and keep your buns warm, I highly recommend to start baking, specially todays delicious coconut bundt.

INGREDIENTS

  • 2 cups Flour
  • 3 mashed bananas
  • 3 eggs
  • 1 1/4 teaspoon baking soda
  • 1 1/4 teaspoon baking powder
  • 1/2 cup coconut oil
  • 2/3 cup half and half
  • 1 teaspoon ground cinnamon
  • 1 cup unsweetened grated coconut
  • pinch of salt
  • 1 teaspoon vanilla extra
  • 2 1/2 cup super fine sugar

DIRECTIONS

  1. Preheat the oven to 350 ° F.
  2. Prepare a bundt cake mold with cooking spray, cover completely.
  3. In a bowl mix flour, baking soda, baking powder, cinnamon and salt.
  4. In a different bowl mix, bananas, oil, eggs, half and half, sugar, vanilla extra, mix well until everything is fully incorporated, then add the dry ingredients in 3 additions, you don’t need a stand mixer to make this cake.
  5. When everything is well incorporated, add the grated coconut, mix and place the batter in the bundt cake mold.
  6. Bake for 50 minutes. Let it cool for 15 minutes and place on a cooling rack to cool completely.

This recipe make 1 bundt cake.

Caramel Banana Bundt Cake #BundtBakers

caramel banana bundt cakeAnd this is the month I was waiting for so long, because we made delicious and irresistible caramel bundt, yes so sweet and gooey good the you never ever would look a bundt cake with the same eyes.
And this is because caramel is just my favorite, well that and coconut, I cook, make and created a lot of my sweet recipes with coconut and caramel, yum, and maybe is because back in home those are like an every day staples in the kitchen, making sweet recipes required caramel or dulce de leche all the time.
It is just delicious, and in this occasion I really want it to make something new and different, and is so funny, I made my bundt with some caramel filling, but it kinda got stuck on the pan, but it is still so delicious, gooey and oh my incredibly addictive, oh I forgot to tell you the I add some banana for a “healthy” approach.

INGREDIENTS

  • 3 cups AP flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 sticks soften butter
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 2 mashed bananas
  • 1 cup fat free half and half
    FILLING:
  • 1/2 cup caramel(I used the one for ice cream)
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar

DIRECTIONS

Preheat the oven to 350°F.

Cream butter and sugar in a stand mixer for 5 minutes.

Once the butter is all fluffy and light, add eggs, vanilla extract, mashed banana and half and half. It would look weir at first but don’t worry once you add the dry ingredients it will look pretty.

In a separate bowl sift flour, salt and baking soda, add to the egg and butter mixture and beat for 3 minutes.

See now looks super yummy and pretty.

In a bundt mold already cover with oil and flour or butter, add half of the batter then add the caramel filling, (just mix the caramel, cinnamon and brown sugar together to well combine), be careful with the filling place it only in the center and without touching the sides of the mold, and then add the rest of the batter.
Bake for 1 hour or until the center of the cake when you insert a toothpick comes up clean.

This recipe makes 1 bundt cake.
