Chocolate and Almond Bundt Cake

What a delicious and perfect ingredient we have this month here at the #BundtBakers group, definitely chocolate is the most amazing and versatile ingredient to cook, from cakes, brownies, bundt, cupcakes, cookies, anyway the list is to long to name it all.
And what I love the most about chocolate is the you can make it super sweet, dense, spice and why not a little sinful is you ask me.
And this month I make the most perfect bundt cake ever, it is a combination of brownie, lava cake, and cake all in one.
It have bits of almonds for some crunchiness and the not so secret ingredient, coffee, yes it is an all in one bundt the am sure you are going to love it.
Not super sweet, but perfect to share with the children, all the you love in chocolate is here in this bundt cake, soft, chewy, crunchy and decadent.

INGREDIENTS

  • 2 sticks room temperature butter
  • 1 cup super fine sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1/2 cup morning coffee
  • 1 cup half and half
  • 3 cups AP Flour
  • 1 teaspoon baking powder
  • pinch salt
  • 1/2 cup unsweetened cocoa
  • 1/2 cup powder milk
  • 1 1/2 cup toasted, chopped almonds

DIRECTIONS

  1. Preheat the oven to 350°F, spray a bundt pan with non stick spray and set aside.
    In the bowl of a stand mixer cream sugar and butter for 5 minutes, the add the eggs one by one, vanilla extract and mix for 3 more minutes.
  2. In a bowl sift flour, cocoa, powder milk, baking soda, and salt.
  3. Add the dry ingredients in 3 additions alternating with the coffee and the half and half, then add te almonds by hand and combine well.
  4. Pour the batter in the pan and bake for 1 hour to 1 hour 10 minutes, or until a toothpick comes out clean.
  5. Let it cool in the pan for 10 minutes then place the cake to a cooling rack and let it cool completely.
  6. This recipe makes 1 bundt cake.

Cooking time: 1 hour to 1 hour 10 minutes

I’m so happy to be back and share one more recipes with you in this amazing group of talented bakers.
This month we have for you a delicious and different way to eat your cookies, yes we are adding some booze and making this a very unique and really delicious guilty pleasure; because with all the boom right know with 50 Shades of Gray, you never know when a cookie with a kick is needed.
And I put together 2 of my favorite ingredients, Nutella and Baileys, those are the perfect combination to make it all good specially on a busy Tuesday.
This are super easy to make and better make a lot because they are addictive, and you know me cero complications, simple and easy ingredients and ad the end a delicious recipe to share with your friends.

INGREDIENTS

  • 1 cup Nutella
  • 3 tablespoons Baileys
  • 1 1/2 cup flour
  • 1 stick of butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 cup sugar

DIRECTIONS

  1. Preheat the oven to 350°F.
    In the bowl of a stand mixer, cream sugar and butter for 5 minutes, add nutella, vanilla extract, baileys, and beat for 3 minutes, then add flour mix with salt and baking powder, mix until it forms a ball.
  2. In a cookie sheet, place tablespoons of the dough, form a ball with it, and bake for 8 to 12 minutes.

This recipe makes 24 cookies.

Preparation time: 15 minutes
Cooking time: 8-12 minutes

As adults, we spend so much time trying to manage our everyday life the we forgot sometimes to spend quality time with the family.

And don’t get me wrong, I know work is important but, I adore to come home and see the happy face of my daughter waiting for me, specially when is family night. Oh my, let me tell you, it is just fun and crazy, and this time we had the opportunity to create and watch The Boxtrolls DVD. This is just the perfect movie to be creative and enjoy as a family, and not only that we learned so many values, like being together as a family, support each other, I talk to my girls about the importance some people  have over material things and being good or bad is related to who you are and the choices you make. This is a wonderful movie.

We wanted to do sometime different, and this is a great idea for you at home, involve the hole family, grab some papare bags, you know the ones we use to send the kids lunch, draw some of the characters boxes names or even like us some hats, because hats are important.

This is the year I’m putting myself to work hard. My Morning Routine need the most nutrition breakfast to be in complete control with my health.

Sweet Corn Bread With Bacon

Hello today I’m partnering with Farmland® Bacon and recreated one of the most delicious     corn bread you ever have, sweet, smoky thanks to the flavor the only Farmland® Bacon because Farmland® bacon is slow smoked over real hardwoods for maximum flavor. For decades, Farmland® has taken pride in perfecting their curing and smoking technique–a difference you’ll taste in every delicious bite.

I love how the different flavors combine give this dish the perfect bite and it is of course just what you need when making easy food for game day. A little bit goes a long way and because am using top quality Farmland® bacon it is the perfect compliment to my corn bread.

This corn bread is a classic dessert in my house, and so easy to make, I know I said dessert but if you see the list of ingredients below, you will notice the most of them are sweet, so what a great way to make this a different option to watch a game? Well just by adding the bits of Farmland® Bacon was enough.

My house smell so good while cooking and my family was so eager to eat the I hide most of the Farmland® bacon to make my recipe, it was really funny.

I’m sure you will enjoy making, tasting and smelling this recipe, and why not? Everything’s better with Farmland® Bacon.

INGREDIENTS

  • 1 can sweet corn
  • 1 can sweetened condensed milk
  • 1 cup pancake mix
  • 3 eggs
  • 1 stick butter, melted
  • 1 teaspoon vanilla extract
  • 1 12 oz package of Farmland® Bacon
  • 3/4 cup shredded unsweetened coconut
  • pinch of salt

DIRECTIONS

  1. Preheat the oven to 350° F,line some paper cups in a muffin tin and put that aside.
  2. Cook the bacon until crispy and drained the Farmland® Bacon in a towel-line plate. In a food processor place the rest of the ingredients minus the bacon, and blend until combine, add the bacon by hand, you want the bits of bacon not to small, this is why we are not putting them in the food processor.
  3. Pour the batter in the muffin tin, about 3/4 of the mixture and bake for 35 minutes.

Serve warm, or cold, perfect to nibble during any game.

This recipe makes 18 muffins.

So happy to be back this Sunday to share delicious and fabulous food with all of you. And what better way that with the #SundaySupper family.
Today we have delicious hometown food, smoothies classic and unique the you love to eat growing up.
When I was little my favorite food was always rice, yes, rice with all things you can imagine, and very close to my house was this place where they had all things rice, sweet, savory, baked, fried, Oh My! delicious, and once my family and I used to go.
I prepare for you one of my all time favorites, this rice is just the perfect combination of, sweet and savory food, a classic in my hometown and now a go to for your family supper.

INGREDIENTS

  • 1/2 cup minced onion
  • 1/2 cup minced red bell pepper
  • 1/2 cup minced cilantro
  • 3 cups parboil rice, already cook
  • 1 small can crushed pineapple
  • 3 cups cook pull pork
  • 3 teaspoon achiote powder
  • 1 teaspoon oil

DIRECTIONS

  1. Heat a pan to medium high heat, add the oil, onion and bell pepper, cook for 2 minutes, add the rice (remember the rice needs to be completely cook, and season with salt) and the achiote powder, mix until combine, than add the pull pork and mix until all the rice is uniformly with achiote and pork.
    Before serving add the cilantro.
  2. This recipe makes 6 servings.

Cooking time: 15 minutes

Coconut Banana Bundt CakeDelicious and different is what I made this month for the #BundtBakers group and our goal it was to make a delicious bundt with coconut.
And of course coconut is one of my favorite ingredients ever, am always trying to make different recipes sweet and salty so you can incorporate this versatile ingredient.
Even the most simple recipe turn into something so delicious with just a pinch of coconut.
My bundt cake is so easy, moist and tropical, I know we need more tropical recipes in winter, so cold outside.
If you want your house to smell amazing and keep your buns warm, I highly recommend to start baking, specially todays delicious coconut bundt.

INGREDIENTS

  • 2 cups Flour
  • 3 mashed bananas
  • 3 eggs
  • 1 1/4 teaspoon baking soda
  • 1 1/4 teaspoon baking powder
  • 1/2 cup coconut oil
  • 2/3 cup half and half
  • 1 teaspoon ground cinnamon
  • 1 cup unsweetened grated coconut
  • pinch of salt
  • 1 teaspoon vanilla extra
  • 2 1/2 cup super fine sugar

DIRECTIONS

  1. Preheat the oven to 350 ° F.
  2. Prepare a bundt cake mold with cooking spray, cover completely.
  3. In a bowl mix flour, baking soda, baking powder, cinnamon and salt.
  4. In a different bowl mix, bananas, oil, eggs, half and half, sugar, vanilla extra, mix well until everything is fully incorporated, then add the dry ingredients in 3 additions, you don’t need a stand mixer to make this cake.
  5. When everything is well incorporated, add the grated coconut, mix and place the batter in the bundt cake mold.
  6. Bake for 50 minutes. Let it cool for 15 minutes and place on a cooling rack to cool completely.

This recipe make 1 bundt cake.

Mini Sweet Cheese Empanadas #TheLeftoversClub

FullSizeRenderThe best way to start the new year is by sharing sometime delicious with a friend, and in this occasion and so happy to be sharing this delicious recipe with my friend Elizabeth and all of you the enjoy #TheLeftoversClub.

I made a classic favorite in my house, so I hope she likes it, easy, sweet, salty, crunchy and mini empanadas are perfect for a snack, coffee time or a party. Delicious, different and great for sharing.

INGREDIENTS

  • 1/2 cup cream cheese
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon vanilla extra
  • 2 sheets of refrigerated pie crust

DIRECTIONS

    1. Preheat the oven to 350°F.
    2. Roll out the pie crust and use a cookie cutter to cut circles, in a bowl mix together cream cheese, sugar and vanilla, and place 1/2 teaspoon on the center of each circle.
    3. Form the empanadas by folding the other half of the dough, close then very well of the filling can come out and we don’t want that.
    4. Bake for 12 minutes.

This recipe makes 24 mini empanadas.

Quinoa Pumpkin MuffinsYes, the #BreadBakers team are using quinoa this time, and we want to give you a bunch of ideas so you can start using this different, healthy and versatile ingredient.
I want to tell you the you can find, all kinds of Quinoa products, flour, pasta, raw, and event precook quinoa, it is a different option if we are trying to lower our carbs and perfect if you want to change the traditional wheat bread.
I made, this easy pumpkin and quinoa muffins, using only quinoa flour and some other ingredients the can give it a better taste, I need to make it more decadent so my family would eat it.
I also made a crumble, very tasty and delicious, a little crunch to a soft and perfect crumb.
Delicious warm with tea or coffee or a hot chocolate, for this winter days.

INGREDIENTS

  • 1-15 ounces can Pumpkin Puree
  • 2 cups quinoa flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • pinch of salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil
  • 1 cup sugar
  • 3/4 cup half and half
    Crumble
  • 1 cup quick oats
  • 2 tablespoons butter
  • 3 tablespoons brown sugar
  • 1/2 finely chopped pecans

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl mix together, flour, cinnamon, nutmeg. baking powder and salt, set aside.
  3. In the bowl of the stand mixer, beat eggs, oil and sugar, in medium speed, then add pumpkin puree, vanilla and half and half, mix well, add the dry ingredients and mix just to combine.
  4. Pour the batter in a muffin tin already with some muffin liners.
  5. Mix the ingredients for the crumble and place about a teaspoon on each muffin, bake for 20 minutes.

This recipe makes 12 muffins.

APPLE CINNAMON GALETTE

INGREDIENTS

  • 1- 20 ounces can of apple pie filling.
  • 1- 9 inch sheet already made pie crust
  • 1 teaspoon ground cinnamon
  • 2 teaspoons sugar
  • 1 egg
  • 1 teaspoon water

DIRECTIONS

Preheat the oven to 350°f.
Place the pie crust on a baking sheet and add the filling in the center of the crust.

Fold the rest of the pie crust, this is a very simple recipe don’t worry if the border doesn’t look perfect.
Mix the egg with the water, brush the border and sprinkle the cinnamon and sugar previosly mix together.
Bake for 35 minutes or until golden brown.

This recipe makes 6 servings.
