Mini Coconut Cups #SundaySupper #GameDay

mini coconut cupsWhat a great day for us, we are definitely having a blast today with all this delicious recipes the we prepare so you can make and enjoy this game day.
We have you cover, appetizer, entrees, desserts and even wine pairing, everything, on the table so you don’t miss anything of the game.
And you can see who I’m cheering for by the colors on my serving plate.
So lets call this a sweet victory dessert? No I’m joking let the best win.
And of course enjoy this sweet delicious dessert the I put together just for this amazing, sporty occasion.

INGREDIENTS

  • 1 box pillsbury pie crust
  • 1 1/2 cups shredded coconut
  • 1/2 cup water
  • 1 1/2 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a pot to low heat add the brown sugar and the water stir until is all dissolved, add the coconut, cinnamon and nutmeg , stir constantly until thick, about 8 minutes.
  3. Cut the pie crust with a medium cookie cutter and place the roundels in a mini cupcake tray, add a teaspoon of the coconut mixture in each cup.
  4. Bake for 15 minutes.
  5. Let it cool completely before eating.

Yields 48 cups.

Preparation time: 20 minutes
Cooking time: 15 minutes

Fried Rice with Chicken and Vegetables #EasyEverydayDishes

Fried Rice with Chicken and VegetablesA complete meal full of delicious flavors and you can make this meal so fast, like all my recipes I always think of you.
The best part of this recipe is the you can used leftovers rice and rotisserie chicken and maybe the only ingredient the you have to buy are the bean sprouts.
This is another great recipe in our book of easy rice dish, and I encourage you to make it and share with friends and family.

INGREDIENTS

  • 3 cups cook white rice
  • 1 cup shredded carrots
  • 2 cup rotisserie chicken
  • 1 cup bean sprouts
  • 1 cup slice mushroom
  • 3 tablespoons soy sauce
  • 1 teaspoon vegetable oil

DIRECTIONS

In Wok or pan heat the oil add mushrooms, bean sprouts and carrots, cook for 3 minutes, add rice, chicken stir well then add the soy sauce and stir for 2 more minutes.
Now its ready to serve with a side of greens just perfect.

Yield 6 servings.

AVOCADO PESTO PASTA #WeekdaySupper

Avocado Pesto PastaIf you are looking for an easy, healthy and delicious recipe to start you weekend, I have it for you.
This is the most delicious pesto you’ll ever try, it become you must have for now on and is so rich and soft in flavor the even your kids will love it.
Made with avocados, this is a better for you pesto, lest calories and fat, no oil needed, fresh ingredients are always better for your family, lets talk pasta, you can used any kind, but I recently discover Quinoa Pasta, witch is gluten free and low in fat and calories, so as I said before use any kind you like for this dish but as always Enjoy.

INGREDIENTS

  • 1 pound of Pasta
  • 3 avocados
  • 3 cups cilantro
  • juice of 1 lemon
  • 1/2 cup hold almonds
  • 1 small garlic clove
  • 1/3 cup Parmesan cheese
  • salt and pepper to taste

DIRECTIONS

  1. Cook pasta according package directions.
  2. While the pasta cooks, in a food processor or blender add all the ingredients, process or blend until well incorporate.
  3. After the pasta is cook, mix with the pesto and serve.

Yields 6 servings.
Serve with a side of green salad or steam vegetables.

Tuna and Potatoes TortillasWe are on a trip this sunday to Spain and we are bringing you delicious Tapas.
And if you don’t know what Tapas are heres a little info: They are a variety of appetizers or snacks in Spain cuisine, they can be cold or hot.
The serving of tapas is designed to encourage conversation because people are not so focused upon eating an entire meal that is set before them.
So here you go, now you can start making some tapas and chatting with your friends while eating.
And today we have so many ideas the you are going to start your own Tapas Party.
Sweet and savory, rich and simply delicious recipes, just perfect for any occasion. So join us at the table and enjoy.

INGREDIENTS

  • 3 medium potatoes, peel and cut in to cubes.
  • 1 can of Tuna in water drained
  • 1 egg yolk
  • 1 tablespoon flour
  • 1/2 cup onion minced
  • 1 garlic clove minced
  • 1 tablespoon butter
  • salt and pepper to taste

DIRECTIONS

  1. Place the potatoes in a bowl with water, cover with plastic and cook in the microwave for 20 minutes.
  2. Once ready, mash the potatoes, add the Tuna, egg yolk, salt, pepper and flour.
  3. Cook the onion and garlic in the butter for 5 minutes and add to the above mixture, mix well, grab 2 tablespoons of the mixture form a ball and crush in your hand to form the tortillas.
  4. Heat a pan, add some oil, cook the tortillas for 3 minutes on each side.
  5. You can serve this tortillas with a side of marinara sauce.

Yields 16 Tortillas.

Cooking time: 30 minutes

Pineapple Coconut Cupcakes Happy Birthday #SundaySupper

Pineapple Coconut CupcakesThis week is so special and important to us, can you believe there is bean 2 year since #SundaySupper star? Well amazingly true this is.
And am so happy and honored to part of this group, that have bring me so much, new friends, new opportunities, new challenges and of course a better view of what I love to do, cook for all of you and sharing my recipes.
I grow so much in blogging since I join this fabulous family and all the support the I receive is incredible.
This is my favorite moment and feeling, knowing the I have a second family and we can support and advice each other.
To celebrate this occasion I made the most delicious and easy pineapple coconut cupcakes, so easy and light you won’t believe this is a cupcake.
Enjoy.

INGREDIENTS

  • 1 box of yellow cake mix
  • 1 cup of pineapple juice (I used the juice of one can of 14 ounces)
  • 1/2 cup applesauce
  • 3 eggs
  • 1 cup shredded coconut

Frosting:

  • 1- 8 ounces package of low fat cream cheese
  • 4 cups powder sugar
  • 2 teaspoon of Meringue Powder

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl mix pineapple juice, applesauce, eggs, coconut and cake mix until incorporated.
  3. Line a cupcake pan with cupcake liners and add about 1/4 cup of the mix to each.
  4. Bake for 20 minutes.
  5. To make the frosting, just place all ingredients in a bowl of a stand mixer or hand mixer, and mix for 5 minutes.

This recipe makes 22 cupcakes.

Pumpkin Pudding #SundaySupper

Pumpkin PuddingWhat a fabulous theme we have this week, we were challenge to make something relate to our favorite movie or song, and of course I pick the want am the #1 fan, my all time favorite anytime of the year, Nightmare Before Christmas.
I just love the movie so much the I have a lot of stuff of the characters, specially Jack Skellington.
So I made in his honor this gluten free, low fat, low sugar, Pumpkin Pudding, a delicious option to for a light dessert after the holiday dinner, cuddle with your favorite blanket and watching this awesome movie.
Enjoy.

INGREDIENTS

  • 2 cups pumpkin puree
  • 1 stick butter melted
  • 1/4 teaspoon salt
  • 1 can evaporated milk
  • 3 eggs
  • 1/3 cup brown sugar + 2 tablespoons
  • 6 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon butter

DIRECTIONS

  1. Preheat the oven to 350° F.
  2. Spray a baking dish with some cooking spray, sprinkle the 2 tablespoons of brown sugar and the tablespoon of butter, then add the rest of the ingredients to a blender and blend until combine.
  3. Pour over the mixture above and bake for 1 hour or until completely firm.
  4. You can serve warm or cold, add apples or pears and even as an individual dessert with some homemade whip cream.

This recipe makes 1 hold pudding.

Chicken Fajitas #WeekdaySupper

Chicken FajitasI’m so happy to be back after that long break, we had an awesome time with the family and enjoy some quality time together.
And for this #weekdaysupper I have for you the most easy recipe ever, this fajita recipe is delicious, easy and super economical, and because I know how busy everybody is right now I just have to share it with you all.
Take a look to the ingredients and see if you can make this tonight, I know the you still have some turkey or chicken leftover.
Enjoy.

INGREDIENTS

  • 2 cups leftover chicken or turkey cook.
  • 1 onion cut in Julienne
  • 1 red bell pepper cut in Julienne
  • 2 tablespoons Worcestershire sauce
  • salt and pepper to taste.
  • 6 corn tortillas
  • Cilantro to garnish

DIRECTIONS

Heat a pan to medium heat, add little oil, cook onion and pepper for 3 minutes, then add the chicken, W sauce, salt and pepper, mix well and let it cook for 3 more minutes.
In the meantime place the tortillas is the microwave to warm them for 1 minute.
Now you can star assemble the tacos, just by putting some of the mixture in each tortilla and sprinkle some cilantro.

Yields 6 portions or 3 servings.

Pumpkin Sweet Rolls #SundaySupper

pumpkin sweet rollsThis is just the most simple, delicious, low in sugar cinnamon you’ll find, is just perfection in a bite.
And this week our host for #SundaySupper Heather from girlichef, give the challenge to make any recipe with squash, and happened the I have a can of pumpkin puree, I need it to use it ASAP, this theme was perfect for me.
So, I made this amazing rolls, not your typical cinnamon roll, no, this is beyond that.
I personally love this recipe, because, is very low in sugar, so when you eat this rolls is not gonna be over sweet.
And the best part you can eat it with or without a frosting.
I hope you love them as much as I and enjoy at any hour of the day.

INGREDIENTS

FOR THE BASIC DOUGH

  • 3 packages of active yeast
  • 5 cups flour
  • 1/2 cup melted butter
  • 1/2 cup honey
  • 2 eggs
  • 1 3/4 cups warm water
  • 2 teaspoons salt

FOR THE FILLING

  • 3/4 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 2 teaspoon cinnamon

DIRECTIONS

  1. Preheat the oven to 400°F.
  2. In the bowl of a stand mixer, combine the yeast and the warm water, let it rest for 5 minutes, then in low speed add honey, eggs and butter, still in low speed add salt and the flour 1 cup ad the time until the dough pulls away from the sides of the bowl.
  3. Once ready, place the dough in a lightly flour surface, roll out to form a rectangle, then start with the filling, first spread the pumpkin puree and after that sprinkle the cinnamon, brown sugar and the pecans.
  4. Roll in the dough and cut in 1″ pieces, about 30 small pieces or 22 medium pieces, that is up to you. Place in a grease baking dish. Cover with a towel and let it rise for 20 minutes in a warm place.
  5. Before baking spread some melted butter.
  6. Bake for 25 to 28 minutes.
Preparation time: 40 minutes
Cooking time: 30 minutes

Guava Cream Cheese Bundt CakeThere are a lot of delicious jams in the market but when you grow up eating Guava Jam, the world is not the same.
This month the #BundtaMonth group is making the most delicious Bundt Cakes with jam and of course I choose Guava, because is the best thing ever, besides chocolate.
This exotic fruit is rare to find here, is most relate to the Asian culture but in Latin America is famous too, we use this fruit to make, sauces, jam and delicious drinks, we also eat the hold fruit which is sweet and tart.
You are going to love is cake it is the most delicious cake you ever eat.
Enjoy.

INGREDIENTS

  • 3 cups flour
  • 2 sticks butter softened
  • 1 8 ounces package cream cheese
  • 1 1/2 cup brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 cup Guava Jam
  • 1/8 teaspoon salt
  • 1 cup halt and half

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Cream butter, cream cheese and sugar, add eggs one by one and vanilla extract.
  3. In a bowl sift flour, baking powder and salt, add to the above mixture alternating with the half and half, add at the end the Guava Jam just to incorporate. Have ready the bundt pan you are going to use to pour the mixture and bake.
  4. Bake for 55 minutes.

This recipe makes 1 bundt cake.

Chickpeas And Chicken Stew #WeekdaySupper

Chickpeas and chicken stewLast week of october and we haver warm cozy and delicious food for you, easy to make and perfect for every nigh meal.
This recipe is super simple, something the you can make in just 30 minutes, yes 30 because I know how stressful and tired it is to cook elaborated meals, during the week.
This stew is perfect to complement rice or salad, is low in fact and use natural tomato juice, no worries is super simple to make, I’m sure you’re going to love it.
Enjoy.

INGREDIENTS

  • 1/2 cup chopped onion
  • 2 garlic clove mince
  • 3 carrots chopped
  • 1 can 14 ounces chickpeas, drained and rinse
  • 1 pound boneless, skinless chicken tight in chunks
  • 4 medium ripe tomatos
  • 1 tablespoon ketchup
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oil (any kind)
  • Salt and pepper to taste

DIRECTIONS

  1. Heat the oil and add the onions and garlic, let it cook for 2 minutes, add the chicken cook for 5 minutes, in a food processor or blender, blend the tomatoes, skin and everything, add the tomato juice to the chicken with carrots and chickpeas, mix in the spices and the ketchup, lower the heat and cook for 23 minutes.
  2. This stew is ready to eat when the chicken is completely cook and soft.
  3. You can use chicken breast, add some parley or cilantro at the end for freshens.

Makes 6 servings.

Cooking time: 30 minutes
