Spice Pumpkin Bread #TwelveLoaves

spice pumpkin bread 1And the season has started, all the pumpkin, decorations, turkey and the fabulous smells from the kitchen, yes, this is the season to be creative and cook delicious recipes everyday.
This is the reason why the #TwelveLoaves group have made just for you pumpkin inspired recipes.
For every hour of the day, so you can make and enjoy with the family.
I made for you a spice pumpkin bread, filled with spiced, pumpkin and I add a crunch with some pecans, it is great for breakfast, because is not super sweet and healthy made with organic sugar, flour, butter and eggs.
Yes you can actually enjoy healthy delicious food at home.

INGREDIENTS

  • 2 sticks butter at room temperature
  • 1 1/2 cups sugar
  • 1 cup buttermilk
  • 3 eggs
  • 2 cups flour
  • 1 teaspoon grown cinnamon
  • 1 teaspoon grown ginger
  • 1 teaspoon grown clove
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 15 ounces can Pumpkin puree
  • 1 1/2 cup chopped pecans

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Sift together flour, cinnamon, ginger, clove, salt and baking powder, set aside.
  3. In the bowl of a stand mixer, cream sugar and butter for 5 minutes, add the eggs one by one, add the pumpkin pure, vanilla extract, add the flour in 3 additions and the buttermilk in 2 additions, you know, start with flour and end with flour. Add the pecans at the end by hand.
  4. Pour the batter in 2 loaves pans, previously grease and bake for 45 minutes or until the center of the bread is completely cook.
  5. Once ready, let it cool for 10 minutes and transfer to a cooling rack. Let it cool completely before cutting or eating.
  6. This recipe makes 2 loaves.
Preparation time: 25 minutes
Cooking time: 45 minutes

Pumpkin and Apple Bundt Cake #BundtBakers

pumpkin and apple bundt cakeWelcome to another recipe with the #BundtBakers family, this month ingredients is, well actually are many ingredients we can use this month for our recipe, like apples, pumpkin, pear, squash, anyway, all the autumn harvest.
And you all know the I love baking with this kind of ingredients, they are great in flavor, texture and you can combine them to give a new level to your daily bundt recipe.
I incorporate 2 of my favorites in one, apples and pumpkin, I just fell like I need it to say hello to Fall, and what better way to do it, the with this two ingredients.
Perfectly mix together, and you will have a kind it flan-ish like bundt cake, you’ll see when you make it.

INGREDIENTS

  • 2 apples peel and cut in little pieces
  • 1 cup pumpkin puree
  • 1 teaspoon grown cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup brown sugar
  • 2 teaspoons baking powder
  • 3 cups AP flour
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • pinch of salt
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a saucepan combine apples, pumpkin puree, cinnamon, brown sugar and nutmeg, cook for 3 minutes, one ready place the mixture in the bowl of the electric mixer and beat in low speed for 5 minutes, this help to cold down.
  3. Add buttermilk and oil, speed up a little and add eggs, vanilla extract, in a separate bowl sift flour, salt and baking powder, add to the mixture above and beat for only 3 more minutes, this is enough time for the mixture to get well combine.
  4. Pour into a prepared bundt pan and bake for 1 hour and 20 minutes of until the center of the cake is completely cook.
  5. Allow to cool and invert into a cooling rack.
  6. This recipe makes one bundt cake.
Preparation time: 15 minutes
Cooking time: 1 hour 20 minutes

Pumpkin Pudding #SundaySupper

Pumpkin PuddingWhat a fabulous theme we have this week, we were challenge to make something relate to our favorite movie or song, and of course I pick the want am the #1 fan, my all time favorite anytime of the year, Nightmare Before Christmas.
I just love the movie so much the I have a lot of stuff of the characters, specially Jack Skellington.
So I made in his honor this gluten free, low fat, low sugar, Pumpkin Pudding, a delicious option to for a light dessert after the holiday dinner, cuddle with your favorite blanket and watching this awesome movie.
Enjoy.

INGREDIENTS

  • 2 cups pumpkin puree
  • 1 stick butter melted
  • 1/4 teaspoon salt
  • 1 can evaporated milk
  • 3 eggs
  • 1/3 cup brown sugar + 2 tablespoons
  • 6 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon butter

DIRECTIONS

  1. Preheat the oven to 350° F.
  2. Spray a baking dish with some cooking spray, sprinkle the 2 tablespoons of brown sugar and the tablespoon of butter, then add the rest of the ingredients to a blender and blend until combine.
  3. Pour over the mixture above and bake for 1 hour or until completely firm.
  4. You can serve warm or cold, add apples or pears and even as an individual dessert with some homemade whip cream.

This recipe makes 1 hold pudding.

Cooking time: 1 hour
Level of the recipe: Easy

Pumpkin Sweet Rolls #SundaySupper

pumpkin sweet rollsThis is just the most simple, delicious, low in sugar cinnamon you’ll find, is just perfection in a bite.
And this week our host for #SundaySupper Heather from girlichef, give the challenge to make any recipe with squash, and happened the I have a can of pumpkin puree, I need it to use it ASAP, this theme was perfect for me.
So, I made this amazing rolls, not your typical cinnamon roll, no, this is beyond that.
I personally love this recipe, because, is very low in sugar, so when you eat this rolls is not gonna be over sweet.
And the best part you can eat it with or without a frosting.
I hope you love them as much as I and enjoy at any hour of the day.

INGREDIENTS

FOR THE BASIC DOUGH

  • 3 packages of active yeast
  • 5 cups flour
  • 1/2 cup melted butter
  • 1/2 cup honey
  • 2 eggs
  • 1 3/4 cups warm water
  • 2 teaspoons salt

FOR THE FILLING

  • 3/4 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 2 teaspoon cinnamon

DIRECTIONS

  1. Preheat the oven to 400°F.
  2. In the bowl of a stand mixer, combine the yeast and the warm water, let it rest for 5 minutes, then in low speed add honey, eggs and butter, still in low speed add salt and the flour 1 cup ad the time until the dough pulls away from the sides of the bowl.
  3. Once ready, place the dough in a lightly flour surface, roll out to form a rectangle, then start with the filling, first spread the pumpkin puree and after that sprinkle the cinnamon, brown sugar and the pecans.
  4. Roll in the dough and cut in 1″ pieces, about 30 small pieces or 22 medium pieces, that is up to you. Place in a grease baking dish. Cover with a towel and let it rise for 20 minutes in a warm place.
  5. Before baking spread some melted butter.
  6. Bake for 25 to 28 minutes.
Preparation time: 40 minutes
Cooking time: 30 minutes
Level of the recipe: Easy
