Green Rice #SundaySupper

green riceToday we are getting ready for ST. Patrick’s Day and we put together our most amazing green recipes for this day, a little help to get you up and ready for tomorrow.
And because spring is here is a good excuse to start with some greens by your side.
So grab a chair, a drink and enjoy this fabulous recipes.
I made for you Green Rice, this is a very popular side among my family, is my grandmother favorite rice, because is full of cilantro and of course as a good latin woman, cilantro is always in our house.
Is easy and good with any type of meat or fish, great for a family gathering or even a social event.
I’m sure you are going to love it.

INGREDIENTS

  • 3 cups water
  • 1 1/2 cups long grain rice
  • 2 big handfuls of cilantro
  • 2 mince garlic cloves
  • 1/4 cup mince onion
  • 1/2 teaspoon oil
  • Salt to taste

DIRECTIONS

  1. Heat a heavy-bottomed pot to medium low heat add oil, onion, garlic and rice, cook for 2 minutes, add salt to taste, blend water with cilantro, add to the rice, when start boiling, lower the heat and cover with the lit, and cook for 20 minutes.
  2. After the 20 minutes check the rice, stir and taste a little peace this one have to be soft and completely cook, it doesn’t cook for 10 more minutes.
  3. Serve warm and the leftovers are delicious the next day too.

This recipe makes 3 cups of rice one cook.

Dulce de Leche Croissants #TheLeftoversClub

dulce de leche croissantsOh my, its bean a couple of difficult weeks for me, and let me tell you bean sick and having my kids sick has complicated everything.
I don’t want to give u a lot of horrible news, no, no, no, I just telling you this because, this recipe was an idea so simple the I couldn’t believe.
This is for #TheleftoversClub and you know the each month we share recipes the we actually email to each other, so fun and delicious way to make friends right? And this croissants are indeed the perfect sweet and salty snack you ever have, I sure my friend is going to love them and she would be so happy to see how easy they are.
A little history of the recipe, my family love, love, love croissants and from time to time I made them from scratch but let me tell when I’m sick is so difficult to do that, the I actually keep some Pillsbury crescent and biscuits just in case, and in my house you can always find dulce de leche and nuts, so what a perfect combination.
So I hope you find this recipe delicious, easy and incredibly irresistible.

INGREDIENTS

  • 2 tubes of Pillsbury® Crescent Rolls
  • 1/3 cup dulce de leche
  • 3/4 cup mince mix nuts
  • 1 beating egg

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. Unwrap the crescent and separate in individual pieces, place 1/2 teaspoon in the middle and some nuts and roll to form the crescent, brush the egg on top of each one and sprinkle more nuts, it will look beautiful.
  3. Place on a baking sheet and bake for 12 minutes.

This are delicious and the perfect snack for the kiddos.

Yields 16 crescents.

Strawberry Pound Cake #TwelveLoaves

strawberry pound cakeI’m so happy to be back and baked in this group, it fell really good.
And this month we are baking with my daughter favorite fruit, Strawberry, oh my all the possibilities the you can make with this fruit is just perfect for anything.
I made a pound cake, classic and delicious, perfect for a rainy or snowy afternoon; if thats the case, and of course you can eat it just like that it is the most fabulous and easy cake you can make.
I hope you make it and love it just as much as my family do.

INGREDIENTS

  • 3 cups flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 sticks butter
  • 1 1/2 cups sugar
  • 1 cup milk
  • 3 cups of chopped fresh strawberries
  • 1 tablespoon orange zest

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl sift flour, baking powder and salt, sit aside.
  3. In a stand mixer with a paddle attachment cream sugar and butter for 5 minutes, add eggs one by one, mix vanilla with milk and start adding dry ingredients with wet ingredients in 3 additions, starting with dry and finishing with dry.
  4. Then add by hand the strawberries, be very careful and incorporate well.
  5. Pour the batter in 2 loaf pans equally distributed.
  6. Bake for 1 hour, once bake let cool for 20 minutes take out of the pan and place on a rack to cool completely.

This recipe makes 2 small pound cakes.

Tomato and Peppers Frittata #weekdaysupper

tomato and peppers frittataI’m very happy to share this recipe, very simple but full with vitamin C and super healthy.
We are trying more healthy food in my family and I always try to make simple, delicious food, specially for my kids because they are a little picky when it comes to food.
And I make this frittata with egg whites lower calories and fat, a different approach to the classic, different but delicious and I sure your family will enjoy it too.

INGREDIENTS

  • 8 egg whites
  • 3 cups tomato cherry in have
  • 2 cups red bell peppers Julianne
  • 1/2 cup minced onion
  • Salt and pepper to taste
  • 1 teaspoon butter

DIRECTIONS

  1. Cup tomatoes, peppers and onions in a little oil, let it cool then mix with the egg whites add salt and pepper.
  2. In a pan on medium heat melt the butter pout the egg mixture cover with a lit and cook for 8 minutes.
  3. Check the center to make sure the it is completely cook.

Serve immediately.

Yields 8 servings.

Low Calorie Turkey Chili #SundaySupper

low calorie turkey chiliAnd we have chili today, Oh my! yes today is a chili sunday in a good way, and this is my first time making it, and let me tell you I love the experience of making chili, is so different and delicious, yum!
The #SundaySupper team is doing a chili cook off and we want you to participate and choose the best recipe.
I made turkey chili, low calorie chili, because I want to enjoy a good bowl of chili without all the gilt and don’t think this chili is zero flavor, no, no ,no it has so much flavor the you won’t believe is low calorie.
So come and enjoy this recipes, vote for your favorite and I hope my recipe inspire you to make your own.

INGREDIENTS

  • 1 pound ground turkey
  • 1 14 ounces can tomatoes with chili
  • 1 can low sodium pinto beans 14 ounces drained and rinse
  • 2 cups tomato sauce
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cloves of garlic minced
  • 1/2 cup chopped red bell pepper
  • 1/2 teaspoon butter
  • 1 teaspoon ground oregano
  • 1/2 teaspoon cumin
  • 2 tablespoons ketchup
  • salt and pepper to taste

DIRECTIONS

Heat a pot and melt the butter, cook onions, celery, garlic, bell peppers, oregano and cumin for 5 minutes on medium heat, add the turkey and cook for 5 minutes more.
Add the can of tomatoes with chili, stir, add tomato sauce, pinto beans, ketchup, salt and pepper, lower the heat and let it boil for 10 minutes.
You can serve this chili with a side of fat free sour cream, fresh pico de Gallo and low fat cheese.

Calories per serving 285 Fat 120

Yields 4 servings.

Orange Chocolate Bundt Cake #BundtBakers

orange chocolate bundt cakeI’m so exited to be back to this group, this is a theme the I really love because my family enjoy so much when I made bundt cakes, the at least once a month I made one.
And this month of course we needed to create a bundt full of chocolate and love, well let me tell you a little secret, I prefer chocolate chunks or chips in the cake than the hold chocolate cake.
We think is more fun that way, and this is my inspiration for this bundt, the perfect combination of orange and chocolate, little pieces of chocolate the melts in the citrus delicious flavor of the orange, so good with my coffee right now.
Ok sorry about that, I needed to take a bite out of my cake, so good, that am sure you are going to be all over this bundt after you make it.
And of course, the other delicious, bundts the my friends made to inspired you.
Put on your apron and start mixing, the kitchen is waiting for you.

INGREDIENTS

  • 3 cups AP flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 4 eggs
  • 1/2 cup orange juice
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 stick butter at room temperature
  • 1 1/2 cup sugar
  • zest of 1 orange
  • 6 onzes semisweet chocolate chunks mince

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a bowl sift flour, baking powder, baking soda, salt, then add the orange zest.
  3. In other bowl or stand mixer, cream sugar and butter for 5 minutes, then add the eggs one by one and vanilla extract, mix for 2 minutes.
  4. Start adding dry ingredients alternating with the orange juice mix with buttermilk, mix just to incorporate, add the pieces of chocolate by hand, trying to mix the chocolate in  the cake.
  5. Place the mixture on a grease bundt pan and bake for 1 hour.

Yields one bundt cake.

  • 1/2 cup nutella
  • 1/2 cup dry cranberries
  • 1 stick unsalted softened butter
  • 1 cup brown sugar

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In the bowl of a stand mixer cream butter and sugar , add cranberries, nuts, nutella and flour mixed with the baking powder, mix for 2 minutes.
  3. With an 2 tablespoons ice cream scoop, grab portions of the dough and place on a baking sheet, bake for 8 to 12 minutes, depending on your oven.
  4. Place the cookies on a rack to cool.

This recipe makes 24 cookies.

Almond Sour Cream Cookies #TheLeftoversClub

almond SC cookiesThis is my first time participating in this group and let me tell you is bean a great experience, first I love getting delicious treats on the mail, Who doesn’t? and second meet new people is jus amazing.
I not sure if I did a good job but you know, in life you need to make mistakes to learn the right way of doing things.
So let me tell you what I made, this unique and delicious, soft and crunchy almond and sour cream cookies, and o my they are amazing, is not a strong flavor of almonds but when you take a bite and feel little pieces of almonds on then is just out of this world.
Its bean an amazing experience and the best part you are here to enjoy more and more delicious recipes.

INGREDIENTS

  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1 egg
  • 1 1/2 stick of butter
  • 1/3 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1/3 cup almond flour
  • 2 1/2 cup AP flour
  • 1/2 cup chopped almonds

DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Mix butter and sugar for 3 minutes, sift together flour, baking powder, baking soda and salt, add to the bater the sour cream, vanilla extract, almond extract, and egg.
  3. Add the dry ingredients and the almond flour and beat for 2 minutes in low speed, add the chopped almonds by hand.
  4. Divide the batter in 2 logs cover with plastic and refrigerate for 2 hours.
  5. Cut in 1 inch pieces to form the cookies and place in a grease baking sheet, bake for 8-12 minutes or until golden brown.
  6. Smear all kinds of delicious things on them like, nutella, cream cheese, honey, jam, dulce de leche, etc.

This recipe makes 36 cookies.

Plantains and Cream Cheese Dip #EasySnacks

plantain cream cheese dipWithout a doubt this is a new kind of dip the will pull your socks off.
OH! yes this is deliciously amazing, and so different of anything you ever try before, perfect for a party, delicious as a snack and even as a spread for a sandwich.
This dip made with ripe plantains is sweet, tangy and oh so good, you won’t believe it.
This will be your go to dip for any occasion and am sure your guest will love it too.
Enjoy.

INGREDIENTS

  • 2 very ripe plantain (I prefer the ones super black)
  • 1 8-ounces package of cream cheese
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt.

DIRECTIONS

  1. Cut the ends of the plantains, then cut it in 3, don’t peel the skin, place the pieces in a pot with water and cook for 10 minutes, we are cooking it this way so it can be soft and more sweet.
  2. After is cook, peel the skin and place in a food processor with the rest of the ingredients, process until well combine and presto, is ready.
  3. Serve with pretzels, chips or tortilla chips, the saltiness and the sweet of the dip taste amazing.

This recipe makes 1 bowl of dip.

Sesame Croissants #EasySnacks

Sesame CroissantsOk let me tell you a little bit about this croissants, my daughter is a #1 fan of them and she is always asking me to make croissants for her every single day, so one day I went shopping and found a box with 5 cans of pillsbury crescents roll, amazing. Well, since that day I bean making all kinds of fillings and shapes with this rolls.
And is great for an easy afternoon snack.
This recipe in particular is her favorite and I super happy to share it with you, I know it is not a from scratch recipe but on an every day basis we don’t have time to make the dough and wait.

INGREDIENTS

  • 1 can Pillsbury crescents rolls
  • 16 tablespoons sesame seeds
  • 2 tablespoons melted butter

DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Open the can and separate the croissants, brush melted butter on both sides and sprinkle the sesame seed, one tablespoon on each side, form the croissants.
  3. Place on a baking tray and bake for 11 minutes.
  4. Let it cool and enjoy.

Yields 8 rolls.
