We all love cookies and ice cream, specially when you can combine them and make a delicious sandwich.
This month the #CreativeCookieExchange, is bringing all the temptations together, yes we have all kinds of cookies and ice cream. Your eyes will be melted by the end of this post, am sure.
And just to make it even more decadent, I made for you a delicious, chocolate chunks cookies, a simple cookie with some dark chocolate squares that make this combination jus perfect.
I did not made the ice cream but is just to show you that you can combine this delicious cookies with any kind of ice cream flavor; my favorite has always been vanilla and is the one I made very often.
I want to here what you think of my cookies, and with what flavor of ice cream you would like to combine them.

INGREDIENTS

  • 1 cup sugar
  • 1 stick butter
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chunks
  • pinch of salt
  • Your favorte ice cream

DIRECTIONS

Preheat the oven to 325 degrees.

Cream sugar ans butter for 5 minutes, add the egg and vanilla extract and mix for 2 minutes on medium low speed.

Mix in a bowl flour, salt and baking powder and add to the above mixture, mix in by hand the dark chocolate chunks.
Prepare the baking sheet, I use this super cute waffle cookie sheet, I found it on sale and you know it was hard to resist the temptation.

Place 2 tablespoons of the mixture and bake for 15 minutes. Place the cookies in a rack to cool completely before making the sandwich.

This recipe makes 12 cookies.

Me, I make for you this easy easy strawberry ice cream, and you don’t need a special utensil no no no, you will see how easy it is and o man so delicious is like eating a cloud, soft, sweet and incredibly light.
And because of this you have to try it no you need to try it and sure you will love it.

INGREDIENTS

  • 1 12 oz can evaporated milk
  • 2 pounds Strawberries
  • 1 1/2 cup sugar
  • Juice of 2 limes
  • 2 egg whites

DIRECTIONS

  1. Freeze the can of evaporated milk over night.
  2. Let a room temperature for an hour before using.
  3. Place strawberries with 1 cup of the sugar and the lime juice in a pot at medium heat and let it simmer for 10 minutes let it cool completely,. reserve a cup of this to pour on the ice cream.
  4. In a mixer with a whisk attachment add the evaporated milk and whisk until it triple in volume.
  5. Beat the egg whites with 1/2 cup of sugar until stiff peaks.
  6. Incorporate all preparations just be very careful, place on a container, freeze for at least 8 hours and enjoy.

Yield 16 portions or 1 day depend maybe just an hour.

CHOCOLATE-CARAMEL ICE CREAM easy 5 ingredients #SundaySupper

Ok I bet right now you may be wondering why I did an ice cream recipe if already started the fall. Well to start let you know that this recipe is a creation of which I am very proud and around here we still have a very hot weather.
To spare the hassle of waiting for hours for the ice cream to be ready, it seemed important to create a recipe practical, easy, and with few ingredients, this week’s #SundaySupper family wants to give easy and delicious recipes with only 5 ingredients.
So come and enjoy the delicious recipes we have prepared for you, easy, delicious and as I mentioned before very easy.

INGREDIENTS

  • 100 grams of semi sweet chocolate cut into chunks
  • 30 Caramels
  • 2 tablespoons heavy cream
  • 1 cup nut topping
  • 1.5 qt of vanilla ice cream

DIRECTIONS

In a small saucepan, place caramels and whipping cream over low heat, stirring constantly until melted.

In a blender, place the frozen medium speed and gradually add the melted caramels, chocolate and topping.
Stir for 3 minutes.

Place in a container and freeze for 8 hours.

Serve and enjoy.

LOW FAT STRAWBERRY ICE CREAM

If you like strawberry ice cream you will love this version.
Low in fat and sugar delicious for those hot afternoons, and you can enjoy with your family.
It is also an option for people who are lactose intolerant.
I am looking for healthier options with lots of flavor, that allow me to enjoy with my family on summer afternoons.
With this same recipe you can create different flavors, using seasonal fruits.
Simple to make and you don’t need of an ice cream maker for this recipe, a 4 ingredients ice cream sounds good to me.
This is a different way to enjoy ice cream, something delicious without feeling guilty when you eat, the best is completely homemade and 100% made with fresh fruit.

INGREDIENTS

  • 3 cups strawberries, washed and cut in half
  • 1/4 cup of sugar
  • 3 tablespoons of water
  • 1 can of nonfat evaporated milk of 14.5 oz

DIRECTIONS

The night before freeze the can of evaporated milk and remove from freezer 1 hour before starting the preparation.
In a small saucepan over medium heat place the strawberries, sugar and water, let it cook for five minutes, remove from heat and allow to cool completely.

Place evaporated milk in the mixer and whisk until doubled in volume, add cold strawberries and stir to incorporate well.

Place in a plastic container and freeze for 3 hours.
 
When ready, serve ice cream with fresh fruit and fat-free strawberry syrup.

This recipe makes 12 ice cream cones or 6 cups of ice cream.

Esta es una forma diferente de disfrutar los helados, algo delicioso sin sentirse culpable cuando lo coma, lo mejor es completamente hecho en casa y 100% hecho de frutas frescas.

INGREDIENTES

  • 3 tazas de fresas lavadas, y cortadas por la mitad
  • 1/4 taza de azúcar
  • 3 cucharadas de agua
  • 1 lata de leche evaporada sin grasa de 14.5 onz

PREPARACION

Congele la lata de leche evaporada desde el dia anterior y saque del congelador 1 hora antes de iniciar la preparación.
En una olla pequeña a fuego medio coloque las fresas, agua y azúcar, deje que se cocinen por cinco minutos, retire del fuego y espere a que enfríen completamente.

Coloque la leche evaporada en la batidora y bata hasta que duplique el volumen, agregue las fresas frias y revuelva para que se incorporen bien.

Coloque en un recipiente de plastico y congele por 3 horas.

Cuando este listo disfrute acompañando el helado de frutas frescas y sirope de fresa sin grasa ni azúcar.

De esta recetas salen 12 conos de helados o 6 copas de helados.
