So lets call this a sweet victory dessert? No I’m joking let the best win.
And of course enjoy this sweet delicious dessert the I put together just for this amazing, sporty occasion.
INGREDIENTS
- 1 box pillsbury pie crust
- 1 1/2 cups shredded coconut
- 1/2 cup water
- 1 1/2 cup brown sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
DIRECTIONS
- Preheat the oven to 350°F.
- In a pot to low heat add the brown sugar and the water stir until is all dissolved, add the coconut, cinnamon and nutmeg , stir constantly until thick, about 8 minutes.
- Cut the pie crust with a medium cookie cutter and place the roundels in a mini cupcake tray, add a teaspoon of the coconut mixture in each cup.
- Bake for 15 minutes.
- Let it cool completely before eating.
Yields 48 cups.
