Tamarindo Drink (Agua de Tamarindo) Celebrating Cinco de Mayo #SundaySupper

DSC_0002This week #SundaySupper team is celebrating Cinco de Mayo, and with all the parties going on this weekend, I want to share with you an easy, different and delicious drink.
Tamarindo Drink or Agua de Tamarindo is very traditional in Mexico, Asia and Central America, and an excellent option if you want to make a non-alcoholic beverages to keep the party going on.
Is sweet and tangy, good for your kidneys and refreshing in the summer.
I really want you to try and enjoy this different and super delicious drink.

INGREDIENTS

  • 3 onzas of tamarindo paste
  • 1/2 cup of hot water
  • Agave Nectar or sugar
  • Water or Club Soda
  • Ice

DIRECTIONS

Ad the water and tamarindo paste to a bowl and let it rest for about 10 minutes.
Strain the liquid, ad water or club soda, agave nectar to taste, ice mix well and enjoy.

Preparation time: 10 minutes
Cooking time: 10 minutes
Level of the recipe: Easy

Black Beans and Cheese Empanadas #SundaySupper

DSC_0020Ok so this week is all about new adventures, and the #SundaySupper team is committed to this task, many of my friends made amazing recipes this week, some of those I never try before, me a went all the way home with this recipe.
Empanadas Arregladas, that’s how we call them in Costa Rica and for many years I’ve been trying to replicate the same exact recipe with no success.
But now I have to say the am so proud because this is it, I pull it off, I did it, I manage to make and produce the same exact recipe, and you can’t image how happy I’m.
So if you feel blue make some empanadas, you are going to smile the rest of the week.
Hope you enjoy.

INGREDIENTS

  • For the Empanadas:
  • 2 cups of Masa Harina
  • 1 1/4 cup of hot water
  • 1 teaspoon of Achiote powder
  • 1 cup of cook Black Beans
  • 1 cup of Queso Fresco
  • Salt and Pepper to taste
  • 3 cups of vegetable oil
  • For the Salad:
  • 1 Tomato chopped
  • 1/2 cabbage chopped
  • juice of 1/2 lemon salt and pepper

DIRECTIONS

  1. Heat the oil to medium low.
  2. Add the teaspoon of achiote powder to 1 cup of hot water.
  3. Prepare the masa, make a hole in the center of the masa harina, add salt and pepper and the water with the achiote, a little at the time.
  4. Once the masa is ready, make balls and put a ball in the middle of two parchment papers and press hard with any dish the you have.
  5.  Now you have a tortilla, fill one size with beans and cheese, about 1/2 teaspoon.
  6. When you have all the empanadas ready, you can start frying, be careful when you do this step. Cook each empanada for 3 minutes on each side.
  7. Once ready let it rest on some paper towel to absorb the oil.

Prepare the salad.

Cut the cabbage in strips add a pinch of salt, cut the tomato add to the cabbage with the lemon juice more salt and pepper.

To serve: Cut one empanada in the center, add some salad and enjoy.

This recipe makes 8 empanadas but you can double the recipe.

This week the #SundaySupper team is helping you with ideas for all the upcoming parties, showers or any excuse you have to trow a good party.
So this week I have for you this delicious Focaccia, you’ll think is difficult to make and take to long, but in my book of good appetizers this one is a go to.
So now let me tell you Focaccia is not pizza and you can make with any flavor you want or even plain, is delicious and easy to make, I’m sure your guest are going to love it.
I put together this flavor for you thinking in all the different palates your guest may have.

INGREDIENTS

  • 2 1/3 cup of flour
  • 1 can 4 oz of slice mushroom drained and diced
  • 1 cup of grated parmesan cheese plus 2 tablespoons
  • 1 teaspoon dried oregano
  • 1/2 teaspoon of salt
  • 2 tablespoon olive oil plus 1 teaspoon
  • 1 teaspoon of honey
  • 3/4 of lukewarm water
  • 1 1/2 teaspoon of active dry yeast

DIRECTIONS

Preheat the oven to 400 degrees F.

In a bowl of a standing mixer fitted with a hook attachment, stir water, yeast and honey and let stand 5 minutes or until foamy.
Stir in the flour, salt, oil, diced mushrooms, dried oregano and parmesan cheese, knead the dough for 3 minutes.
Transfer dough to a lightly oiled bowl, I use cooking spray, and coat completely. let rise for 45 minutes, remember to covered with plastic wrap and place in a warm area in your kitchen.
Transfer the doug to a baking sheet greased, pressing it out to fit the size of the pan, brush with the remaining teaspoon of oil and sprinkle the rest of the parmesan cheese.

Baked for 20 minutes. Remember you need to preheat your oven between 15 to 20 minutes before baking.

You can cut the focaccia in medium squares and serve with your favorite dip, salsa or salad.

Preparation time: 1 hour includes rising time

Drunken Rice Pudding

DSC_0016-m2I love making desserts that satisfy me after a light dinner and no doubt that rice pudding is one of them.
This is definitely one of my favorites and is on my list of foods that children can eat without feeling guilty because it is a full meal.
I grew up watching my grandmother make rice pudding for years and believe it or not still can not get the exact recipe, I think the secret to their successful rice pudding she never gave it to me, but oh well this was very close and as I love to improvise I add an unexpected ingredient, liqueur, to be more specific Rum, makes it taste very delicious and different without feeling that we are consuming large amount of liquor.
I hope you like it and prepare it soon, I assure you will become one of your favorites.

INGREDIENTS

  • 3 cups water
  • 11/2 cup uncooked rice
  • 5 cloves
  • 1 large cinnamon stick
  • zest of 1 lemon
  • 21/2 cup milk
  • 1 can evaporated milk 14 ounces
  • 1 14-ounce can sweetened condensed milk
  • 1/4 cup of rum
  • 1/4 cup raisins
  • 1/4 cup cramberries
  • 1 teaspoon vanilla extract
  • 1 teaspoon unsalted butter
  • 1/8 teaspoon salt

DIRECTIONS

In a heavy-bottomed saucepan place the water, cinnamon, cloves, lemon zest and rice, simmer for 15 minutes over low heat or until rice is fully cooked.
Add milk and remaining ingredients except butter, stir well cook for 20 minutes over low heat, stirring constantly.
Once the mixture is a little thick turn off the heat and add the butter, cover tightly.
You can substitute the Rum for coffee liqueur, Amaretto liqueur or Chocolate liqueur.

It can serve at room temperature or place in the refrigerator for 2 hours before serving.

This recipe makes about 5 cups of rice pudding.

Cooking time: 30 minutes

Hearts of Palm Mix Rice #SundaySupper

DSC_0002If I learned anything since I was little, is that on occasion the food budget was cut and the meat was not an option, so as good Costa Rican girl I ate what my grandmother prepared.
One of the favorite dishes at home was the Arroz con Palmito (Hearts Of Palm Mix Rice) is very inexpensive and easy to make, the big advantage is that you can use leftover rice from the previous day and believe me in my house rice was one of the things that always leftovers.
So this week we bring you delicious recipes that will help keep the budget in line and not have to break the piggy to prepare delicious meals for your loved ones.
So stay with us this week and inspirece with these recipes that will help you in your everyday life.

INGREDIENTS

  • 1 can 14 ounces of Hearts of Palm cut in pieces.
  • 4 cups cooked rice from the previous day
  • 2 cups mozzarella cheese
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 1/2 cup fat-free half and half
  • 1/2 cup chopped cilantro
  • 1 cucharada de mantequilla
  • Salt and pepper to taste

DIRECTIONS

Preheat oven to 400 degrees F.

In a hot pan melt butter add onion and garlic cook for 3 minutes or until onion is very soft.
Add the hearts of palm, stir well, add the half and half and rice stir well, season with salt and pepper.
Finally add the cilantro and turn off the heat.

In a greased baking dish place a layer of cheese on the bottom and half the rice, place another layer of cheese and the rest of the rice and sprinkle the remaining cheese on top.

Bake for 15 minutes.

Makes 6 servings.

Lemon Cookies for a Citrus #SundaySupper

DSC_0007-mWith the arrival of spring, we also see how our kitchen begins to fill with colors, yellow, green, orange, are some of the colors that are in this moment in my kitchen because I love to fill my bowl with oranges, limes and lemons.
And this week we want to inspire you with recipes full of citrus, so you also begin to fill your kitchen with these colors.
The #SundaySupper team has prepared a variety of dishes inspired by these flavors, delicious recipes to prepare this summer.
Stay with us and delight yourself with the wonderful aroma of citrus to awaken all your senses.

INGREDIENTS

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 stick of room temperature butter
  • 8 ounces cream cheese at room temperature
  • 1 cup sugar
  • The zest of one lemon
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped walnuts

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl sift flour, baking powder and salt.

Beat sugar, cream cheese and butter for 5 minutes or until the mixture is smooth.
Add the lemon zest and grated ginger with vanilla extract, add the flour gradually and finally incorporate the nuts.

Using an ice cream scoop, place the mixture in portions in previously greased trays.
Bake for 20 minutes or until cookies are lightly browned.
Once baked, place the cookies on a wire rack to cool completely.

This recipe makes 32 cookies.

This type of cookies have a cake-like texture, so you must be very careful with the baking time.

Cooking time: 20 minutes

Scallops in Bacon Sauce for #WeekdaySupper

DSC_0001What to do for dinner? That’s the question I get constantly.
Luckily we now have delicious recipes within this category which is ingenious #WeekdaySupper.
Isabel Foodie creator of the large movement that is the #SundaySupper now gives us the idea of reuniting the family during the week, and we have also delicious ideas, easy for you on weekdays.
Today I have prepared this delicious, easy and super special recipe, a favorite of my husband, and especially because it can be prepared for a weekday or for a special occasion.
It is the perfect combination, scallops and bacon definitely heaven on a plate.
So join us and enjoy this delicious recipe.

Sunday Supper Movement

INGREDIENTS

  • 1 pound  of scallops
  • 3 slices bacon
  • 3 tomatoes, peeled and seeded
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons ketchup
  • Salt and pepper
  • 1 tablespoon olive oil

DIRECTIONS

Heat a pan and place the slices of bacon, cooked until crisp.
Remove the bacon from the pan and add the tomato, onion and garlic, cook for 5 minutes. Add the ketchup, water, salt, pepper, stir and simmer for 3 minutes more.
Season with salt and pepper the scallops, add the olive oil to a hot skillet and cook the scallops 3 minutes on each side.

To serve, place 3 or 5 scallops on the plate, pour over 2 tablespoons of the sauce and sprinkle bacon bits on top.

It’s the best way to end the night.

Strawberry Bundt Cake #Easter/Passover #SundaySupper

DSC_0007It is definitely a time to start making delicious recipes with fresh produce found in the market.
And so this Sunday the #SundaySupper team want to give you the most delicious recipes to celebrate the Passover or Easter.
No matter what the occasion you’re celebrating, holidays are the perfect excuses to invite friends and family to have a good time around the family table.
Join us this Sunday and try some of the recipes that we have for you, traditional and new options to come together in these celebrations.

INGREDIENTS

  • 8 ounces cream cheese at room temperature
  • 1 stick butter at room temperature
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cup sugar
  • 1/2 cup half and half
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 3/4 cup strawberry preservers
  • Pinch of salt

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl sift together the flour, baking powder, baking soda and salt.

Cream the butter with the cream cheese and sugar for 5 minutes. Add eggs one at a time and the vanilla extract, alternate the half and half with the dry ingredients, finally fold the strawberry preservers in to the batter.

Place in greased and floured pan, bake for an hour.
Remove from oven let cool in pan for 15 minutes, remove from pan place the cake on a wire rack and cool completely.

Yield 12 portions.

Cooking time: 1 hour

Crispy Rice Patties #SundaySupper with @SteamyKitchen #giveaway

DSC_0809-riceI am very happy to participate in this event because we have the great honor to have with us Jaden Hair author of Steamy Kitchen’s healthy asian favorites.
It is our pleasure to have her this Sunday and have enjoyed her fabulous recipes.
For me it was quite an adventure, I have tried for many years to make Asian foods with no success but since I opened this book and started reading the recipes I realized that it is very simple and all I needed to do was follow the instructions and buy one that another ingredient, as she gives us a very comprehensive list of what we need to make a success of Asian food.
Today is extra special because we are giving away 20 fabulous books and the steps for you to have one’s seen later, for now I invite you to try one of the recipes we did and I’m sure you will be impressed how easy and delicious it is .
So remember to participate and try these great recipes.

OK, this are a little tricky to make, meaning you must follow the directions. Don’t go off-script! But what a fab way to use up any rice (not leftover rice that has been refrigerated) so that the patties stick together. These patties are crispy, crunchy, and puffy! A dab of soy sauce is brushed on top before the patties go on the skillet.

Jaden Hair in Steamy Kitchen’s healthy asian favorites

INGREDIENTS

1/4 cup cooked rice per patty
cooking oil
Soy sauce

DIRECTIONS

Line a baking sheet with parchment or wax paper. Fill a bowl with cool water.

Dip your hands in the water, shaking off the excess (this prevents the rice from sticking to your hands). Scoop up a small handful of rice (about the size of a golf ball). Shape into a flat patty. Repeat with the remaining rice. You’ll need to dip your hands in the water for each patty. Chill in the refrigerator for at least 1 hour or up to eight hours.

Heat a nonstick skillet on medium heat. When hot, swirl in the oil. Brush both sides of the rice patty with soy sauce. Add as many rice patties as will fit in the skillet. Cook for 3 to 4 minutes per side, or until crispy.
Serve immediately.

RICOTTA CROQUETTES #SundaySupper

DSC_0016I must admit I love cheese in all its forms and this week the #SundaySupper team is pleasing all cheese lovers, because we bring different and delicious recipes with this product so liked by everyone.
We have recipes for all tastes very easy to make.
Cheese is a dairy product that must be present in our daily diet, loaded with calcium and protein, replaced on many occasions 8 ounces of milk, therefore it is very important to be consumed by children and adults.
So delight yourself with this great variety of recipes we have for you and make the cheese an essential food in your kitchen.
Enjoy it.

INGREDIENTS

  • 2 cups of Ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Dijon mustard
  • 1/3 cup chopped green onions
  • Salt and pepper to taste
  • 2 eggs
  • 1/2 cup flour
  • 2 cups of Panko
  • Vegetable oil for frying

DIRECTIONS

In a bowl mix the ricotta cheese, Parmesan cheese, dijon mustard, green onion, salt and pepper.
Place on paper plates flour, beaten egg and Panko, take 3 tablespoons of the ricotta cheese mixture and form a ball, go through the flour, then the egg and finally the panko, place in a separate dish, continue until runs the ricotta mixture.
Place croquettes on a plate and refrigerate for 20 minutes.
Heat oil in a deep pot to 350 degrees, fry the croquettes for 4 minutes, 2 on each side or until well browned, you should watch for the entire cooking time.

Place on paper towels to adsorb oil.
Serve immediately, can be served with lettuce, balsamic vinegar and parmesan cheese.

This recipe makes 10 croquettes.
