Pineapple Coconut CupcakesThis week is so special and important to us, can you believe there is bean 2 year since #SundaySupper star? Well amazingly true this is.
And am so happy and honored to part of this group, that have bring me so much, new friends, new opportunities, new challenges and of course a better view of what I love to do, cook for all of you and sharing my recipes.
I grow so much in blogging since I join this fabulous family and all the support the I receive is incredible.
This is my favorite moment and feeling, knowing the I have a second family and we can support and advice each other.
To celebrate this occasion I made the most delicious and easy pineapple coconut cupcakes, so easy and light you won’t believe this is a cupcake.

INGREDIENTS

  • 1 box of yellow cake mix
  • 1 cup of pineapple juice (I used the juice of one can of 14 ounces)
  • 1/2 cup applesauce
  • 3 eggs
  • 1 cup shredded coconut

Frosting:

  • 1- 8 ounces package of low fat cream cheese
  • 4 cups powder sugar
  • 2 teaspoon of Meringue Powder

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl mix pineapple juice, applesauce, eggs, coconut and cake mix until incorporated.
  3. Line a cupcake pan with cupcake liners and add about 1/4 cup of the mix to each.
  4. Bake for 20 minutes.
  5. To make the frosting, just place all ingredients in a bowl of a stand mixer or hand mixer, and mix for 5 minutes.

This recipe makes 22 cupcakes.

Preparation time: 15 minutes
Cooking time: 20 minutes

SWIRL NUTELLA CUPCAKES for #SundaySupper

The football season has already started and the excitement begins.
It is in my opinion one of the best times of year where delicious meals are shared.
On this occasion I offered for the first game, bring dessert since I almost always have to do a main course, but not this time, and I offered to make some delicious and succulent cupcakes with Nutella. Delight in my mouth just thinking about it I would like to be eating another, the only disadvantage of bringing dessert is that everyone looks forward to finish the meal and the dessert is over too fast.
These exquisite cupcakes are quick and easy to make considering that we should not spend a lot of hours in the kitchen because you have to enjoy the party.
So enjoy a great time with your favorite teams, family and friends and remember that no matter who wins or loses, the most important is family fun.

INGREDIENTS

  • 1 box of cake mix (preferably White)
  • 3 egg whites
  • 2 tablespoons vegetable oil
  • 1 1/3 cup water
  • 1 tablespoon vanilla
  • 1/2 cup Nutella

DIRECTIONS

Preheat the oven to 325 ° F.

Line 24 medium-size cupcake cups with paper liner, you’ll need two cupcake pans with 12 cups each.

In a bowl mix cake mix, water, oil, egg whites and vanilla, stir well until well incorporated, place a cup of the mixture in a separate bowl and toss with the ½ cup of Nutella.
Fill each cupcake cup liner about two thirds full with the cake batter and add 1 tablespoon of the Nutella batter in the center of each cupcake cup.

Bake for 28 minutes. When ready, let cool in pan for 5 minutes and then move to a wire rack to cool completely.

This recipe makes 24 cupcakes.

BIRTHDAY CHOCOLATE CUPCAKES FOR #SundaySupper With Katie Workman

Nothing like a good book to enjoy before bedtime.
From the first moment I started reading THE MOM 100 COOKBOOK I loved it is written in a way so incredible that it’s like reading a comedy.
It is completely refreshing and unlike any other cookbook I had read before and it led to us mothers without forgetting the rest of the family of course.
In addition content of delicious recipes, you’ll also find suggestions and tips to make life easier.
These cupcakes are part Katie Workman cookbook as option 2 to Birthday Chocolate Cake.

INGREDIENTS

  • 1 cup (2 sticks) unsalted butter, at room temperature.
  • 2 cups cake flour
  • 2/3 cup unsweetened Dutch-processed cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup sour cream, or another 1/2 cup whole milk
  • 3/4 cup whole milk

DIRECTIONS

Preheat the oven to 350 degrees F.

Line 24 medium-size cupcake cups with paper liner (you’ll need two cupcake pans with 12 cups each).
Fill each cupcake cup liner about two thirds full with the chocolate cake batter. Bake the cupcakes until a toothpick or wooden skewer inserted in the center comes out clean, 22 to 24 minutes.

Let the cupcakes cool in the pans on wire racks for 10 minutes, them carefully remove them from the pans, arrange them upright on wire racks, and let them cool completely before frosting.

MY NOT SO SPOOKY CUPCAKES

As part of the celebrations of Halloween my family and I wanted to try to make a dessert allusive to the activity but also fun.

My 6 year old daughter came up with that we could make cupcakes with pink frosting and decorations, excellent color for Halloween, so we put together some ingredients and ended up creating these delicious orange cupcakes.

This is a special recipe to spend a pleasant time with the family and allow the children to explore more in the kitchen.

INGREDIENTS

1 box of cake mix white
3 egg whites
1 cup orange juice
1 / 4 cup water
zest of 1 orange
1 / 3 cup vegetable oil

DIRECTIONS

Preheat oven to 325 degrees F (160 degrees C).

In a bowl add the cake mix, orange zest, orange juice, egg whites and water.
Mix well until smooth.

Pour the mixture into a muffin pan lined with muffin paper.

Bake for 20 to 24 minutes, depending on each oven, remember that everyone is different.

Insert a toothpick in the center it comes out clean they are ready.

Let cool completely before decorating.

Yield 20 cupcakes.
