Cook onions and bell peppers with olive oil over medium-low heat until soft, add shrimp, season with salt and pepper and mix, cook for 5 minutes.

I made my picadillo with ground turkey but you can also use turkey sausage, is equally delicious.
Heat a pot over medium heat, add onions and bell pepper, cook for 3 minutes, then add the ground turkey and cook for about 5 minutes, moving constantly.
Add the rest of the ingredients, mix until well combine, cover the pot and cook for 20 minutes over low heat. This slow cooking process is very important for the potatoes and turkey to absorb all the delicious flavors. Remember to check the salt before serving and you can always serve with a side of salad

Rice with Creamy Chicken Sauce, the perfect dish this holiday season.
Add some oil to a heavy bottom pot, over medium-low heat, and add the rice, cook for 3 minutes, add 3 cups of the broth, when starting to simmer lower the heat, cover and cook for 20 minutes.
Preheat the oven to 350 degrees.
In a diferent pot, add oil, butter onion and garlic and cook for 3 minutes, add the chicken stir, at this time you can add, mushroom, salt, pepper, the chipotle peppers, milk, a cup of the broth, heavy cream and cilanro, let it simmer for about 10 minutes.
Cover a baking dish with butter, and once the rice is ready, place have of the rice at the bottom of the dish, the creamy chicken, cheese, the other half of the rice, and more cheese.
Cover with foil and bake.
You will love this amazing dish.

Esta tilapia al horno tiene su historia, como un buen vino, asi que compartire solamente un pedacito de ella; Desde hace mucho a mi madre le encanta el pescado, siempre lo compramos fresco ya que en Costa Rica es muy popular y se utiliza en muchas recetas uno de sus favoritos ha sido la tilapia, pero se canso de comerla frita o empanizada, asi que un dia nos mensiono que iba a tratar de hacerla al horno, entre mi hermana y yo ayudamos a formar el plato, pero la anecdota mas divertida fue que las papas en el fondo nos quedaron crudas, apesar del sabor delicioso de la tilapia las papas por otra parte eran imposibles de comer.
Con forme pasó el tiempo fui perfeccionando la receta y tratando de incorporar diferentes ingredientes, pero esta es la que mas ha gustado. Y ustedes estaran deacuerdo conmigo que todo buen platillo necesita un vino de calidad que lo acompañe, asi que en mi opinion el Pinot Grigio de Sutter Home es excelente para acompañar este plato.

Yuca or Casava is very popular in my native country, we make lots of different meals and sweets with it and this fritters are one of the most popular. We absolutely love them and they are very simple to make, the best part of this dish is that you can make tons of the fritters with 2 pounds.
Perfect for picnics or parties, and even just because you want to chance your dinner that day. This is my inspiration for todays #SundaySupper; I want it to share with you a different finger food, a vegetarian option and of course a delicious dish.
We enjoy the fritters with a pink or a tomato sauce, my personal favorite is this tomato sauce the am also sharing the recipe with you, it make the meal complete and give it an extra flavor.
You can also make a simple green salad, they are perfect with it or stuffed some lettuce and make a very creative hamburger.. Yum! I love how one dish change can completely if we just add different sides.

For the Yuca:
Place the yuca in enough water and let it cook until soft. Once ready remove the fiber that has in the center. Place in a stand mixer, and mix to cool a little. Add the egg yolks, cheese and butter and mix to combine.
While the Yuca is cooking, make the sauce. In a pot heat to medium low heat, add oil, onion, garlic and tomatoes, cook until tomato is soft, add the tomato sauce, salt, pepper, cilantro and ketchup, cover and cook for 5 minutes.
Heat up enough oil to fry the fritters. Know Grab about 2 tablespoons of the yuca dough, make a tortilla shape and add a teaspoon of the cheese close and cover with egg white and immediately in breadcrumbs, place in a plate and make the rest. Fry for 3 minutes or until golden brown.
Serve warm with some sauce on top.

Si ustedes se han preguntado de qué forma celebramos los Hispanos la cuaresma todos les contestaremos que es diferente en cada familia. En mi caso personal, recuerdo que desde pequeña nos enseñaron a respetar este tiempo, ya que el mismo es sagrado y no debemos por nada ofender las costumbres que heredamos.
Además no pueden faltar las noches en familia compartiendo las más deliciosas comidas, las cuales están hechas a base de vegetales o mariscos. Esto se debe, no sé si ustedes saben, a que en este tiempo de meditación y convivencia familiar se acostumbra a no consumir ningún tipo de carne. Recuerdo como mi abuela paterna nos preparaba deliciosos platillos sin carne; para nosotros como niños era impresionante saber que algo tan simple era increíblemente delicioso.
También recuerdo que entre las cosas que hacía mi abuela con mi tía, me encantaban las pastas y las empanaditas dulces, ¡qué ricas! Esa era para mí una de las mejores partes de estas celebraciones.
Por supuesto que no podía faltar el plato estrella, el que a todos en la familia les encantaba y por el cual los nietos siempre hacíamos fila con un plato en la mano para no perdernos la oportunidad de comer.
Esta delicia, que mi tía llamaba ‘la pasta con todo’ y mi abuela le decía ‘fideos vegetarianos’, tenía la particularidad de que se preparaba con cualquier cosa que hubiera en la alacena. En esa época, durante la cuaresma y semana santa el comercio no abría, así que mi abuela y mi tía tenían que jugárselas con lo que tuvieran en la casa.
Tan sencilla y humilde como muchos de los platos que se preparan en esta época, pero no deja de ser deliciosa, especialmente porque es hecha con uno de los ingredientes estrellas: CLAMATO. Este coctel de tomate que le da un delicioso y único sabor a esta salsa, sin dejar de lado el valor tradicional que tiene.
Una de las cosas que me encantan es que ahora podemos ir y conseguirlo a cualquier hora y cualquier día, y en uno de mis lugares favoritos para comprar, Walmart, esta es una gran ventaja sobre todo en este época.

Deliciosa pasta vegetariana, ideal para preparar durante el tiempo de cuaresma.
En una olla de fondo grueso, caliente a fuego medio, derrita la mantequilla con el aceite, agregue la cebolla, chile dulce y cocine por 3 minutos, luego agregue el maíz dulce, cilantro, hongos y sal-pimente bien.. En un tazón mezcle el Clamato, salsa de tomate y ketchup, agregue esto a la mezcla de vegetales, baje el fuego y cocine por 15 minutos.

The ingredients are very simple and is super easy to make, you will find the this sandwich can be made with a lot of different ingredients, but today I want to take you to my childhood favorite,
First melt some butter in a skillet. In a bowl mix eggs, salt and pepper and half and half, combine and cook, make a simple omelet.
Spread the beans in each slice of bread and place one slice of cheese in each bread.
Once the omelet is ready cut it in four and place one portion on top of the cheese and then a quarter of the avocado.
Place the other slice of the bread with the cheese on top; spread butter and place on the skillet to toast, don't forget to smear some butter on the other slice of bread and toast it too.
Serve with some chips and salsa or just like that. It is delicious either way.
