Bacon Tortilla

Today, I want to share a delicious recipe inspired by Farmland® Bacon, an easy and delicious “quick bite” to enjoy with your friends, because Farmland® bacon is slow smoked over real hardwoods for maximum flavor.
For me is super important to have a quick recipe in hand to make when we enjoy any kind of game in the morning, you know there a few on the weekends and this delicious Tortilla is the perfect bite for a craving.
The best part the smell of bacon is irresistible, everybody want it to help me make the tortilla, it is so inspiring to see all my family gather in the kitchen laughing and eating almost all my Farmland® bacon.

This Tortilla is inspired by a version of my grandmother, she used to make eggs with lots of bacon, onions and tomatoes, but I change it a little bit, by adding red bell pepper and sour cream to the eggs.
It is pretty delicious and its a complete meal, the smoky flavors of the Farmland® bacon are just want you need in the morning or any time of the day.

INGREDIENTS

  • 8 Hold Eggs
  • 1/4 cup sour cream
  • 1 12 oz package Farmland® bacon
  • 1 onion chopped
  • 1/2 cup red bell pepper
  • Salt and pepper to taste
  • 3 tablespoon parmesan cheese

DIRECTIONS

  1. Heat a pan to medium low heat and cook the bacon, I prefer my bacon on the crispy side, and set aside; in the same pan cook onions and red bell pepper for 3 minutes, in a bowl mix eggs, pepper, salt and sour cream, add the egg mixture to the onions, then add the bacon, already mince and cover the pan lower the heat and le it cook for 10 minutes.
  2. Check the tortilla about 5 minutes trough cooking, add the cheese, cover and let it finish cooking.
  3. You can perfectly place this in the oven, but the method of covering the pan with a lid works perfectly.
  4. Once ready place the tortilla on a plate and serve hot or a room temperature.
  5. This recipe makes 1 tortilla, you can always double the recipe and make more.

Sweet Corn Bread With Bacon

Hello today I’m partnering with Farmland® Bacon and recreated one of the most delicious     corn bread you ever have, sweet, smoky thanks to the flavor the only Farmland® Bacon because Farmland® bacon is slow smoked over real hardwoods for maximum flavor. For decades, Farmland® has taken pride in perfecting their curing and smoking technique–a difference you’ll taste in every delicious bite.

I love how the different flavors combine give this dish the perfect bite and it is of course just what you need when making easy food for game day. A little bit goes a long way and because am using top quality Farmland® bacon it is the perfect compliment to my corn bread.

This corn bread is a classic dessert in my house, and so easy to make, I know I said dessert but if you see the list of ingredients below, you will notice the most of them are sweet, so what a great way to make this a different option to watch a game? Well just by adding the bits of Farmland® Bacon was enough.

My house smell so good while cooking and my family was so eager to eat the I hide most of the Farmland® bacon to make my recipe, it was really funny.

INGREDIENTS

  • 1 can sweet corn
  • 1 can sweetened condensed milk
  • 1 cup pancake mix
  • 3 eggs
  • 1 stick butter, melted
  • 1 teaspoon vanilla extract
  • 1 12 oz package of Farmland® Bacon
  • 3/4 cup shredded unsweetened coconut
  • pinch of salt

DIRECTIONS

  1. Preheat the oven to 350° F,line some paper cups in a muffin tin and put that aside.
  2. Cook the bacon until crispy and drained the Farmland® Bacon in a towel-line plate. In a food processor place the rest of the ingredients minus the bacon, and blend until combine, add the bacon by hand, you want the bits of bacon not to small, this is why we are not putting them in the food processor.
  3. Pour the batter in the muffin tin, about 3/4 of the mixture and bake for 35 minutes.

Serve warm, or cold, perfect to nibble during any game.

This recipe makes 18 muffins.

Our friend Foodie Stuntman is hosting this week a fabulous event, celebrating Labor Day and the unofficial ending of the summer, which is really sad, and we join him with delicious recipes so you can also be inspired by great food, drinks and desserts.
So grab a chair a plate and some napkins because you are here for a feast.

INGREDIENTS

  • 8 slices of turkey bacon chopped
  • 3 cups of cooked white rice
  • 2 garlic cloves mince
  • 2 cooked scramble eggs
  • 1 teaspoon sesame oil
  • 4 tablespoons soy sauce
  • 2 cups frozen peas
  • Salt to taste (if necessary)

DIRECTIONS

Heat a pan to medium high heat, add the oil,  turkey bacon and garlic, cook for 5 minutes, add the rice and soy sauce, mix add the peas and the eggs, stir until well combined. Taste the rice before serving to check the salt.
Serve immediately, is better hot with a side of cucumbers or a salad.

Serve 4 people.

Scallops in Bacon Sauce for #WeekdaySupper

Luckily we now have delicious recipes within this category which is ingenious #WeekdaySupper.
Isabel Foodie creator of the large movement that is the #SundaySupper now gives us the idea of reuniting the family during the week, and we have also delicious ideas, easy for you on weekdays.
Today I have prepared this delicious, easy and super special recipe, a favorite of my husband, and especially because it can be prepared for a weekday or for a special occasion.
It is the perfect combination, scallops and bacon definitely heaven on a plate.
So join us and enjoy this delicious recipe.

Sunday Supper Movement

INGREDIENTS

  • 1 pound  of scallops
  • 3 slices bacon
  • 3 tomatoes, peeled and seeded
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons ketchup
  • Salt and pepper
  • 1 tablespoon olive oil

DIRECTIONS

Heat a pan and place the slices of bacon, cooked until crisp.
Remove the bacon from the pan and add the tomato, onion and garlic, cook for 5 minutes. Add the ketchup, water, salt, pepper, stir and simmer for 3 minutes more.
Season with salt and pepper the scallops, add the olive oil to a hot skillet and cook the scallops 3 minutes on each side.

To serve, place 3 or 5 scallops on the plate, pour over 2 tablespoons of the sauce and sprinkle bacon bits on top.

It’s the best way to end the night.

POTATOES WITH BACON

By joining two of the most popular ingredients that can be found in any country, I invite you to try this side dish.
It is truly a winning combination.

INGREDIENTS

2 pounds of small potatoes, cut in half
1 package of 12 ounces of bacon
4 whole garlic cloves
1 / 2 cup chopped cilantro
1 / 4 cup of water
salt and pepper to taste

DIRECTIONS

In a pan over medium heat add the chopped bacon, leave for 5 minutes and add the garlic and potatoes, let cook for 5 minutes more.
Add salt and pepper and keep in mind that bacon contains salt and we do not want the meal very salty. Add water reduce heat and simmer for 15 minutes or until potatoes are soft in the center and the bacon crispy.
The ideal is that the potatoes are impregnated with the flavor of the bacon.

Sprinkle cilantro and serve.

This is an excellent side for meats.

Serves 6 people.
