STUFFED BISCUITS WITH PINEAPPLE JAM AND CONDENSED MILK

This is definitely a very easy and delicious recipe, perfect for those days when you want to prepare something different and fast for breakfast or snack.

  • 1 tube of 8 units Biscuits
  • 2 tablespoons of condensed milk
  • 1/2 cup of pineapple jam
  • 1 teaspoon of cinnamon
  • 1 egg
  • 1/2 teaspoon of water

DIRECTIONS

Preheat oven to 350 degrees F.

In a bowl, mix the condensed milk with jam.

Separate in half each of the Biscuits, place a teaspoon of filling on one half and place the other half on top, pressing the edges seal well with a fork.
Place on a tray.

Mix the egg with the water and brush each biscuits, sprinkle cinnamon and bake for 17 minutes.

Remove from oven and cool completely.

INGREDIENTES

  • 1 tubo de 8 unidades de Biscuits
  • 2 cucharadas de leche condensada
  • 1/2 taza de jalea de Pina
  • 1 cucharadita de canela
  • 1 huevo
  • 1/2 cucharadita de agua

PREPARACION

Precaliente el horno a 350 grados F.

En un tazón mezcle la leche condensada con la jalea.
Separe por la mitad cada uno de los Biscuits, coloque una cucharadita del relleno en una de las mitades y coloque la otra mitad por encima, cierre bien las orillas presionando con un tenedor. Coloque en una bandeja.

Mezcle el huevo con el agua y barnice cada uno de los biscuits, rocie la canela y lleve al horno por 17 minutos.

Saque del horno y deje enfriar completamente.

Sirva y disfrute.

De esta receta salen 8 Biscuits.

Ok I bet right now you may be wondering why I did an ice cream recipe if already started the fall. Well to start let you know that this recipe is a creation of which I am very proud and around here we still have a very hot weather.
To spare the hassle of waiting for hours for the ice cream to be ready, it seemed important to create a recipe practical, easy, and with few ingredients, this week’s #SundaySupper family wants to give easy and delicious recipes with only 5 ingredients.

INGREDIENTS

  • 100 grams of semi sweet chocolate cut into chunks
  • 30 Caramels
  • 2 tablespoons heavy cream
  • 1 cup nut topping
  • 1.5 qt of vanilla ice cream

DIRECTIONS

In a small saucepan, place caramels and whipping cream over low heat, stirring constantly until melted.

In a blender, place the frozen medium speed and gradually add the melted caramels, chocolate and topping.
Stir for 3 minutes.

Place in a container and freeze for 8 hours.

Serve and enjoy.

LEMON AND COCONUT MERINGUES

What a delicious way to welcome your guests with flavors of coconut in your kitchen. And these meringues are the perfect option.
One way to enjoy this type of dessert or accompaniment for coffee, a different way to serve something sweet.
My family loves meringues for that reason I try to make meringues with different flavors, delight your family and friends with this different style of dessert.

INGREDIENTS

  • 4 egg whites
  • 1 1/2 cup sugar
  • 1/8 teaspoon cream of tartar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 1/2 cup dried shredded coconut
  • 1 pinch of salt

DIRECTIONS

Preheat oven to 200 degrees F.

Place in the mixer the egg whites, cream of tartar and start beating, add sugar in rain form and beat on high speed for 10 minutes.
After 10 minutes, add vanilla, coconut extract, lemon zest and pinch of salt.

Place the meringue in a piping bag with nozzle or simply place spoonfuls of meringue on trays lined with parchment paper.

Sprinkle coconut over the meringues and bake for 2 hours.

Remove from oven and place on wire rack to cool completely.

This recipe makes 50 meringues.

INGREDIENTES

  • 4 claras de huevo
  • 1 1/2 taza de azúcar
  • 1/8 cucharadita de cremor tartaro
  • 1 cucharadita de ralladura de limon
  • 1/2 cucharadita de extracto de coco
  • 1 cucharadita de extracto de vainilla
  • 1/2 taza de coco rallado deshidratado
  • 1 pizca de sal

PREPARACION

Precaliente el horno a 200 grados F.

Coloque en la batidora las claras de huevo, cremor tartaro y comience a batir, agregue el azúcar en forma de lluvia y bata a velocidad alta por 10 minutos.
Pasados los 10 minutos , agregue la vainilla, extracto de coco, ralladura de limon y pizca de sal.

Coloque el meringue en un manga pastelera con boquilla o simplemente coloque cucharadas del merengue en bandejas forradas con papel encerado.

Rocie el coco rallado encima de los merengues y hornee por 2 horas.

Saque del horno y coloque en una rejilla a que enfríen por completo.

De esta receta salen 50 merengues o suspiros.

A GREAT FIND

I cannot help but share with you this great find.
I went to my local supermarket to buy some things I needed for dinner, when in one of the aisles I found something very familiar to me.
You will see as I have said before I am from Costa Rica and since I live here in San Diego I had a hard time finding some characteristic products of my country, well, today was different to my surprise I found that black beans are also common in my country.
You cannot imagine the happy face I had to see the package, don’t get me wrong I’m very happy to be here, but occasionally I miss my country and seeing today those black beans was amazing for me. And you know what I did right? I buy a lot of them.
Believe me exciting moment for me.

APPLE AND PECANS CAKE for #SundaySupper

Summer is over and we start now one of the seasons of year that I enjoy the most, Fall, which brings some of the traditions that every family enjoys, such as is to go to pick apples.
Delicious apples of all types and sizes with which we can make many desserts, entrees and hot and cold drinks.
I love this time of year and what better way to start the fall.

INGREDIENTS

  • 3 apples, peeled and chopped
  • 2 cups flour
  • 3 tablespoons baking powder
  • 1 tablespoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 cup skim milk
  • 2/3 cup melted butter
  • 1 egg
  • 1 pinch of salt
  • 1 cup chopped pecans

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).

In a bowl stir together flour, baking powder, cinnamon, ground ginger, nutmeg, brown sugar and regular sugar, mix just until incorporated.
In another separate bowl stir for butter, milk and eggs, join the above mixture and revulva well, finally add apples and pecans.

Place in a previously greased Bundt pan and bake for 45 minutes.

Let cool in pan for 10 minutes, remove from pan and place on a wire rack to cool completely.

This recipe makes 12 servings of cake

I start telling that I love cheese in any shape and size, this is one of the main reasons why I made ​​this recipe.

SWIRL NUTELLA CUPCAKES for #SundaySupper

It is in my opinion one of the best times of year where delicious meals are shared.
On this occasion I offered for the first game, bring dessert since I almost always have to do a main course, but not this time, and I offered to make some delicious and succulent cupcakes with Nutella. Delight in my mouth just thinking about it I would like to be eating another, the only disadvantage of bringing dessert is that everyone looks forward to finish the meal and the dessert is over too fast.
These exquisite cupcakes are quick and easy to make considering that we should not spend a lot of hours in the kitchen because you have to enjoy the party.
So enjoy a great time with your favorite teams, family and friends and remember that no matter who wins or loses, the most important is family fun.

INGREDIENTS

  • 1 box of cake mix (preferably White)
  • 3 egg whites
  • 2 tablespoons vegetable oil
  • 1 1/3 cup water
  • 1 tablespoon vanilla
  • 1/2 cup Nutella

DIRECTIONS

Preheat the oven to 325 ° F.

Line 24 medium-size cupcake cups with paper liner, you’ll need two cupcake pans with 12 cups each.

In a bowl mix cake mix, water, oil, egg whites and vanilla, stir well until well incorporated, place a cup of the mixture in a separate bowl and toss with the ½ cup of Nutella.

DULCE DE LECHE AND COCONUT LOG

I mentioned at some point that my husband does not like birthday cake, so every time we celebrate a birthday in the family I try to make a dessert for my husband and so he will also be able to enjoy the celebration.
This time I made this delicious log or roll filled with Dulce de Leche and coconut, to the surprise of many, it is very easy to make and incredibly delicious.
It was so popular that the poor cake remained almost in one piece that day.
There is no way look bad with desserts like this and believe it or not take the picture was also difficult. No reason to stop enjoying a celebration when they do not particularly like any dessert because the main reason is to have fun as a family.

  • 1 cup of flour

  • 1 teaspoon of baking powder

DIRECTIONS

Preheat oven to 350 degrees F (176 degrees C).

Place the egg whites in a mixer and beat until stiff peaks, add the egg yolks one at a time and one cup of sugar gradually, add vanilla and coconut extract.

In a bowl sift together the flour, cornstarch, baking powder and salt, lower the mixer speed and slowly add to above mixture along with the butter.

Place on a tray lined with parchment paper, spread the mixture well and bake for 12 minutes.

Once ready, and when still warm sprinkle with remaining sugar, place a piece of parchment paper over the back and a roll, let it cool completely.

Once cool spread and fill with Dulce de Leche and coconut, roll again and decorate with more dulce de leche and coconut.

Serve and enjoy.

Les mencione en algún momento que a mi esposo no le agrada el queque de cumpleaños, así que cada vez que festejamos un cumpleaños en la familia trato de hacer un postre por aparte para el y de esa forma el también va a poder disfrutar de la celebración.

En esta ocasión hice este delicioso tronco o rollo relleno de dulce de leche y coco, que para sorpresa de muchos es muy facil he increíblemente delicioso de hacer.
Fue tan popular que el pobre queque quedo casi entero ese día, de no ser porque uno que otro decidió comer de los dos.
No hay forma de quedar mal con postres como este y aunque no lo crean hasta para tomar la foto fue difícil.
No hay razón para dejar de disfrutar una celebración cuando no no gusta algún postre el particular ya que la principal razón es pasar un rato agradable en familia.
Así que espero les guste este poco común sustituto para un queque de cumpleaños, de seguro le encantara a toda la familia.

INGREDIENTES

  • 1 taza de harina
  • 1 cucharada de maicena
  • 1 cucharadita de polvo de hornear
  • 1 taza de azúcar mas 1/2 taza para rociar
  • 3 cucharadas de mantequilla sin sal derretida
  • 4 huevos separados
  • 1 cucharadita de vainilla
  • 1/4 cucharadita de extracto de coco
  • pizca de sal
  • 1 lata de Dulce De Leche
  • 1 1/2 taza de coco rallado
PREPARACION
Precaliente el horno a 350 grados F ( 176 grados C ).
Coloque las claras en la batidora y bata a punto de nieve, agregue las yemas de huevo de una en una y una taza de azúcar poco a poco, agregue la vainilla y el extracto de coco.
En un tazón cernir la harina, maicena, polvo de hornear y sal, baje la velocidad de la batidora y poco a poco agregue a la mezcla anterior junto con la mantequilla.
Coloque en una bandeja forrada con papel encerado, extienda bien la mezcla y hornee por 12 minutos.
Una vez listo y aun caliente rocie con el azúcar restante, coloque un trozo de papel encerado, vuelque y de forma de rollo, deje enfriar completamente.
Una vez frio extienda y rellene con el Dulce de Leche y coco rallado, enrolle de nuevo y decore con mas dulce de leche y coco.
Sirva y disfrute.

I love holidays especially when it’s still summer and the family can enjoy a special time.
This week we celebrate Labor Day in style and what better way than to prepare a delicious cookout. On this occasion I made delicious pork sliders, which have been a success in my family, which makes me very happy because there are times it is hard to get kids to eat new things.
Super easy to make and only require an occasional ingredient and to make your day even easier you can cook the pork since previous day and serve at room temperature.
The holidays are a time for families to enjoy a great time and for that reason we should not complicate, I invite you to make these delicious mini burgers that will delight every member of your family.

INGREDIENTS

  • 1 pound of pork tenderloin
  • 1 cup of already made Pesto
  • 2 Roma tomatos, sliced
  • 1 avocado cut in to slices
  • 12 sliders buns
  • Salt and pepper to taste

DIRECTIONS

Season the pork with salt and pepper.
In a hot pan with oil, cook the meat for 20 minutes, turning every 5 minutes.
Once the meat cooked, let rest and slice.

To assemble the sliders:
Split the bread, place half a teaspoon of pesto on top of each bread, place 2 slices of meat, a slice of tomato, 2 slices of avocado and other top of the bread.

Serve and enjoy.

This recipe makes 12 sliders.

Preparation time: 10 minutes
Cooking time: 20 minutes

SCRAMBLED EGGS WITH TOMATO AND HAM

This is a recipe that takes me to the times as a child, my grandmother used to make this super easy dish as a snack for after school.
How I miss those days, nothing better than the food that makes grandma.
I have always believed that the best memories are made in the kitchen, so now I try to do this kind of dishes full of nostalgia for my family.
This is a very simple recipe, but delicious and I’m sure will delight your entire family.

INGREDIENTS

  • 8 Whole eggs
  • 1 onion, chopped
  • 200 grams of cooked ham
  • 3 tomatoes, seeded, chopped
  • 1/2 cup of chopped cilantro
  • salt and pepper to taste
  • cooking spray

DIRECTIONS

Spray a hot skillet with cooking spray, add onion and ham cook for 3 minutes, add the tomatoes and cook another 3 minutes, season with salt and pepper.
Add eggs, cilantro and stir well, cook for 5 minutes over low heat.

Serve and enjoy.

Esta es una receta que me transporta a los tiempos de cuando era nina, mi abuelita acostumbraba a hacer este platillo súper sencillo como una merienda para después de la escuela.
Como extraño esos días, nada mejor que la comida que hace la abuela.
Siempre he creído que los mejores recuerdos se hacen en la cocina, y por eso hoy en día trato de hacer este tipo de platillos llenos de nostalgia para mi familia.
Esta es una receta muy sencilla, pero deliciosa y estoy segura que encantara a toda su familia.

INGREDIENTES

  • 8 huevos
  • 1 cebolla picada
  • 200 gramos de jamón cocido
  • 3 tomates sin semillas picados
  • 1/2 taza de culantro picado
  • sal y pimienta al gusto
  • spray de cocina

PREPARACION

Rocie una sartén caliente con spray de cocina, agregue la cebolla y el jamón cocine por 3 minutos, agregue el tomate y cocine otros 3 minutos, sazone con sal y pimienta.
Agregue los huevos, el culantro y revuelva bien.
Cocine por 5 minutos a fuego bajo.

Sirva y disfrute.

Rinde para 4 personas.
