Cheese and Ham Empanadas #WeekdaySupper

Today, I want to share with you a fast, easy, delicious and perfect #WeekdaySupper; empanadas are maybe not something you think about it when is dinner time, but they are perfect to make especially when you want something fast and simple during dinner time.
Made with Masa Harina, completely gluten free, the flavor is different to anything you’ve tried. The variation I made today, with grated mozzarella cheese and ham, two things am sure you have in the fridge right know, is the most common you will find because those are two basic ingredients in almost every household.
Serve them hot or at room temperature, with a side of salad or leftover tomato sauce, the same you use for spaghetti.
You can Serve the empanadas with anything you like, am sure your family is going to enjoy this different and delicious dinner.

INGREDIENTS

  • FOR THE DOUGH
  • 2 cups Masa Harina
  • 1 teaspoon Achiote powder
  • 1 teaspoon garlic powder
  • 1 1/4 cup warm water
  • 1 teaspoon salt
    FOR THE FILLING
  • 2 cups grated mozzarella cheese
  • 1 cup ham strips
  • Enough oil for frying.

DIRECTIONS

Have the oil any kind, except olive oil, in a heavy bottom pot and heat in medium heat to reach 325 degrees.
Mix water and achiote powder, add to the Masa Harina, salt and garlic powder, mix, the add the water mixture little by little until all the dough is moist and soft, if you see the is to dry add a little water and if it is to soft almost watery add more masa harina.

Divide the dough in balls, and using a plastic bag cut in half and a big plate, place the ball in the center of the plastic, cover with another piece of plastic and press with the plate to form the tortilla.

Add some cheese and ham in one of the sides and them close to form the empanada with the other side of the tortilla.

Fry until golden brown, both sides of the empanada, about 5 minutes. Place 3 at a time, so the oil don’t get to cold. You can see the difference of color from one cook and the other one not ready.

Serve with a side of your favorite salad, sauce or salsa.

This recipes makes 14 empanadas.

Mini Sweet Cheese Empanadas #TheLeftoversClub

FullSizeRenderThe best way to start the new year is by sharing sometime delicious with a friend, and in this occasion and so happy to be sharing this delicious recipe with my friend Elizabeth and all of you the enjoy #TheLeftoversClub.

I made a classic favorite in my house, so I hope she likes it, easy, sweet, salty, crunchy and mini empanadas are perfect for a snack, coffee time or a party. Delicious, different and great for sharing.

INGREDIENTS

  • 1/2 cup cream cheese
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon vanilla extra
  • 2 sheets of refrigerated pie crust

DIRECTIONS

    1. Preheat the oven to 350°F.
    2. Roll out the pie crust and use a cookie cutter to cut circles, in a bowl mix together cream cheese, sugar and vanilla, and place 1/2 teaspoon on the center of each circle.
    3. Form the empanadas by folding the other half of the dough, close then very well of the filling can come out and we don’t want that.
    4. Bake for 12 minutes.

This recipe makes 24 mini empanadas.

GUAVA EMPANADAS


As part of the Costa Rican tradition, afternoon coffee is consumed with bread sweet or salty.
In this case I want to share this delicious recipe from the time of the grandmothers.
The empanadas either sweet or savory is part of our culture as well as other activities we enjoy sharing with family and friends.
I hope you enjoy.

INGREDIENTS

3 3/4 cup flour
3/4 cup sugar
12 tablespoons unsalted butter
1 egg
1 teaspoon baking powder
1/2 cup water
1 teaspoon vanilla extract
1 jar of guava jam 8.5 oz.

DIRECTIONS


1. Creme sugar with the butter and add the egg slowly.

2. Mix water with vanilla extract and separate the flour with baking powder and add to creamed mixture alternating liquid and dry.

3. The dough is soft.

4. Place dough on a clean surface with a little flour knead and stretch to cut the circles and fill with a teaspoon of guava jam.

5. Close and coat with beaten egg and sprinkle with a little sugar.
Place on a tray and bake at 325 degrees F (160 degrees C) for 25 minutes.

This recipe makes 22 empanadas.
