Skinny Chocolate Almond Pudding for #SundaySupper

On this occasion I’ve made ​​a delicious chocolate dessert with almond butter, it is low in calories and fats, the most important thing is that these desserts are to be enjoyed without feeling any guilt.
Is a delicious mixture that you can not miss.

INGREDIENTS

  • 2 cups of fat free half and half
  • 2 tablespoons of cocoa powder
  • 2 tablespoons of cornstarch
  • 1/3 cup of sugar
  • 1 tablespoon of almond butter
  • 2 ounces of good quality German chocolate
  • pinch of salt

DIRECTIONS

In a saucepan place the cocoa, sugar, cornstarch and half and half, stir well to dissolve the cornstarch.
Put the heat and stir constantly until thickened, about 3 minutes, remove from heat and add the almond butter and chocolate German, stir.
Place in a bowl, cover with plastic wrap and refrigerate until completely cool.

To serve:
Place 1/4 of the mixture into glasses or small bowls.
You can substitute peanut butter or any other nut you prefer, remember to always take into account the difference in calories and fat in them.

This recipe makes 5 servings.
220 calories per serving.

APPLE AND CHEESE POCKETS

DSC_0845Delicious puff pastry pillows stuffed with apple and cream cheese, special for an afternoon coffee with friends.
A different option to share, even if you want you can drizzle with chocolate and it will be even better.
This option is ideal for parties as a sweet snack and you can give them the size you want.
I invite you to try this different and delicious option.

INGREDIENTS

  • 2 apples, peeled and finely chopped
  • 1/2 cup cream cheese at room temperature
  • 1/4 cup plus 2 tablespoons brown sugar
  • The juice of half a lime
  • 1/4 teaspoon powdered ginger
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon butter
  • 1 egg
  • 1 teaspoon water
  • 4 sheets of puff pastry

DIRECTIONS

Preheat oven to 350 degrees F.

In a hot skillet melt butter, add brown sugar,lime juice and apples, stir and cook for 5 minutes, add the ginger and cinnamon, stir well and remove from heat.
Place mixture in a bowl, add cream cheese and stir well, allow to cool.

Meanwhile stretch sheets of puff pastry, cut into 9 equal pieces.
In a bowl stir together the egg with the water.

Once the mixture is cold, place a teaspoon in one piece of puff pastry, place another on top, pinch the edges with a fork, make a well in the center, brush with egg mixture and sprinkle with a little brown sugar.

Place on a tray lined with parchment paper, and bake for 25 minutes.

This recipe makes 36 pockets.

CHOCOLATE ROLL FILLED WITH NUTELLA CREAM a Valentine’s #SundaySupper

DSC_0811-4What a beautiful season full of love and friendship while, so this week we are celebrating Valentine’s Day.
So the family of #SundaySupper want to invite you this valentines day and be inspired by recipes we have prepared with lots of love.
Delicious recipes that will delight even more in this day, let yourself go and make for your loved one something special and different.
The recipe that I prepared for you is precisely that very different and special chocolate roll with nutella cream, no one expects a nutella cream, the best of this cream is that it is also ideal for a sandwich, think of peanut butter, but with nutella, I think I’ll do one as I write, it is hard to avoid the temptation.
Well after that delicious dessert, again I invite you to join us this week, you might find the perfect choice for a night of love and of course friendship.

INGREDIENTS

For the Chocolate Roll:

  • 7 egg whites
  • 2/3 cup sugar
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon vanilla
  • 2 tablespoons pure cocoa
  • 2 tablespoons cold butter, melted

For the Nutella Cream:

  • 1 can evaporated milk
  • 1 can condensed milk
  • 2 tablespoons cornstarch
  • 1/2 cup Nutella

DIRECTIONS

Preheat oven to 350 degrees F.

Line a tray with wax paper grease and flour the waxed paper.

To make the roll:
Place the egg whites in a stand mixer with a whisk attachment on medium speed, add the salt, cream of tartar and sugar gradually, beat until whites are doubled in size, remember that we are not making meringue, add butter and vanilla in a bowl sift flour and cocoa, remove the bowl from the mixer and add the flour and cocoa into the egg whites in 3 additions making smooth moves in a circle so that the whites do not lose volume.
Place the mixture in the tray and bake for 20 minutes.
Separately prepare a large piece of waxed paper sprinkled with powdered sugar, once the roll is ready let cool for 5 minutes, place on waxed paper and roll to shape it, let it cool completely.

For Nutella cream:
In a pot, place all ingredients, stir well, then bring to heat, stirring constantly until thickens, remove from heat, place in a bowl and let cool completely.

Once the two preparations are cool, unroll the roll and fill with the Nutella cream roll again, cut the edges of the roll and place more nutella cream on top, garnish with whipped cream and strawberries.

This recipe makes 14 servings.

REFRIED BLACK BEANS WITH PITA CHIPS Super Bowl #SundaySupper

To make your life less complicated and enjoy the party, we prepare delicious recipes to share with all of you this Sunday.
The large family of # SundaySupper, we have great recipes dedicated to deliver in the same way we do every Sunday.
I prepare these delicious beans that are a tradition in my family to see in the finals of any sport.
Very easy to make, the best part is that they can service at room temperature without any problem.
Served with pita chips, this will be a different dish that everyone will love this great party.
A delightful addition to chicken wings and very healthy too.
I hope you enjoy this rich and different appetizer.

INGREDIENTS

  • 4 cans of refried beans 14 oz
  • 1 large onion, finely chopped
  • 2 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup plus 2 teaspoons of chopped cilantro
  • 4 tablespoons Worcestershire sauce
  • Salt and pepper to taste

DIRECTIONS

In a hot pan melt butter and add onion, cook for 3 minutes, add the beans, worcestershire sauce, stir and let heat until it starts to boil slightly.
Finally add salt, pepper and 1/2 cup of cilantro, stir and serve.
Place in a bowl, sprinkle with Parmesan cheese and 2 tablespoons of cilantro, serve with the pita chips of your choice.

CREAM CHEESE AND DULCE DE LECHE BUNDT CAKE

Dulce de leche and cream cheese give this recipe a different option to add to your list of favorite recipes.
Delight yourself with this delicious recipe, and most important is that you also make it.

INGREDIENTS

  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon of baking powder
  • 2 1/4 cup of flour
  • 1 1/4 cup of sugar
  • 1/4 teaspoon ground nutmeg
  • 2 packages of 8 ounces cream cheese
  • 1/2 cup of Dulce de Leche
  • 3/4 cup of vegetable oil
  • pinch of salt

DIRECTIONS

Preheat oven to 350 degrees F.

Beat cream cheese with sugar until the sugar dissolves, 5 minutes, add the eggs one by one, vanilla and dulce de leche beat for 5 minutes.

In a bowl stir together the flour, baking powder, salt and nutmeg, add to the mixture alternating with the oil, beat for 5 more minutes.

Place in a bundt cake mold, greased and floured and bake for 55 minutes or until a toothpick inserted comes out clean.

This recipe makes 10 pieces of cake.

A HAPPY CELEBRATION

Last Monday we celebrated the birthday of our baby, for us is still a baby and already has 4 years.
It was a very intimate celebration and she asked me to make the cake with pink frosting and flowers.
Children grow so fast that we have to enjoy every moment beside them.
And to my precious baby I can not wait to see you grow even more.

PESTO CHICKEN SANDWICH

DSC_0811Definitely lunchtime we are always looking different sandwich options, get away from the routine of ham and turkey.
This sandwich gives us just that, a different option for us to enjoy a new flavor.
Pesto and chicken in a toasted bun, without the need to use special utensils, this sandwich is delicious and you will be able to use this same fill in pitas, tacos, burritos, etc..
I hope you like this new option for the entire family.

INGREDIENTS

  • 6 mini baguettes
  • 2 chicken breasts cooked (roasted chicken preferably the day before)
  • 1/4 cup of pesto
  • 6 slices of Swiss cheese
  • 8 tablespoons of unsalted butter

DIRECTIONS

Cut in half each mini baguette, and spread each half with butter.
In a hot pan place the halves of bread and let brown, be careful not to burn the bread.

Remove from the pan and place a slice of cheese and chicken pieces in a half of bread and 2 teaspoons of pesto on the other half.
Assemble the two halves in the same pan add a teaspoon of butter and place the sandwich to brown the outside.

Serve immediately.

This recipe makes 6 sandwich.

BREAD PUDDING WITH PECANS a Retro #SundaySupper

DSC_0804This week has been incredibly fun with the #SundaySupper family, we have been creating retro recipes, those recipes that immediately transport us to our childhood.
Those recipes that our mothers and grandmothers cooked over and over, it brings back many memories for me personally, the worst was when my grandmother stopped cooking my favorite foods as a child.
The good news is that many of them are on the list of recipes this week and I can make them again and enjoy.
One dessert that I loved was the bread pudding, my grandmother baked it once a week because usually we had day-old bread.
My recipe is very similar to my grandmother, I made just a few changes because I think that she cooked is delicious.
So I hope you enjoy it and try it.

INGREDIENTS 

  • 4 cups milk
  • 1 can of condensed milk
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 24 sweet rolls
  • 1/2 cup of sugar
  • 1 cup of chopped pecans
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup of raisins

DIRECTIONS

  1. Preheat oven at 350 F.
  2. Cut sweet rolls into pieces placed in a tray and bake for 10 minutes, remove from oven and cool completely.
  3. In a bowl stir together milk, eggs, sugar, condensed milk, nutmeg and cinnamon, mix until everything is well incorporated.
  4. Add the bread to the mixture and let stand for 5 minutes, add the raisins, pecans and stir.
  5. Pour into a pan and bake for 1 hour and 10 minutes.

Makes 36 individual portions can be served warm or at room temperature.

RICE WITH SHRIMP

DSC_0814I enjoy making easy recipes, to help us prepare a delicious meal that does not require a lot of time when doing them.Exclusively for you at home who need quick recipes I made this delicious rice with shrimp that is full of flavor, it is very easy to make and is ideal to serve on special occasions like birthday parties.
Made with ingredients you usually have in the house, and very economical.
I invite you to prepare the rice and give me your opinion.

INGREDIENTS

11/2 cup uncooked parboiled rice
1 cup chopped onion
2 cloves garlic, minced
1 pound medium shrimp, clean and deveined
1/2 cup chopped green onions
1/2 cup finely chopped cilantro
3 cups water
1 teaspoon Old Bay season
1 teaspoon paprika
1 small bag of frozen mix peas and carrots
salt and pepper to taste

DIRECTIONS

In a saucepan heat 1 teaspoon of oil, add onion and garlic, sprinkle with a little salt and cook for 3 minutes, add the rice, paprika and old bay season, stir well.
Add mixed vegetables, green onions and shrimp, stir well. Season with salt and pepper, add the water, stir and cover the pan, lower the heat and let it cook for 20 minutes.
After 20 minutes turn off the heat and let the rice stand for 10 minutes.
Add the cilantro before serving.

This recipe makes 8 servings.

CHOCOLATE CHIP CUT-OUT COOKIES Celebrating a One Year Anniversary of #SundaySupper

This is definitely a very special week for the family of #SundaSupper, as it is celebrating one year of sharing dinner around the family table.
For me personally it is an honor to be part of such a wonderful family and share the love of food that we all have.
To celebrate this event we chose recipes from different contributors that have this family, and believe me it was very difficult to choose among so many delicious and different cuisines.
After reviewing I chose a recipe that is not only easy to make and at the same time you can make this recipe with your children, and my children love to help for that reason I knew this is the perfect recipe. This recipe is originally from my colleague Carla of Chocolate Moosey and I personally recommend it, is simple and very delicious made ​​with ingredients you always have on hand, which is very important.
I hope you enjoy.

INGREDIENTS COOKIES
1/2 cup unsalted butter, softened
1/4 cup brown sugar
2 1/2 Tbsp sugar
1 tsp vanilla extract
1/4 tsp salt
1 egg yolk
1 1/4 cups flour
3/4 cup mini semisweet chocolate chips

VANILLA BUTTERCREAM
3/4 cup powdered sugar
1/4 cup unsalted butter, room temperature
Pinch of salt
1/4 tsp vanilla Sprinkles to decorate

CHOCOLATE GLAZE 
1/4 cup mini semisweet chocolate chips

DIRECTIONS

For the cookies: In a large bowl, beat together butter, both sugars, vanilla, and salt until creamy.
Beat in egg yolk. Gradually beat in flour then stir in chocolate chips.
Remove the dough from the bowl and place it between two sheets of plastic wrap.
Roll the dough flat until it is 1/4-inch thick.
Chill in the refrigerator for at least an hour or until firm.
Line two cookie sheets with either silicone mats or parchment paper.
Remove the dough from the refrigerator and remove the top layer of plastic wrap.
Cut into shapes and place shapes on the cookie sheets.
As you run out of dough to cut, gather up the dough scraps and reroll.
Repeat until all of the dough is used up.
Chill the cookie sheets in the refrigerator while you preheat the oven to 350F.
When the oven is ready, bake the cookies 9-11 minutes or until golden brown.
Let stand for 3 minutes then remove to wire racks to cool completely.

Vanilla buttercream. In a medium bowl, beat together sugar, butter and salt until creamy. Increase the speed to high and beat until creamy, 3-5 minutes.
Add vanilla and beat for another minute.
When the cookies are ready, decorate with sprinkles and buttercream

For the chocolate glaze
Place the chocolate chips in a plastic sandwich bag – do not seal.
Microwave for 45 seconds then knead until smooth. Squeeze all of the chocolate to one corner of the bag then make a small cut to the corner. Pipe the chocolate onto the cookies as desired. Let the chocolate harden before serving.

Preparation time: 1 hour 15 minutes
Cooking time: 9-10 minutes
Level of the recipe: Easy
