Pumpkin Pudding #SundaySupper

Pumpkin PuddingWhat a fabulous theme we have this week, we were challenge to make something relate to our favorite movie or song, and of course I pick the want am the #1 fan, my all time favorite anytime of the year, Nightmare Before Christmas.
I just love the movie so much the I have a lot of stuff of the characters, specially Jack Skellington.
So I made in his honor this gluten free, low fat, low sugar, Pumpkin Pudding, a delicious option to for a light dessert after the holiday dinner, cuddle with your favorite blanket and watching this awesome movie.
Enjoy.

INGREDIENTS

  • 2 cups pumpkin puree
  • 1 stick butter melted
  • 1/4 teaspoon salt
  • 1 can evaporated milk
  • 3 eggs
  • 1/3 cup brown sugar + 2 tablespoons
  • 6 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon butter

DIRECTIONS

  1. Preheat the oven to 350° F.
  2. Spray a baking dish with some cooking spray, sprinkle the 2 tablespoons of brown sugar and the tablespoon of butter, then add the rest of the ingredients to a blender and blend until combine.
  3. Pour over the mixture above and bake for 1 hour or until completely firm.
  4. You can serve warm or cold, add apples or pears and even as an individual dessert with some homemade whip cream.

This recipe makes 1 hold pudding.

Cooking time: 1 hour

Pumpkin Sweet Rolls #SundaySupper

pumpkin sweet rollsThis is just the most simple, delicious, low in sugar cinnamon you’ll find, is just perfection in a bite.
And this week our host for #SundaySupper Heather from girlichef, give the challenge to make any recipe with squash, and happened the I have a can of pumpkin puree, I need it to use it ASAP, this theme was perfect for me.
So, I made this amazing rolls, not your typical cinnamon roll, no, this is beyond that.
I personally love this recipe, because, is very low in sugar, so when you eat this rolls is not gonna be over sweet.
And the best part you can eat it with or without a frosting.
I hope you love them as much as I and enjoy at any hour of the day.

INGREDIENTS

FOR THE BASIC DOUGH

  • 3 packages of active yeast
  • 5 cups flour
  • 1/2 cup melted butter
  • 1/2 cup honey
  • 2 eggs
  • 1 3/4 cups warm water
  • 2 teaspoons salt

FOR THE FILLING

  • 3/4 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 2 teaspoon cinnamon

DIRECTIONS

  1. Preheat the oven to 400°F.
  2. In the bowl of a stand mixer, combine the yeast and the warm water, let it rest for 5 minutes, then in low speed add honey, eggs and butter, still in low speed add salt and the flour 1 cup ad the time until the dough pulls away from the sides of the bowl.
  3. Once ready, place the dough in a lightly flour surface, roll out to form a rectangle, then start with the filling, first spread the pumpkin puree and after that sprinkle the cinnamon, brown sugar and the pecans.
  4. Roll in the dough and cut in 1″ pieces, about 30 small pieces or 22 medium pieces, that is up to you. Place in a grease baking dish. Cover with a towel and let it rise for 20 minutes in a warm place.
  5. Before baking spread some melted butter.
  6. Bake for 25 to 28 minutes.
Preparation time: 40 minutes
Cooking time: 30 minutes

Spooky Cookies Halloween Party #SundaySupper

Spooky CookiesThis is a very exciting event, hosting for the first time celebrating Halloween is amazing, what a great opportunity is this one.
We have delicious, easy, sweet, salty and incredible recipes for you today, all made by this fabulous group, especially think to change a little bit this Halloween and make you want to go in the kitchen.
I make for you in this occasion Spooky Cookies, delicious sugar cookies decorated with Royal Icing. This recipe is not only delicious and easy but is a fabulous way to involve your kids and spend quality time with them, I know your going to love how easy and cute this cookies are.

INGREDIENTS

  • 2 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 sticks butter, softened
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/2 sugar

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a large bowl, beat the butter with sugar until light and fluffy, beat in egg and vanilla extract. Mix flour, baking powder and salt and add to butter mixture in 3 additions.
  3. Do not chill the dough, divide into two balls.
  4. On floured surface, roll each ball in 1/8 in. thick and using a cookie cutter, cut to shape each cookie. Bake on a cookie sheet for 8-12 minutes or until cookies are lightly browned.
  5. Once ready place on a rack to cool completely before icing.
  6. I used Royal Icing to decorated the cookies, but you can used any icing and decoration you want.

Yields 32 cookies.

Preparation time: 15 minutes
Cooking time: 12 minutes
Level of the recipe: Easy

Guava BBQ Sauce #SundaySupper

Guava BBQ SauceThis sunday we have delicious and amazing sauces, sweet and savory, yep we have everything for you.
I made something different this time and because I know football season brings a lot of grilling, I thought the this BBQ sauce is just right, Guava BBQ Sauce is delicious, great in poultry or pork, for dipping and to shake it up a little bit a traditional staple in our house.

INGREDIENTS

  • 6 ounces Guava paste
  • 1 cup water
  • 1/3 cup cider vinegar
  • 1 tablespoon soy sauce
  • 1/4 cup molasses
  • 2/3 cup ketchup
  • 1 mince garlic clove
  • 1 teaspoon salt

DIRECTIONS

  1. Heat a sauce pan to medium heat add the guava paste and the water and simmer until the paste is completely dissolved, about 5 minutes, then add the rest of the ingredients, mix well and let it simmer for 10 minutes.
  2. Cool completely before store in the fridge or used immediately with you grill chicken or winds.

Yield about 2 cups.

Preparation time: 10 minutes
Cooking time: 15 minutes

Choco-Caramel Bars Crunchy #SundaySupper

Choco-Caramel BarsIf you had a sweet spout for crunchy food, this is the day the you may satisfied.
The #sundaysupper team had all crunchy delicious recipes to enjoy, and don’t think is only sweet, we made all kind of great food, of course the crunchy way.
Stick with us today and check all the recipes, I made for you this super crazy but delicious choco-caramel bars yep chocolate and caramel in one YUM! with a thin layer of crust to make it even more succulent.
I know this bar is going to be a new favorite in your house for now on.

INGREDIENTS

  • 1/2 cup almond flour
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/2 cup oats
  • 1 stick butter room temperature
  • 10 ounces of caramels any brand you want.
  • 2 teaspoons water
  • 7 ounces chocolate chips

DIRECTIONS

  1. Preheat the oven to 325° F.
  2. In a bowl mix the two flour, sugar, oats, and butter, until incorporate, place this mixture in a 8×8 pyrex and bake for 20 minutes.
  3. In the meant time melt the caramels with the water in a pan on low heat, and wait to the last 3 minutes to melt the chocolate.
  4. Once the base is ready, pour the melted caramels and then pour the chocolate on top, let this deliciousness cool completely before cut in to it.

This recipe makes 1 8×8 pyrex or about 20 bars.

Fried Yucca with Pink Sauce #Tailgate #SundaySupper

Fried Yuca with Pink SauceCollege football, NFL, Formula 1, soccer, this is the time of the year when we pull out our chair in from of the t.v. with friends and family to enjoy all the sports.
And we have so many recipes for you today to make and be part of this great season.
I made for you something very traditional and delicious, Fried Yuca, this is a root vegetable very starchy like a potato, and we made a lot of different recipes with this versatile vegetable.
I really encourage you to try it, you will be amaze how different and delicious it is.

INGREDIENTS

Yuca

  • 2 bags of Frozen Yuca (I recommend the one from Goya Foods)
  • 2 teaspoons of salt
  • 2 teaspoons of lemon
  • oil for frying

Pink Sauce

  • 3/4 c Ketchup
  • 2/3 c Mayonaisse
  • 1 teaspoon dijon mustard
  • 2 teaspoon sweet relish

DIRECTIONS

  1. In a pot with boiling water add the salt, lemon and yuca, cook for 30 minutes.
  2. Once cook use a colander to strain the water and let it cool completely.
  3. In the mind time you can make the pink sauce, just mix all the ingredients together until well combine, refrigerate.
  4. In a cast iron skillet or frying pan heat the oil and add the yuca, taste the oil by adding a little piece of the yuca if sizzle is ready, fry for 5 minutes each side of until brown, crispy and yummy.

This recipe makes about 30 pieces of fried yuca.

Preparation time: 20 minutes
Cooking time: 40 minutes total
Level of the recipe: Easy

Stir-Fry Rice with Turkey Bacon and EggsInspired by all the kinds of bacon that you can find on the market and because on a holiday I want to relax and cook something simple, I create this delicious, easy and super fast recipe, that way you can relax with me this Labor Day.
Our friend Foodie Stuntman is hosting this week a fabulous event, celebrating Labor Day and the unofficial ending of the summer, which is really sad, and we join him with delicious recipes so you can also be inspired by great food, drinks and desserts.
So grab a chair a plate and some napkins because you are here for a feast.

INGREDIENTS

  • 8 slices of turkey bacon chopped
  • 3 cups of cooked white rice
  • 2 garlic cloves mince
  • 2 cooked scramble eggs
  • 1 teaspoon sesame oil
  • 4 tablespoons soy sauce
  • 2 cups frozen peas
  • Salt to taste (if necessary)

DIRECTIONS

Heat a pan to medium high heat, add the oil,  turkey bacon and garlic, cook for 5 minutes, add the rice and soy sauce, mix add the peas and the eggs, stir until well combined. Taste the rice before serving to check the salt.
Serve immediately, is better hot with a side of cucumbers or a salad.

Serve 4 people.

Desserts in Jars Girl Scout Adventure by the Book Event. #DessertinJars

DIJ-CoverI had the pleasure to attend this great event featuring the cookbook Desserts in a Jar by Shaina Olmanson, which is very popular because the facility the is to make this kind of desserts as a gift, go to meal or just a different way to serve in your house.
In this particular event the girl scout of San Diego were invited to join Executive Chef Bridget for a #Dessertsinjars adventure, by recreating one of the recipes on the book Campfire Bars in Jar. Just in time for summer camping.
In this event we learn about the book Desserts in Jars, includes 50 inventive ideas full of sugar and spice and a whole lot else that is nice, from cobblers and custards to cupcakes and creme brulees, all presented beautifully in a jar. Some of the desserts are baked right in the jar, while others use the jar as an easy and elegant serving dish.
For gift-giving, there is a special chapter devoted to mixes with dry ingredients attractively layered in the jar, this is the best gift to give in birthdays, anniversaries, christmas, etc.
Is a must have book and we highly recommended.

CAMPFIRE BARS MIX RECIPE

  • 1 cup graham cracker pieces, each about 1-inch square
  • 1 1/2 cups mini marshmallows
  • 3/4 cup milk chocolate chips
  • 1/2 cup granola
  • 1/3 cup packed light brown sugar
  • 1/2 cup chopped almonds

DIRECTIONS

In a 1-quart jar, layer the graham crackers, marshmallows, chocolate chips, granola, brown sugar, and almonds. Seal with the lid decorate the jar if you like, and attach a label with this instructions for the recipient:
To make the bars: 1 stick of butter melted.. Preheat the oven to 350 F. Pour all the contents of the jar into a large bowl. Stir in the melted butter until all the pieces are coated. Press into a 9-inch square baking pan. Bake for 12 to 15 minutes. Allow to cool. Cut into bars and serve.

Sweet Corn Tamale (Tamal Asado) Global Street Food #SundaySupper

Sweet Corn TamaleI’m so exited for this week #SundaySupper and I know you will be too, we have street global food, the kind of food the makes us drool every time we walk by.
And this week we have a bunch of recipes so you can make delicious street food at home.
I made Sweet Corn Tamale or Tamal Asado this is a very popular bread in Costa Rica the you can find in all the farmers markets, restaurants and in every house with a good cup of coffee, is delicious, gluten free and no egg necessary, I’m sure you are going to love the mild flavor, the hint of coconut and of course the easy way the it is to make it.
Give it a chance and enjoy this sweet tamale, with some tea, coffee or just like this.

INGREDIENTS

  • 6 cups Masa Harina
  • 1 cup heavy cream
  • 2 cups half and half
  • 2 cups buttermilk
  • 1 can sweetened condensed milk
  • 1 cup sugar
  • 1 1/2 cups unsweetened coconut
  • 1 cup parmesan cheese
  • 1/2 teaspoon nutmeg
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 1 stick of butter melted

DIRECTIONS

  1. Preheat the oven to 350° F.
  2. In a heavy button pot mix the Masa Harina, buttermilk, half and half, heavy cream. Place the pot to medium high heat and add the rest of the ingredients, do not at the butter just yet. Let it cook for 10 minutes mixing constantly. Remove from heat and add the butter, stir and pour in to the mold.
  3. For this recipe you can use any type of mold the you want I used a bundt cake mold, but feel free to use wherever you have on hand just make sure is grease before adding the mixture.
  4. Bake for 1 hour, let it cold completely in the mold, refrigerate after cool.

This recipe makes one sweet tamale.

Cooking time: 10 minutes cooking 1 hour baking
Level of the recipe: Easy
