Bacon Tortilla

Today, I want to share a delicious recipe inspired by Farmland® Bacon, an easy and delicious “quick bite” to enjoy with your friends, because Farmland® bacon is slow smoked over real hardwoods for maximum flavor.
For me is super important to have a quick recipe in hand to make when we enjoy any kind of game in the morning, you know there a few on the weekends and this delicious Tortilla is the perfect bite for a craving.
The best part the smell of bacon is irresistible, everybody want it to help me make the tortilla, it is so inspiring to see all my family gather in the kitchen laughing and eating almost all my Farmland® bacon.

This Tortilla is inspired by a version of my grandmother, she used to make eggs with lots of bacon, onions and tomatoes, but I change it a little bit, by adding red bell pepper and sour cream to the eggs.
It is pretty delicious and its a complete meal, the smoky flavors of the Farmland® bacon are just want you need in the morning or any time of the day.

INGREDIENTS

  • 8 Hold Eggs
  • 1/4 cup sour cream
  • 1 12 oz package Farmland® bacon
  • 1 onion chopped
  • 1/2 cup red bell pepper
  • Salt and pepper to taste
  • 3 tablespoon parmesan cheese

DIRECTIONS

  1. Heat a pan to medium low heat and cook the bacon, I prefer my bacon on the crispy side, and set aside; in the same pan cook onions and red bell pepper for 3 minutes, in a bowl mix eggs, pepper, salt and sour cream, add the egg mixture to the onions, then add the bacon, already mince and cover the pan lower the heat and le it cook for 10 minutes.
  2. Check the tortilla about 5 minutes trough cooking, add the cheese, cover and let it finish cooking.
  3. You can perfectly place this in the oven, but the method of covering the pan with a lid works perfectly.
  4. Once ready place the tortilla on a plate and serve hot or a room temperature.
  5. This recipe makes 1 tortilla, you can always double the recipe and make more.

Tomato and Peppers Frittata #weekdaysupper

tomato and peppers frittataI’m very happy to share this recipe, very simple but full with vitamin C and super healthy.
We are trying more healthy food in my family and I always try to make simple, delicious food, specially for my kids because they are a little picky when it comes to food.
And I make this frittata with egg whites lower calories and fat, a different approach to the classic, different but delicious and I sure your family will enjoy it too.

INGREDIENTS

  • 8 egg whites
  • 3 cups tomato cherry in have
  • 2 cups red bell peppers Julianne
  • 1/2 cup minced onion
  • Salt and pepper to taste
  • 1 teaspoon butter

DIRECTIONS

  1. Cup tomatoes, peppers and onions in a little oil, let it cool then mix with the egg whites add salt and pepper.
  2. In a pan on medium heat melt the butter pout the egg mixture cover with a lit and cook for 8 minutes.
  3. Check the center to make sure the it is completely cook.

Serve immediately.

Yields 8 servings.

Stir-Fry Rice with Turkey Bacon and EggsInspired by all the kinds of bacon that you can find on the market and because on a holiday I want to relax and cook something simple, I create this delicious, easy and super fast recipe, that way you can relax with me this Labor Day.
Our friend Foodie Stuntman is hosting this week a fabulous event, celebrating Labor Day and the unofficial ending of the summer, which is really sad, and we join him with delicious recipes so you can also be inspired by great food, drinks and desserts.
So grab a chair a plate and some napkins because you are here for a feast.

INGREDIENTS

  • 8 slices of turkey bacon chopped
  • 3 cups of cooked white rice
  • 2 garlic cloves mince
  • 2 cooked scramble eggs
  • 1 teaspoon sesame oil
  • 4 tablespoons soy sauce
  • 2 cups frozen peas
  • Salt to taste (if necessary)

DIRECTIONS

Heat a pan to medium high heat, add the oil,  turkey bacon and garlic, cook for 5 minutes, add the rice and soy sauce, mix add the peas and the eggs, stir until well combined. Taste the rice before serving to check the salt.
Serve immediately, is better hot with a side of cucumbers or a salad.

Serve 4 people.

SCRAMBLED EGGS WITH TOMATO AND HAM

This is a recipe that takes me to the times as a child, my grandmother used to make this super easy dish as a snack for after school.
How I miss those days, nothing better than the food that makes grandma.
I have always believed that the best memories are made in the kitchen, so now I try to do this kind of dishes full of nostalgia for my family.
This is a very simple recipe, but delicious and I’m sure will delight your entire family.

INGREDIENTS

  • 8 Whole eggs
  • 1 onion, chopped
  • 200 grams of cooked ham
  • 3 tomatoes, seeded, chopped
  • 1/2 cup of chopped cilantro
  • salt and pepper to taste
  • cooking spray

DIRECTIONS

Spray a hot skillet with cooking spray, add onion and ham cook for 3 minutes, add the tomatoes and cook another 3 minutes, season with salt and pepper.
Add eggs, cilantro and stir well, cook for 5 minutes over low heat.

Serve and enjoy.

Esta es una receta que me transporta a los tiempos de cuando era nina, mi abuelita acostumbraba a hacer este platillo súper sencillo como una merienda para después de la escuela.
Como extraño esos días, nada mejor que la comida que hace la abuela.
Siempre he creído que los mejores recuerdos se hacen en la cocina, y por eso hoy en día trato de hacer este tipo de platillos llenos de nostalgia para mi familia.
Esta es una receta muy sencilla, pero deliciosa y estoy segura que encantara a toda su familia.

INGREDIENTES

  • 8 huevos
  • 1 cebolla picada
  • 200 gramos de jamón cocido
  • 3 tomates sin semillas picados
  • 1/2 taza de culantro picado
  • sal y pimienta al gusto
  • spray de cocina

PREPARACION

Rocie una sartén caliente con spray de cocina, agregue la cebolla y el jamón cocine por 3 minutos, agregue el tomate y cocine otros 3 minutos, sazone con sal y pimienta.
Agregue los huevos, el culantro y revuelva bien.
Cocine por 5 minutos a fuego bajo.

Sirva y disfrute.

Rinde para 4 personas.

SCRAMBLE EGGS WITH SAUSAGE AND FRESH HERBS — #SundaySupper

Back to school this week and of course we have all the great ideas and recipes that Katie Workman’s cookbook The 100 mom gives us especially for this crazy mornings.
It is very important to give a balanced diet to our children, especially when they spend hours studying every day.
Each of the recipes that the #SundaySupper family prepare for you is full with delicious and nutritious experience for your children, easy to prepare and even great for a snack.
We share with you one more week and the last in which will have the pleasure to have Katie Workman.
Fill yourself with inspiration, you will be very satisfied with all the delicious ideas that we are prepared for this occasion.

INGREDIENTS

  • 6 eggs
  • 3 tablespoons of half and half
  • 3 green onions, minced
  • 1 cup of fully cooked turkey sausage crumbles
  • 1 teaspoon of unsalted butter
  • 1/2 cup of combine basil and parsley minced
  • Cooking spray
  • Salt and pepper to taste

DIRECTIONS

Heat a skillet spray with cooking spray and then add the butter, cook the green onions for 2 minutes and then add the cup of turkey sausage stir.
In a separate bowl whisk the eggs with the half and half. 

Add eggs to the above mixture along with fresh herbs, add salt and pepper, cook for 5 minutes. 

Remove from heat and serve immediately, accompanied by toast and orange juice.

Makes 3 servings.

ROULADE OF DULCE DE LECHE

This is a delicious dessert for any occasion.

It is very easy to do and you can vary the filling, you can make this simple and delicious dessert something spectacular.
Does not require much preparation time so it becomes the ideal dessert.
I invite you to try it with different fillings.
Enjoy it.

INGREDIENTS

5 eggs
5 tablespoons of flour
5 tablespoons of sugar
1 teaspoon vanilla
1/2 teaspoon almond extract.

DIRECTIONS

1. Place eggs in blender with sugar, beat until doubled in size and are run clear.

2. Once ready add the vanilla and almond extract. Add flour by spoonfuls by enveloping movement.

3. Grease a tray and line with parchment paper, place the mixture
.
4. Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes until golden brown.

5. Use a clean tea cloth, sprinkle with a little water and sprinkle with sugar, once ready the cake, place on the cloth and roll into shape.

6. When completely cool fill with dulce de leche or filling of your choice, cut the ends to make this even.

7. Serves 6 people.
