Spooky Cookies Halloween Party #SundaySupper

Spooky CookiesThis is a very exciting event, hosting for the first time celebrating Halloween is amazing, what a great opportunity is this one.
We have delicious, easy, sweet, salty and incredible recipes for you today, all made by this fabulous group, especially think to change a little bit this Halloween and make you want to go in the kitchen.
I make for you in this occasion Spooky Cookies, delicious sugar cookies decorated with Royal Icing. This recipe is not only delicious and easy but is a fabulous way to involve your kids and spend quality time with them, I know your going to love how easy and cute this cookies are.

INGREDIENTS

  • 2 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 sticks butter, softened
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/2 sugar

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a large bowl, beat the butter with sugar until light and fluffy, beat in egg and vanilla extract. Mix flour, baking powder and salt and add to butter mixture in 3 additions.
  3. Do not chill the dough, divide into two balls.
  4. On floured surface, roll each ball in 1/8 in. thick and using a cookie cutter, cut to shape each cookie. Bake on a cookie sheet for 8-12 minutes or until cookies are lightly browned.
  5. Once ready place on a rack to cool completely before icing.
  6. I used Royal Icing to decorated the cookies, but you can used any icing and decoration you want.

Yields 32 cookies.

Preparation time: 15 minutes
Cooking time: 12 minutes

Guava BBQ Sauce #SundaySupper

Guava BBQ SauceThis sunday we have delicious and amazing sauces, sweet and savory, yep we have everything for you.
I made something different this time and because I know football season brings a lot of grilling, I thought the this BBQ sauce is just right, Guava BBQ Sauce is delicious, great in poultry or pork, for dipping and to shake it up a little bit a traditional staple in our house.

INGREDIENTS

  • 6 ounces Guava paste
  • 1 cup water
  • 1/3 cup cider vinegar
  • 1 tablespoon soy sauce
  • 1/4 cup molasses
  • 2/3 cup ketchup
  • 1 mince garlic clove
  • 1 teaspoon salt

DIRECTIONS

  1. Heat a sauce pan to medium heat add the guava paste and the water and simmer until the paste is completely dissolved, about 5 minutes, then add the rest of the ingredients, mix well and let it simmer for 10 minutes.
  2. Cool completely before store in the fridge or used immediately with you grill chicken or winds.

Yield about 2 cups.

Preparation time: 10 minutes
Cooking time: 15 minutes
Level of the recipe: Easy

Coconut Almond Bundt with Chocolate DrizzleHello there let me tell you, this Bundt A Month is the sweetest thing ever, well if you love,love,love chocolate in any shape or form, this month is all about our favorite candy, mine is almond joy, coconut and almond with chocolate YUM!!
So I made a bundt inspired by this super delicious candy, and I know you are gonna ask me, wheres the candy in the picture? Well sorry but I eat it all before and forgot to leave some for the picture, 🙂
Ok lets focus, yes this is an easy recipe delicious flavor of coconut and drizzle with chocolate syrup, which by the way is not homemade, but you need some shortcut when the smell is so irresistible.
I’m sure the flavor, the soft crumb and that hint of almond are going to just do it for you.

INGREDIENTS

  • 3 cups flour
  • 1/2 cup almond flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon coconut extract
  • 4 eggs
  • 3/4 cup half and half
  • 1/2 cup sour cream
  • 2 sticks of butter
  • 1 1/2 cup sugar
  • 1 cup hot fudge the brand of your choice

DIRECTIONS

  1. Preheat the oven to 350° F.
  2. Cream butter and sugar, in a bowl sift flour, baking soda, baking powder and salt then add the almond flour.
  3. To the sugar and butter add the eggs 1 by 1, vanilla and coconut extract, mix together half and half and sour cream, and add to the above mixture alternating with the flour.
  4. Grease the Bundt Cake mold and add this delicious mixture, bake for 1 hour.
  5. Once ready let it cool for 15 minutes in the mold the place in a rack to cool completely, with the fudge you can drizzle it over the cake or cut it in portions and drizzle one at a time.

Makes one bundt cake.

Cooking time: 1 hour

Garlic Herb Mini Rolls #TwelveLoaves

Garlic Herb Mini RollsIf you have a lot of root vegetables sitting in the pantry or the fridge and you look at them like What am I gonna do with this? Well let me tell you we have the answer.
The #TwelveLoaves team put together a list of amazing recipes for you, all different with ingredients you never imagine and so easy, super delicious.
I made garlic, onion, herb mini rolls a simple bread made with ingredients you had in your house everyday and something you can whip up really fast.

INGREDIENTS

  • 1/2 cup minced onion
  • 3 garlic cloves minced
  • 1 teaspoon dry oregano
  • 1/3 cup chopped parsley
  • 1 cup sheered Parmesan cheese
  • 4 tablespoons butter
  • 1 can of Pillsbury biscuits, I prefer the Grands Jr.
  • Salt and pepper to taste

DIRECTIONS

  1. Preheat the oven to 350° F.
  2. Heat a pan, melt the butter add onion, garlic, dry oregano and parsley cook for 3, add some salt and pepper, let it cool completely.
  3. In the meantime open the tube of grands and using a rolling pin roll out a little, this is just a step so we can add some of the filing.
  4. Ok know add a teaspoon of the mixture in the center of the dough and a little cheese and roll, just like when you make a taquito, place in a baking sheet line with parchment paper, easy cleaning, pour the rest of the mixture on top with more cheese and bake for 20 minutes.

Yields 10 mini rolls.

The #sundaysupper team had all crunchy delicious recipes to enjoy, and don’t think is only sweet, we made all kind of great food, of course the crunchy way.
Stick with us today and check all the recipes, I made for you this super crazy but delicious choco-caramel bars yep chocolate and caramel in one YUM! with a thin layer of crust to make it even more succulent.
I know this bar is going to be a new favorite in your house for now on.

INGREDIENTS

  • 1/2 cup almond flour
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/2 cup oats
  • 1 stick butter room temperature
  • 10 ounces of caramels any brand you want.
  • 2 teaspoons water
  • 7 ounces chocolate chips

DIRECTIONS

  1. Preheat the oven to 325° F.
  2. In a bowl mix the two flour, sugar, oats, and butter, until incorporate, place this mixture in a 8×8 pyrex and bake for 20 minutes.
  3. In the meant time melt the caramels with the water in a pan on low heat, and wait to the last 3 minutes to melt the chocolate.
  4. Once the base is ready, pour the melted caramels and then pour the chocolate on top, let this deliciousness cool completely before cut in to it.

This recipe makes 1 8×8 pyrex or about 20 bars.

Delicious with coffee, juice, tea, milk or wherever you like, is a perfect complement after lunch, a treat for your kids, and like my daughter said just make a smile face with chocolate chips and I’m happy mami.
She really like chocolate chips, (smile face).

INGREDIENTS

  • 2 sticks butter a room temperature
  • 2 cups flour
  • 3/4 cup powder sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • Zest of one orange
  • 1/8 teaspoon salt

DIRECTIONS

  1. Preheat the oven to 325° F.
  2. Beat the sugar with the butter for 4 minutes, in a bowl mix the flour, baking powder and orange zest, add this to the butter mixture with the vanilla.
  3. Roll the dough in a surface with little flour, cut the cookies, choose the shape your kids love the most, place on a baking sheet and bake for 15 minutes.
  4. Once ready place on a rack to cool.
  5. This recipe makes 36 cookies.

Fried Yucca with Pink Sauce #Tailgate #SundaySupper

Fried Yuca with Pink SauceCollege football, NFL, Formula 1, soccer, this is the time of the year when we pull out our chair in from of the t.v. with friends and family to enjoy all the sports.
And we have so many recipes for you today to make and be part of this great season.
I made for you something very traditional and delicious, Fried Yuca, this is a root vegetable very starchy like a potato, and we made a lot of different recipes with this versatile vegetable.
I really encourage you to try it, you will be amaze how different and delicious it is.

INGREDIENTS

Yuca

  • 2 bags of Frozen Yuca (I recommend the one from Goya Foods)
  • 2 teaspoons of salt
  • 2 teaspoons of lemon
  • oil for frying

Pink Sauce

  • 3/4 c Ketchup
  • 2/3 c Mayonaisse
  • 1 teaspoon dijon mustard
  • 2 teaspoon sweet relish

DIRECTIONS

  1. In a pot with boiling water add the salt, lemon and yuca, cook for 30 minutes.
  2. Once cook use a colander to strain the water and let it cool completely.
  3. In the mind time you can make the pink sauce, just mix all the ingredients together until well combine, refrigerate.
  4. In a cast iron skillet or frying pan heat the oil and add the yuca, taste the oil by adding a little piece of the yuca if sizzle is ready, fry for 5 minutes each side of until brown, crispy and yummy.

This recipe makes about 30 pieces of fried yuca.

Preparation time: 20 minutes
Cooking time: 40 minutes total

Simple Orange Bundt Cake Anniversary #BundtaMonth

DSC_0011What an honor to participate in this #BundtaMonth because we are celebrating 1 year since this amazing group was created, and we bake our best recipes to celebrate with all of you.
My bundt sounds simple but it is not is super moist, soft, amazing crumb and have a delicious orange flavor, my grandmas recipe
It is perfect for an afternoon coffee or a complement at breakfast time, either way you are going to love the flavor in this bundt cake.

INGREDIENTS

  • 3 cups flour
  • 1 cup sugar
  • 1/2 cup light brown sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon of salt
  • 1 cup orange juice
  • zest of one orange
  • 1/2 cup milk
  • 3/4 cup raisins
  • 2 sticks butter room temperature
  • 3 eggs
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Preheat the oven to 350º F.
  2. In a stand mixer with a paddle attachment creme the butter and sugars for 3 minutes.
  3. In a bowl sift all the dry ingredients with the orange zest, to the above mixture add eggs 1 by 1, vanilla extract, you can incorporate the milk to the orange juice, and start adding wet and dry ingredients. Remember to add fist dry and finish with dry, this is a good way to ensure a soft cake.
  4. Add the end remember to incorporate the raisins.
  5. Prepare the mold with some no stick spray add the delicious batter and bake for 50 minutes or check with a toothpick comes out clean.

This recipe makes 1 hold bundt cake or 8 mini bundt cakes.

Preparation time: 25 minutes
Cooking time: 50 minutes

Stir-Fry Rice with Turkey Bacon and EggsInspired by all the kinds of bacon that you can find on the market and because on a holiday I want to relax and cook something simple, I create this delicious, easy and super fast recipe, that way you can relax with me this Labor Day.
Our friend Foodie Stuntman is hosting this week a fabulous event, celebrating Labor Day and the unofficial ending of the summer, which is really sad, and we join him with delicious recipes so you can also be inspired by great food, drinks and desserts.
So grab a chair a plate and some napkins because you are here for a feast.

INGREDIENTS

  • 8 slices of turkey bacon chopped
  • 3 cups of cooked white rice
  • 2 garlic cloves mince
  • 2 cooked scramble eggs
  • 1 teaspoon sesame oil
  • 4 tablespoons soy sauce
  • 2 cups frozen peas
  • Salt to taste (if necessary)

DIRECTIONS

Heat a pan to medium high heat, add the oil,  turkey bacon and garlic, cook for 5 minutes, add the rice and soy sauce, mix add the peas and the eggs, stir until well combined. Taste the rice before serving to check the salt.
Serve immediately, is better hot with a side of cucumbers or a salad.

Serve 4 people.
