Mini Strawberry and Cheese Pies #MothersDay #SundaySupper

INGREDIENTS

  • 1 package of store bought Pie Crust
  • 8 oz of cream cheese
  • 1 cup of fresh dice strawberries
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon water

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl mix together strawberries, vinegar, sugar and cream cheese, until well combine, ad one egg and mix, set aside.
Roll out the pie crust and cut out rounds with a cookie cutter. In a muffin tin place one round in the mold and shape it, pour 1 1/2 teaspoon of the filling and place the other round on top, pinch the two together so the filling does not come out.
Beat together one egg wiht the teaspoon of water and brush the pies on top, they are going to look beautiful.

Baked for 20 minutes.

Once they ready place on a wire rack to cool completely.
Serve with some homemade whipped cream.

WHIPPED CREAM RECIPE:
Beat 1 cup of heavy whipping cream, 3 teaspoon of sugar and 1 teaspoon of vanilla extract, until it form soft picks

This recipe makes 24 mini pies.

Hearts of Palm Mix Rice #SundaySupper

DSC_0002If I learned anything since I was little, is that on occasion the food budget was cut and the meat was not an option, so as good Costa Rican girl I ate what my grandmother prepared.
One of the favorite dishes at home was the Arroz con Palmito (Hearts Of Palm Mix Rice) is very inexpensive and easy to make, the big advantage is that you can use leftover rice from the previous day and believe me in my house rice was one of the things that always leftovers.
So this week we bring you delicious recipes that will help keep the budget in line and not have to break the piggy to prepare delicious meals for your loved ones.
So stay with us this week and inspirece with these recipes that will help you in your everyday life.

INGREDIENTS

  • 1 can 14 ounces of Hearts of Palm cut in pieces.
  • 4 cups cooked rice from the previous day
  • 2 cups mozzarella cheese
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 1/2 cup fat-free half and half
  • 1/2 cup chopped cilantro
  • 1 cucharada de mantequilla
  • Salt and pepper to taste

DIRECTIONS

Preheat oven to 400 degrees F.

In a hot pan melt butter add onion and garlic cook for 3 minutes or until onion is very soft.
Add the hearts of palm, stir well, add the half and half and rice stir well, season with salt and pepper.
Finally add the cilantro and turn off the heat.

In a greased baking dish place a layer of cheese on the bottom and half the rice, place another layer of cheese and the rest of the rice and sprinkle the remaining cheese on top.

Bake for 15 minutes.

Makes 6 servings.

Lemon Cookies for a Citrus #SundaySupper

DSC_0007-mWith the arrival of spring, we also see how our kitchen begins to fill with colors, yellow, green, orange, are some of the colors that are in this moment in my kitchen because I love to fill my bowl with oranges, limes and lemons.
And this week we want to inspire you with recipes full of citrus, so you also begin to fill your kitchen with these colors.
The #SundaySupper team has prepared a variety of dishes inspired by these flavors, delicious recipes to prepare this summer.

INGREDIENTS

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 stick of room temperature butter
  • 8 ounces cream cheese at room temperature
  • 1 cup sugar
  • The zest of one lemon
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped walnuts

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl sift flour, baking powder and salt.

Beat sugar, cream cheese and butter for 5 minutes or until the mixture is smooth.
Add the lemon zest and grated ginger with vanilla extract, add the flour gradually and finally incorporate the nuts.

Using an ice cream scoop, place the mixture in portions in previously greased trays.
Bake for 20 minutes or until cookies are lightly browned.
Once baked, place the cookies on a wire rack to cool completely.

This recipe makes 32 cookies.

This type of cookies have a cake-like texture, so you must be very careful with the baking time.

Cooking time: 20 minutes

CREAM CHEESE AND DULCE DE LECHE BUNDT CAKE

This is certainly a delicious cake, with a unique taste that I’m sure you are going to love.DSC_0808
An incredible and delicious combination that you would not expect in this kind of cakes.
Dulce de leche and cream cheese give this recipe a different option to add to your list of favorite recipes.
Delight yourself with this delicious recipe, and most important is that you also make it.

INGREDIENTS

  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon of baking powder
  • 2 1/4 cup of flour
  • 1 1/4 cup of sugar
  • 1/4 teaspoon ground nutmeg
  • 2 packages of 8 ounces cream cheese
  • 1/2 cup of Dulce de Leche
  • 3/4 cup of vegetable oil
  • pinch of salt

DIRECTIONS

Preheat oven to 350 degrees F.

Beat cream cheese with sugar until the sugar dissolves, 5 minutes, add the eggs one by one, vanilla and dulce de leche beat for 5 minutes.

In a bowl stir together the flour, baking powder, salt and nutmeg, add to the mixture alternating with the oil, beat for 5 more minutes.

Place in a bundt cake mold, greased and floured and bake for 55 minutes or until a toothpick inserted comes out clean.

This recipe makes 10 pieces of cake.

Cooking time: 55 minutes

BREAD PUDDING WITH PECANS a Retro #SundaySupper

DSC_0804This week has been incredibly fun with the #SundaySupper family, we have been creating retro recipes, those recipes that immediately transport us to our childhood.
Those recipes that our mothers and grandmothers cooked over and over, it brings back many memories for me personally, the worst was when my grandmother stopped cooking my favorite foods as a child.
The good news is that many of them are on the list of recipes this week and I can make them again and enjoy.
One dessert that I loved was the bread pudding, my grandmother baked it once a week because usually we had day-old bread.
My recipe is very similar to my grandmother, I made just a few changes because I think that she cooked is delicious.
So I hope you enjoy it and try it.

INGREDIENTS 

  • 4 cups milk
  • 1 can of condensed milk
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 24 sweet rolls
  • 1/2 cup of sugar
  • 1 cup of chopped pecans
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup of raisins

DIRECTIONS

  1. Preheat oven at 350 F.
  2. Cut sweet rolls into pieces placed in a tray and bake for 10 minutes, remove from oven and cool completely.
  3. In a bowl stir together milk, eggs, sugar, condensed milk, nutmeg and cinnamon, mix until everything is well incorporated.
  4. Add the bread to the mixture and let stand for 5 minutes, add the raisins, pecans and stir.
  5. Pour into a pan and bake for 1 hour and 10 minutes.

Makes 36 individual portions can be served warm or at room temperature.

Cooking time: 1 hour and 10 minutes

CHOCOLATE CHIP CUT-OUT COOKIES Celebrating a One Year Anniversary of #SundaySupper

This is definitely a very special week for the family of #SundaSupper, as it is celebrating one year of sharing dinner around the family table.
For me personally it is an honor to be part of such a wonderful family and share the love of food that we all have.
To celebrate this event we chose recipes from different contributors that have this family, and believe me it was very difficult to choose among so many delicious and different cuisines.
After reviewing I chose a recipe that is not only easy to make and at the same time you can make this recipe with your children, and my children love to help for that reason I knew this is the perfect recipe. This recipe is originally from my colleague Carla of Chocolate Moosey and I personally recommend it, is simple and very delicious made ​​with ingredients you always have on hand, which is very important.
I hope you enjoy.

INGREDIENTS COOKIES
1/2 cup unsalted butter, softened
1/4 cup brown sugar
2 1/2 Tbsp sugar
1 tsp vanilla extract
1/4 tsp salt
1 egg yolk
1 1/4 cups flour
3/4 cup mini semisweet chocolate chips

VANILLA BUTTERCREAM
3/4 cup powdered sugar
1/4 cup unsalted butter, room temperature
Pinch of salt
1/4 tsp vanilla Sprinkles to decorate

CHOCOLATE GLAZE 
1/4 cup mini semisweet chocolate chips

DIRECTIONS

For the cookies: In a large bowl, beat together butter, both sugars, vanilla, and salt until creamy.
Beat in egg yolk. Gradually beat in flour then stir in chocolate chips.
Remove the dough from the bowl and place it between two sheets of plastic wrap.
Roll the dough flat until it is 1/4-inch thick.
Chill in the refrigerator for at least an hour or until firm.
Line two cookie sheets with either silicone mats or parchment paper.
Remove the dough from the refrigerator and remove the top layer of plastic wrap.
Cut into shapes and place shapes on the cookie sheets.
As you run out of dough to cut, gather up the dough scraps and reroll.
Repeat until all of the dough is used up.
Chill the cookie sheets in the refrigerator while you preheat the oven to 350F.
When the oven is ready, bake the cookies 9-11 minutes or until golden brown.
Let stand for 3 minutes then remove to wire racks to cool completely.

Vanilla buttercream. In a medium bowl, beat together sugar, butter and salt until creamy. Increase the speed to high and beat until creamy, 3-5 minutes.
Add vanilla and beat for another minute.
When the cookies are ready, decorate with sprinkles and buttercream

For the chocolate glaze
Place the chocolate chips in a plastic sandwich bag – do not seal.
Microwave for 45 seconds then knead until smooth. Squeeze all of the chocolate to one corner of the bag then make a small cut to the corner. Pipe the chocolate onto the cookies as desired. Let the chocolate harden before serving.

Preparation time: 1 hour 15 minutes
Cooking time: 9-10 minutes
Level of the recipe: Easy

ORANGE POUND CAKE #HelpingHands for #SundaySupper

It’s amazing what a family together, and even more amazing what family does this week to help our brothers in New Jersey and New York.

INGREDIENTS

  • 3 cups flour
  • 1 1/2 cup sugar
  • 3 eggs
  • 2 tablespoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 sticks unsalted butter
  • 1/2 cup orange juice
  • 1/2 cup nonfat sour cream
  • Zest of 1 orange
  • Pinch of salt
DIRECTIONS
Preheat oven to 350 degrees F (176 degrees C).
In a mixer, beat butter and sugar for five minutes, add the eggs one by one and the lemon zest. In a bowl sift together flour, baking powder, baking soda and pinch of salt in another bowl mix the lemon juice, sour cream and vanilla.

Add dry ingredients and wet to butter mixture alternately ending with flour. Pour into a greased chimney mold and bake for 45 minutes.

Let cool in pan for 10 minutes, unmold the cake and place on a wire rack to finish cooling.

This recipe makes 12 servings.

CROISSANTS FILLED WITH ASIAGO CHEESE AND SCALLIONS

For the celebrations of these months as expected, we need snacks, practical and easy to make, because we do not know at what point we will need them.
These delicious croissants are ideal for meetings, parties, or just for an afternoon in the company of friends, rest assured that they will be a hit at any event.
Stuffed with cream cheese, Dijon mustard, Asiago cheese and chives, they will be a big hit.
Enjoy it.INGREDIENTS 

  • 2 tubes ( 8 ounces ) refrigerated crescents rolls
  • 1 cup grated Asiago cheese
  • 1/2 cup chopped scallions
  • 1/4 cup cream cheese
  • 1 tablespoon Dijon mustard
  • 2 teaspoons coarse salt

PREPARATION 

Preheat oven to 350 degrees In a bowl, mix the cream cheese and Dijon mustard.

Extend and separate the croissants, spread a teaspoon of cream cheese mixture in each one, place cheese and scallion, close to shape the croissant.

Place on a tray and bake for 12 minutes.

Once ready, serve and enjoy.

This recipe makes 16 croissants.

BUTTERNUT SQUASH AND CARROT BREAD #SundaySupper

I love baking and experimenting with different ingredients, this recipe was created thanks to the inspiration that my grandmother planted in me.
She used to make a delicious butternut squash bread, the only thing I did was add one or two ingredient to make it even more delicious.
It is fluffy, with a texture and flavor that will impress you, you never would believe that this is a butternut squash and carrot bread.
My grandmother baked delicious breads and every time I try to recreate one of the recipes that she made my house smell like nostalgia, and transports me to my childhood, sitting at the kitchen watching my grandmother created new recipes.
Hope you like this bread is full of love and delicious memories.

INGREDIENTS

  • 6 eggs
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 sticks of melted butter
  • 4 cups flour
  • 1 tablespoon baking powder
  • 1 cup of butternut squash puree
  • 1 cup shredded carrots
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 cup raisins
  • 1 pinch of salt

DIRECTIONS

Preheat oven to 350 degrees F.

In a mixer, beat eggs and gradually add the 2 sugar and butter, beat for 5 minutes.

Sift flour, baking powder, cinnamon and pinch of salt in a bowl.

To the egg mixture add vanilla and grated carrot, alternate squash puree with flour, beat until everything is well incorporated, about 5 minutes more.
Finally add the raisins and stir well.

Pour into greased and floured style Bunt pan, bake for 50 minutes.

Remove from oven and let cool in pan for 10 minutes, unmolding the bread and place on a rack to cool completely.

This recipe makes 12 servings.

STUFFED BISCUITS WITH PINEAPPLE JAM AND CONDENSED MILK

This is definitely a very easy and delicious recipe, perfect for those days when you want to prepare something different and fast for breakfast or snack.
The amazing contrast between sweet and savory is delicious, I know you will love it.
Delicious little breads filled with jam and condensed milk, the perfect combination.
This recipe is very easy and quick to prepare, allowing you to spend a pleasant time with family or friends while enjoying these delicious Biscuits.
Enjoy it.INGREDIENTS

  • 1 tube of 8 units Biscuits
  • 2 tablespoons of condensed milk
  • 1/2 cup of pineapple jam
  • 1 teaspoon of cinnamon
  • 1 egg
  • 1/2 teaspoon of water

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl, mix the condensed milk with jam.

Separate in half each of the Biscuits, place a teaspoon of filling on one half and place the other half on top, pressing the edges seal well with a fork.
Place on a tray.

Mix the egg with the water and brush each biscuits, sprinkle cinnamon and bake for 17 minutes.

Remove from oven and cool completely.

Serve and enjoy.

This recipe makes 8 Biscuits.

Preparation time: 10 minutes
Cooking time: 17 minutes

Esta es definitivamente una receta muy fácil y deliciosa, ideal para esos días en los que queremos  preparar algo diferente y rápido para el desayuno o merienda.
El increíble contraste entre lo dulce y salado es delicioso, yo se que le va a encantar.
Pancitos rellenos de deliciosa jalea y leche condensada, la combinación perfecta.
Esta es una receta muy fácil y rápida de preparar, lo cual le permitirá pasar un agradable rato en familia o con amigos y al mismo tiempo disfrutar de estos delicioso Biscuits.

INGREDIENTES

  • 1 tubo de 8 unidades de Biscuits
  • 2 cucharadas de leche condensada
  • 1/2 taza de jalea de Pina
  • 1 cucharadita de canela
  • 1 huevo
  • 1/2 cucharadita de agua

PREPARACION

Precaliente el horno a 350 grados F.

En un tazón mezcle la leche condensada con la jalea.
Separe por la mitad cada uno de los Biscuits, coloque una cucharadita del relleno en una de las mitades y coloque la otra mitad por encima, cierre bien las orillas presionando con un tenedor. Coloque en una bandeja.

Mezcle el huevo con el agua y barnice cada uno de los biscuits, rocie la canela y lleve al horno por 17 minutos.

Saque del horno y deje enfriar completamente.

Sirva y disfrute.
