Lemon Blueberry Cookies #CreativeCookieExchange

lemon blueberry cookiesOk guys is the time to share delicious cookies, are you ready? Well this month we have a variety of cookies inspired in next month independence day, so you can plan ahead for the picnic or family gather.
All things delicious, with different ingredients and all shapes and colors.
I made this lemon blueberry cookies, pack in fresh blueberries, and refreshing lemon flavor, they are like cake type of cookie, so not the typical crunchy cookie, but super delicious.
I hope you like them as much as we did.

INGREDIENTS

  • 2 tablespoons cream cheese
  • 1/2 cup of butter (1 stick)
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 cups AP flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • the zest of one lemon
  • 1 cup fresh blueberries
  • pitch of salt

DIRECTIONS

  1. Preheat the oven to 325° F.
  2. Place sugar, brown sugar, cream cheese and butter in the bowl of a stand mixer and cream for 5 minutes, add the egg and mix for 1 more minute.
  3. Add vanilla extract, in another bowl mix together flour, salt, baking powder and lemon zest, and alternate with the milk to the above mixture.
  4. Add by hand the blueberries and incorporate very carefully,
  5. Chill for 1 hour.
  6. After the hour place the dough in little balls, about 1 tablespoon each, and bake for 20 minutes or until golden brown.

This recipe makes 30 cookies.

Preparation time: 20 minutes plus 1 hour of chilling
Cooking time: 20 minutes

Coconut Dulce de Leche Cookies #TheLeftoversClub

coconut dulce de leche cookiesFor this month #TheLeftoversClub I decide to make this super delicious cookies with some homemade Dulce de Leche that is just delicious, and I really hope my friend Cheralee Stover, love just as much as we do.
Mix in with some coconut and other addictive ingredients, like butter, this cookies are perfect for a snack or just to sweet a little your day, in any case you don’t need any excuse to enjoy this fabulous cookies.

INGREDIENTS

  • 1 stick butter
  • 1/2 cup sugar
  • 2 cups AP flour
  • 1 teaspoon baking powder
  • 1 cup of Dulce de Leche
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup graded coconut
  • pinch of salt

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a stand mixer cream sugar and butter for 5 minutes, add the dulce de leche, egg and vanilla extract mix until incorporated, then add all the dry ingredients, and mix for 3 minutes, then add by hand the coconut.
  3. With a 1 tablespoon ice cream scoop, add scoops of the batter in a cookie sheet, and bake for 15 minutes.

This recipe makes 30 cookies.

Dulce de Leche Cookie Bars #CreativeCookieExchange

dulce de leche cookiesOh yes! we have cookies again, and we are celebrating a little early 5 de Mayo, because we want for you to have all what you need before this huge celebration.
All the cookies the we make today are inspired in this celebration, all Mexican or latin inspired cuisine.
I made, this delicious Dulce de Leche cookies, so easy and so good, they are made with only a few ingredients and I know you don’t believe it but the flavor of the dulce the leche is not heavy, so you can enjoy more then one piece, and the change I did is the instead of round cookies I spice it up by making little squares or bars, easier and different you know me I’m very practical, I like simple and easy recipes.
And know you just need to buy or make a good Dulce de Leche so you can make this super delicious cookies, and share with your family and friends, and don’t forget to make some extra for your 5 de mayo celebration too.

INGREDIENTS

  • 1/2 cup sugar
  • 1 stick softened butter
  • 1 /2 cups AP flour
  • 1 teaspoon baking soda
  • 3/4 cup Dulce de Leche
  • pinch of salt

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl of a stand mixer, cream sugar and butter for 5 minutes, then add the dulce de leche, in other bowl mix flour, salt and baking soda and add to the mixture above, place the dough in a 8×8 pyrex, previously grease, and distribute well in the pyrex.
  3. Bake for 30 minutes.
  4. Cool completely before cutting in pieces, if you prefer, you can shape in round cookies.

This recipe makes one hold cookie.

hazelnut espresso cookiesAnd here we are again, so happy to share this recipe with all of you, is different and so delicious with a cup of coffee.
Our group this month is giving ideas in cookies incorporating coffee or tea, and let me tell you Yes! What a great theme.
And of course I create this delicious chewy, crunchy, nutty and with a hint of espresso to wake u up, just in case you need it.

INGREDIENTS

  • 2 sticks soften butter
  • 1 cup brown sugar
  • 1/2 cup withe sugar
  • 2 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 1/2 teaspoon grown espresso coffee
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup chopped hazelnuts

DIRECTIONS

  1. Preheat the oven to 325°F.
  2. Cream butter and sugars, add eggs one by one.
  3. In a bowl mix flour, salt, baking powder, espresso powder and nutmeg.
  4. To the butter mixture add, vanilla and the dry ingredients, mix until incorporated, about 2 minutes.
  5. Add by hand the hazelnuts.
  6. Prepare 2 baking sheets with parchment paper, with an ice cream scoop pour scoops of the cookies in the baking sheet, living a good space between them.
  7. Bake for 12 minutes of until golden brown.

This recipe makes 16 cookies.

INGREDIENTS

  • 1 cup AP flour
  • 1 teaspoon baking powder
  • 1/2 cup chopped nuts
  • 1/2 cup nutella
  • 1/2 cup dry cranberries
  • 1 stick unsalted softened butter
  • 1 cup brown sugar

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In the bowl of a stand mixer cream butter and sugar , add cranberries, nuts, nutella and flour mixed with the baking powder, mix for 2 minutes.
  3. With an 2 tablespoons ice cream scoop, grab portions of the dough and place on a baking sheet, bake for 8 to 12 minutes, depending on your oven.
  4. Place the cookies on a rack to cool.

This recipe makes 24 cookies.

Almond Sour Cream Cookies #TheLeftoversClub

almond SC cookiesThis is my first time participating in this group and let me tell you is bean a great experience, first I love getting delicious treats on the mail, Who doesn’t? and second meet new people is jus amazing.
I not sure if I did a good job but you know, in life you need to make mistakes to learn the right way of doing things.
So let me tell you what I made, this unique and delicious, soft and crunchy almond and sour cream cookies, and o my they are amazing, is not a strong flavor of almonds but when you take a bite and feel little pieces of almonds on then is just out of this world.
Its bean an amazing experience and the best part you are here to enjoy more and more delicious recipes.

INGREDIENTS

  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1 egg
  • 1 1/2 stick of butter
  • 1/3 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1/3 cup almond flour
  • 2 1/2 cup AP flour
  • 1/2 cup chopped almonds

DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Mix butter and sugar for 3 minutes, sift together flour, baking powder, baking soda and salt, add to the bater the sour cream, vanilla extract, almond extract, and egg.
  3. Add the dry ingredients and the almond flour and beat for 2 minutes in low speed, add the chopped almonds by hand.
  4. Divide the batter in 2 logs cover with plastic and refrigerate for 2 hours.
  5. Cut in 1 inch pieces to form the cookies and place in a grease baking sheet, bake for 8-12 minutes or until golden brown.
  6. Smear all kinds of delicious things on them like, nutella, cream cheese, honey, jam, dulce de leche, etc.

This recipe makes 36 cookies.

I make for you in this occasion Spooky Cookies, delicious sugar cookies decorated with Royal Icing. This recipe is not only delicious and easy but is a fabulous way to involve your kids and spend quality time with them, I know your going to love how easy and cute this cookies are.

INGREDIENTS

  • 2 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 sticks butter, softened
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/2 sugar

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a large bowl, beat the butter with sugar until light and fluffy, beat in egg and vanilla extract. Mix flour, baking powder and salt and add to butter mixture in 3 additions.
  3. Do not chill the dough, divide into two balls.
  4. On floured surface, roll each ball in 1/8 in. thick and using a cookie cutter, cut to shape each cookie. Bake on a cookie sheet for 8-12 minutes or until cookies are lightly browned.
  5. Once ready place on a rack to cool completely before icing.
  6. I used Royal Icing to decorated the cookies, but you can used any icing and decoration you want.

Yields 32 cookies.

Cooking time: 12 minutes

  • 3/4 cup powder sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • Zest of one orange
  • 1/8 teaspoon salt

DIRECTIONS

  1. Preheat the oven to 325° F.
  2. Beat the sugar with the butter for 4 minutes, in a bowl mix the flour, baking powder and orange zest, add this to the butter mixture with the vanilla.
  3. Roll the dough in a surface with little flour, cut the cookies, choose the shape your kids love the most, place on a baking sheet and bake for 15 minutes.
  4. Once ready place on a rack to cool.
  5. This recipe makes 36 cookies.

Lemon Cookies for a Citrus #SundaySupper

And this week we want to inspire you with recipes full of citrus, so you also begin to fill your kitchen with these colors.
The #SundaySupper team has prepared a variety of dishes inspired by these flavors, delicious recipes to prepare this summer.
Stay with us and delight yourself with the wonderful aroma of citrus to awaken all your senses.

INGREDIENTS

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 stick of room temperature butter
  • 8 ounces cream cheese at room temperature
  • 1 cup sugar
  • The zest of one lemon
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped walnuts

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl sift flour, baking powder and salt.

Beat sugar, cream cheese and butter for 5 minutes or until the mixture is smooth.
Add the lemon zest and grated ginger with vanilla extract, add the flour gradually and finally incorporate the nuts.

Using an ice cream scoop, place the mixture in portions in previously greased trays.
Bake for 20 minutes or until cookies are lightly browned.
Once baked, place the cookies on a wire rack to cool completely.

This recipe makes 32 cookies.

This type of cookies have a cake-like texture, so you must be very careful with the baking time.
