Holiday Fruit and Cheese BreadWhat a better way to start this month with some delicious inspired holiday breads. All kinds of bread that you can make this season.
I have the privilege to carrying a lot of different recipes the my family have made for man years, and because I know you like different and new flavors, I want to share them with all of you.
In this occasion I made a very different fruit, no rum or weird taste, no, this fruit cake is made with ricotta cheese and and I know dry fruits, but only cherries and pineapple.
I actually know the this is a bread the your kids are going to enjoy a lot.
Not a lot of sugar and great to make this holiday month.
This fruit and cheese bread is different, delicious and totally ready to eat.

INGREDIENTS

  • 3 cups flour
  • 2 teaspoons baking powder
  • 3 eggs
  • pinch of salt
  • 1 stick of softened butter
  • 2 cups ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 1/2 teaspoon ground nutmeg
  • 1 cup milk
  • 1 cup chopped dry fruit
  • 1/2 teaspoon ground cinnamon

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In the bowl of a stand mixer, cream butter, sugar and ricotta cheese.
  3. In another bowl mix the dry ingredients, to the mixture above add, eggs, vanilla extract and mix.
  4. Turn off the mixer and add half of the dry ingredients and half of the milk, mix just to combine, to the other half of the dry ingredients add the dry fruit, turn off the mixer again and add the rest of the milk and flour, beat just to combine the ingredients.
  5. Place on a loaves pan and bake for one hour or until the center of the bread is completely cook.

This recipe makes 2 medium size loaves breads pan.

Preparation time: 20 minutes
Cooking time: 1 hour

Coffee Baileys Bundt CakeI’m so excited, I love this time of the year , especially because I get to use all my booze. Yes we can make all kinds of recipes with different liqueurs.
This is the time for you to start to keep all your favorites recipes really close, am sure you are going to be making delicious food soon.
Today the #BundtBakers team, created a bunch of recipes with differents liqueurs, and let me tell you, they look so amazing and delicious, definitely worth keep some on hand.
I made for you one of my all favorites cakes, this is one bundt cake the my grandmother and I always made for the holidays.
She is no longer with us, but I keep her recipes in a safe, and just for me, she was one in a billion.
We were always drinking Baileys. One day we start experimenting in the kitchen and as magic, she made this super delicious Bundt Cake.
With enough booze to keep you happy and some coffee to keep you awake.
I really hope you like and enjoy, just like me by making my cake.

INGREDIENTS

  • 3 1/2 cups AP Flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 4 eggs
  • 1 cup half and half
  • 1/2 cup fresh brew coffee
  • 1/2 cup Baileys Liqueur
  • 1/2 cup raisins
  • 2 sticks soften unsalted butter
  • 2 cups brown light sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • Pinch of salt
  • Zest of 1 orange

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Cream sugar and butter for 5 minutes.
  3. In a bowl mix flour, baking soda, baking powder, salt, nutmeg, orange zest and raisins, set aside.
  4. In a measuring cup combine half and half, coffee, baileys and vanilla, to the butter mixture add, the eggs one by one, and beat for 3 minutes, then add flour mixture and milk mixture alternating one with the other, beat until combine well, do not over beat, otherwise the cake will be hard and angry (yes cakes sometimes get angry with me).
  5. Have a bundt cake mold ready, that means well grease, and pour the mixture and bake for 1 hour and 5 minutes.
  6. Let it cool for 10 minutes and take it out of the mold, place on a rack to cool completely.
  7. If you want to make more than one cake, please do not doble the ingredients, just measure everything again.

This recipe makes 1 bundt cake.

Cooking time: 1 hour and 5 minutes

Ginger Sour Cream CookiesI love, love, love this time of the year, and all the cookies, cakes, turkey, ham you named it, it is just a delicious moment to be coking and baking.
And of course this month #CreativeCookieExchange theme is all about ginger. It is the second favorite ingredients, besides pumpkin puree.
We all love to baked and cook with this seasonal ingredients, and today I made this different kind of ginger cookie, it is like cookie and cake in one, and my daughter said you can dip then in chocolate for even more decadent flavor.
They have a rich flavor of ginger and a tanginess from the sour cream, this is just perfect to change up the traditional ginger cookies, and pack this holiday with this different and delicious Ginger Sour Cream Cookies.

INGREDIENTS

  • 3 cups flour
  • 2 cups super fine sugar
  • 1 stick soften butter
  • 2 egg
  • 1 cup of fat free sour cream
  • 1 teaspoon grown ginger
  • 1/8 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon grown nutmeg
  • 1 tablespoon of crystalize ginger

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Cream sugar and butter for 5 minutes, add the eggs one at the time.
  3. In a bowl combine all the dry ingredients, then add to the mixture above alternating with the sour cream.
  4. You will have a very soft dough, and that is ok.
  5. Place teaspoon of the dough in a baking sheet, and place a little pice of crystalize ginger in the center of the cookies.
  6. Bake for 20 minutes. Once ready place on a cooling rack.

This recipe makes 40 cookies.

As you can see I need it for may frame, different letters, animals, or any kind of sticker you can find. I went to the scrapbooks area and they have a lot of cute stuff.
I also buy a 4 in x 6 in wood frame, to make it easy and more fun.
You also need acrylic pain, any color you want and a glue gun.
First you need to paint the wood frame in your color of choice, then glue all the little pieces, the ones on the picture are made of wood too. Also all the stickers, remember to be super creative with this.

Well this is the case of a lot of cook everywhere and let me tell you sometimes it is hard even create a recipe with this specific ingredient.
But don’t today we have a lot of recipes with unusual ingredients the are difficult to find or you just went on a hunt for them.
I made a delicious and easy baked rice with mushrooms, and I know the this is a very easy ingredient to find but the recipe is something unusual and you know me I love to cook with rice, and show you the there are so many recipes you can make with simple and basic ingredients.

INGREDIENTS

  • 1 cup parboiled uncooked rice
  • 1 bag of frozen peas with carrots
  • 1 pound of crimini sliced mushrooms
  • 1/2 tablespoon salt
  • 1 teaspoon pepper

DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Brush 1 tablespoon of butter in a baking dish.
  3. In a bowl mix all the ingredients except the water, place the mixture in the baking dish, put it in the oven and add the water, this is the safest method you can used, and bake for 40 minutes.
  4. After the time is done, add the rest of the butter to the rice, combine well and place in the oven for 5 more minutes.
  5. Once ready, serve immediately or cover and reheat later. This rice is a great side dish for your turkey, fish or a good salad if serve cool just add some dressing.

This recipe makes 6 servings.

Classic Anise Dinner RollsWelcome to another delicious #BreadBakers month, and we have on this occasion some ideas to make on the thanksgiving dinner, or maybe a good hot and perfect breakfast the day after, you can decide what is best for you.
I made, a classic in my family, Anise dinner rolls, yes this are a must, and my family loves the flavor, texture and of course the they can eat it at any time of the day.
They are delicious just out of the oven, but be careful you can really burn your mouth. They are also very rustic, and that is something my grandma always taught me, homemade is better than anything you can find in the most expensive store.
I’m sure this is a new flavor the you can really enjoy.

INGREDIENTS

  • 2 cups flour
  • 3/4 cup milk
  • 2 tablespoons butter
  • 2 1/4 teaspoon rapid yeast
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2 teaspoons Anise Seed
  • 1 egg
  • 1 teaspoon milk

DIRECTIONS

  1. Preheat the oven to 375°F.
  2. In the bowl of a stand mixer add the flour, salt, sugar and yeast. In a separate bowl add milk, butter and anise seed, heat it in the microwave for 30 seconds, or until it reach 130°F.
  3. Add to the flour mixture and beat for 2 minutes.
  4. Place the dough in a flour surface (not to much flour) and knead for 8 minutes or you can use the fancy attachment in the mixer to do it.
  5. After the kneading time, place the dough in a bowl, cover and let it rest for 10 minutes.
  6. Then, grab the dough and cut it in 12 or 14 pieces, shape into balls, place in an round pan, an 8-inch can work good, cover and let it rise for 30 minutes.
  7. Once all ready, brush with a mixture of egg and milk, and bake for 35 minutes or until golden brown.
  8. This recipe makes 14 dinner rolls.
Preparation time: 50 minutes
Cooking time: 35 minutes

churro style sweet little earsWelcome to another month of good delicious leftovers with #TheLeftoversClub, and don’t get me wrong, we are not sending leftovers to our friends, this is just a funny way to call our fabulous group.
Let me tell you, it is really easy, we send delicious treats to our friends every month, for real, and I love it because I can taste something completely different.
This month I decide to make something very simple, you know with all the make ahead dishes we make for the holidays, sometimes it is difficult to choose a good recipe to send.
This sweet little ears, are not really ears, in my country they are call Orejitas, just because it resembles an ear, funny right?
And there are super simple to make, delicious, crunchy and warm, with all the cinnamon I add, oh very important I forgot to tell the it’s like eating a little buttery churro, Yum!
My little ears are churro inspired, because everybody love churros and why not chance the concept a little.

INGREDIENTS

  • 2 sheets of Puff Pastry
  • 2 cups sugar
  • 2 tablespoons ground cinnamon

DIRECTIONS

Preheat the oven to 350°F.

Mix sugar and cinnamon, you can used a baking pan and keep it there, it is less messy that way.

Ok, place one of the puff pastries sheets on the table and roll in each end, making sure each end will make it to the center of the pastry, you can be fancy and measure, but this is a stress free recipe.

Then cut the pastry in 2 inch pieces, and press each piece on the sugar and cinnamon mixture. This is a very important step because they need to be super coated with the sugar, the flavor of this “cookies” is very important in the recipe.

Bake for 15 minutes, let it cool completely or as me eat it when warm.

This recipe makes 28 little cookies.

I made for you a spice pumpkin bread, filled with spiced, pumpkin and I add a crunch with some pecans, it is great for breakfast, because is not super sweet and healthy made with organic sugar, flour, butter and eggs.
Yes you can actually enjoy healthy delicious food at home.

INGREDIENTS

  • 2 sticks butter at room temperature
  • 1 1/2 cups sugar
  • 1 cup buttermilk
  • 3 eggs
  • 2 cups flour
  • 1 teaspoon grown cinnamon
  • 1 teaspoon grown ginger
  • 1 teaspoon grown clove
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 15 ounces can Pumpkin puree
  • 1 1/2 cup chopped pecans

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Sift together flour, cinnamon, ginger, clove, salt and baking powder, set aside.
  3. In the bowl of a stand mixer, cream sugar and butter for 5 minutes, add the eggs one by one, add the pumpkin pure, vanilla extract, add the flour in 3 additions and the buttermilk in 2 additions, you know, start with flour and end with flour. Add the pecans at the end by hand.
  4. Pour the batter in 2 loaves pans, previously grease and bake for 45 minutes or until the center of the bread is completely cook.
  5. Once ready, let it cool for 10 minutes and transfer to a cooling rack. Let it cool completely before cutting or eating.
  6. This recipe makes 2 loaves.

Peanut Butter Coconut Mini Bars #SundaySupperWelcome to another delicious #SundaySupper, I’m so happy the you decide to join us for a light, easy and different recipes to make on the holidays.
We want for you to have options in all the meals, so your family can enjoy and also eat a little healthier this holiday season.
You know how difficult it is to say no to a delicious pie, baked ham with lots of gravy, or the most buttery, dripping and succulent meal.
And who can forget the most decadent desserts? Well for this one I have the perfect option, a delicious, sweet and salty in a tiny bite peanut butter and coconut mini bar, with all the things you can combine peanut butter, coconut is the most least expected.
And this little bite is just perfection, in like I said one bite.
It is better when served super cool or freeze, because the flavors are more intense. Packed in protein, and you will feel satisfied, no need to reach the leftover candy.

INGREDIENTS

  • 3/4 cup peanut butter
  • 1 cup of quick cooking oats
  • 1 cup dry coconut
  • 1 tablespoon crystalized ginger, dice
  • 1 cup mix nuts chopped
  • 1 teaspoon oil
  • 1 cup melted dark chocolate

DIRECTIONS

  1. This is a very simple recipe, to a food processor add, peanut butter, oats, ginger and nuts, pulse until all is combine.
    In a plastic container smear the oil, eliminating the excess.
  2. Place the yummy concoction to the container and form using your fingers, and just pour the melted chocolate on top.
  3. I put mine on the freezer for 1/2 hour, flip it to get it out of the container, cut in pieces and cover with plastic, and place it in the fridge this time, like I said, cool is even better to eat.

This recipe makes about 20 little bites.

Cooking time: 0 minutes
