This nutrient promotes bone and dental health, and contributes to blood clotting, muscle contraction, and when taken as part of a healthy diet can help prevent diseases such as osteoporosis, hypertension and obesity. “Recent studies have shown that consuming 3 fat dairy a day prevents the buildup of fat in the cells thus facilitating weight reduction.

It is also the vehicle of nutrients such as vitamins and minerals, among which we can mention phosphorus, magnesium, vitamin A, B2, B12 and D, which exert specific and important functions in health. Therefore, the daily intake of 2 cups of milk is recommended.

Tilapia Fries with Chipotle Mayonnaise #WeekdaySupper

Tilapia Fries With Chipotle MayonaiseThese perfect, crispy and delicious little fish bites, are a great alternative to your everyday fish sticks. What’s most important is that they are 100% homemade.
This is a different alternative to the everyday #WeekdaySupper and of course is delicious, fresh and I know your kids are going to love it.
The sauce is a simple chile chipotle mayonnaise, and of course is a little spicy. But oh my, it is so delicious to use as a dip. It is perfect to put on the kiddos lunch box, take to work or just have it as an afternoon snack.
I hope you like them and enjoy!

INGREDIENTS

  • 1 pound of Tilapia filets cut in chunks
  • 2 cups flour
  • 1 cup breadcrumbs
  • 4 eggs
  • Salt and pepper
  • Enough Oil to fry the fish
  • FOR THE MAYONNAISE
  • 1 cup of mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cilantro finely chopped
  • 1 Chipotle pepper in adobo
  • juice of 1/2 lemon
  • zest of 1/2 lemon
  • salt, to taste

DIRECTIONS

Cut the tilapia filets in steak fries like, you know like the potato.

In a bowl or container beat the eggs with salt and pepper and in another container mix flour, breadcrumbs, salt and pepper. And don’t forget to start heating the oil in a heavy bottom pot, at 325 degrees F.

Now let start doing the coating, is super easy just like a 1,2,3, method. 1 Fish in flour mixture. 2 Fish in egg. 3 Fish in flour mixture again, and repeat one more time.

Once the two coating of breading are ready, let start frying this fish, add some pieces not all the pieces and fry until golden brown, it takes about 5 minutes total. Don’t place to much fish to the oil otherwise it will lower the temperature and it will not cook the fish properly.

For the Chipotle Mayonnaise, just mix in a bowl all the ingredients, I like little pieces of chipotle pepper, that is why for this mayonnaise in particular I don’t like to use the food processor.

Preparation time: 15 minutes
Cooking time: 20 minutes

I decided to make a jelly because I want it to offer a different and unique way to feature the Red Moscato Wine. The flavors in the wine like citrus, peach and berries are a fabulous complement to all kinds of cheese or if you want to top a piece of baked ham.
The Red Moscato Jelly is perfect to serve at a dinner party, with crackers, figs, or as a complement on a Charcuterie board.

The Red Moscato is a fruity sweet delicious wine, and is perfect to complement any meal, but when you use the wine in a jelly or a sauce the flavor enhance more and you can have a glance of a different taste. All the berries and peach are highlighted in a very different and delicious way. This is why I enjoy and love to cook with Gallo Family Wines: they are not only for drinking but you can also enjoy them in a recipe.

Draculas Wine Jelly

INGREDIENTS

  1. 3 ½ cup of Red Moscato wine
  2. 4 tablespoons of pectin
  3. ½ cup lemon juice
  4. 1 ½ cups sugar

DIRECTIONS

  • In a heavy bottom pot heat to medium low heat, add the wine, and let it simmer until reduced by half, add the lemon juice and the pectin, stir constantly to avoid the form of lumps.
  • Gradually add the sugar, and cook for 10 minutes in a low heat.
  • Then, add the jelly to the jars already clean.
  • You can start serving some Dracula jelly in your Halloween party, after refrigerated for at least 4 hours.

This recipe makes 4,½ pint jars of jelly.

I made my spooky almond cookies, and am sure you will be super surprise with this cookies, there are so different and sweet, delicious, crunchy, well you need to make them and try.

INGREDIENTS

  • 2 egg whites room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped almonds
  • 1 cup almond flour

DIRECTIONS

  1. Preheat the oven to 325°F.
  2. Place the egg whites in the bowl of a stand mixer and beat on high speed until stiff peaks form, then add the sugar little by little and the vanilla extract, beat for 5 more minutes,
  3. Once ready, add the chopped almonds and stir by hand, then add the almond flour and stir by hand as well until well incorporated.
  4. With the help of a little ice cream scoop, place little balls on a previously grease cookie sheet, and bake for 20 minutes.
  5. Do not worry if the cookies spread a little. Let it cool completely before eating.
    This cookies are highly addictive so make sure to make more the one batch.
  6. This recipe makes 24 cookies.

And this is why today the #SundaySupper team have some easy, fast, delicious and economical recipes for our super busy everyday life.
Like my vegetable fried rice, super fast and easy made with leftover rice, for any occasion and if you know me you will see how I love rice, rotisserie chicken and pasta, you need to make those ingredients a must in your house ASAP.

INGREDIENTS

  • 2 cups already cook white rice
  • 1 1/2 cup dice celery
  • 1 1/2 cup dice red bell pepper
  • 2 cups shredded carrots
  • 1/2 cup chopped cilantro
  • 1 tablespoon oyster sauce
  • 3 tablespoons soy sauce
  • 1 teaspoons sesame oil

DIRECTIONS

  1. Heat a pan to medium low heat and add the oil, celery and bell pepper, cook for about 3 minutes, don’t cook to long or they turn soft and we want crunchy vegetables.
  2. Add the rice and mix then add the carrots, oyster sauce, soy sauce and cilantro, and mix just to incorporated everything.
  3. Serve immediately with a side of salad or more vegetables.
  4. This recipe makes 3 servings.

Caramel Banana Bundt Cake #BundtBakers

caramel banana bundt cakeAnd this is the month I was waiting for so long, because we made delicious and irresistible caramel bundt, yes so sweet and gooey good the you never ever would look a bundt cake with the same eyes.
And this is because caramel is just my favorite, well that and coconut, I cook, make and created a lot of my sweet recipes with coconut and caramel, yum, and maybe is because back in home those are like an every day staples in the kitchen, making sweet recipes required caramel or dulce de leche all the time.
It is just delicious, and in this occasion I really want it to make something new and different, and is so funny, I made my bundt with some caramel filling, but it kinda got stuck on the pan, but it is still so delicious, gooey and oh my incredibly addictive, oh I forgot to tell you the I add some banana for a “healthy” approach.
As I always said enjoy and I hope you like it.

INGREDIENTS

  • 3 cups AP flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 sticks soften butter
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 2 mashed bananas
  • 1 cup fat free half and half
    FILLING:
  • 1/2 cup caramel(I used the one for ice cream)
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar

DIRECTIONS

Preheat the oven to 350°F.

Cream butter and sugar in a stand mixer for 5 minutes.

Once the butter is all fluffy and light, add eggs, vanilla extract, mashed banana and half and half. It would look weir at first but don’t worry once you add the dry ingredients it will look pretty.

In a separate bowl sift flour, salt and baking soda, add to the egg and butter mixture and beat for 3 minutes.

See now looks super yummy and pretty.

In a bundt mold already cover with oil and flour or butter, add half of the batter then add the caramel filling, (just mix the caramel, cinnamon and brown sugar together to well combine), be careful with the filling place it only in the center and without touching the sides of the mold, and then add the rest of the batter.
Bake for 1 hour or until the center of the cake when you insert a toothpick comes up clean.

This recipe makes 1 bundt cake.

Preparation time: 25 minutes
Cooking time: 1 hour

Sweet Dry Grapes Bread with Cinnamon #BreadBakers

sweet dry grapes bread with cinnamonSecond month to be participating with this fabulous group and I love it, it is amazing how versatile and simple it is to bake and create different types of bread and share with you all my experience and the mistakes too.
This month we make breads with grapes in any shape and form, like raisins, because you know the dry grapes are raisins, and thats what I use in my recipe, delicious sweet and dry grapes.
It is a very crunchy and soft bread with hints of cinnamon and of course lots and lots of pieces of dry grapes.
Perfect for this fall weather, help you keep you warm in the afternoons, anyway, is just what you need at any hour, any day, for whatever you want to eat it.

INGREDIENTS

  • 4 cups AP flour and more for kneading
  • 1 teaspoon salt
  • 1 1/2 teaspoon dry active yeast
  • 1/2 cup lukewarm water
  • 1 1/4 cup sugar
  • 4 eggs
  • 1/2 cup margarine
  • For the filling:
  • 1/2 cup margarine
  • 3 tablespoons grown cinnamon
  • 1 1/2 cup brown sugar

DIRECTIONS

In the mixer bowl combine salt, flour, sugar and raisins (chopped the raisins just for the bread to be completely cover with them).

In another bowl add the yeast to the warm water and let ir rise for 5 minutes, fates that add eggs and margarine, and star adding to the flour mixture.

Mix the dough for 7 minutes, it will looks super sticky but that is ok.

Place the dough in a previously grace bowl and cover with plastic wrap and let ir proof for 2 hours. It looks beautiful and the smell just like this is amazing.

In the meantime mix brown sugar and cinnamon and melt the margarine, you need to be ready once the time has past and the dough is all rest and super relax.

oOk, now lets work the dough a little kneading for 5 minutes, then try to shape it into a rectangle, brush some margarine and sprinkle the super aromatic mixture of cinnamon and brown sugar, roll the dough, just like when you make cinnamon rolls.

Place the bread rolls in a grease baking sheet, smear more margarine and let it proof again for 20 minutes, this is enough time to preheat your oven to 375°F and then bake the bread for 35 minutes.

This recipe makes 2 loaf of bread.

Preparation time: 15 minutes plus 2 hours and 20 minutes of proofing
Cooking time: 35 minutes
Level of the recipe: Easy

Apple Braid Bread #TwelveLoaves

Apple Braid BreadAnd we welcome the Autumn season with some inspired and delicious recipes made with apples, yes the #TwelveLoaves team, made a bunch of different types of bread and because is apple picking time, you can make all of them.
My take this month on a delicious apple inspired bread is something the I love eating growing up, Braid Bread, the bakeries in my country have all kinds of braid bread, sweet or salty you just can’t decide in just one.
I try this recipe a couple of times and is not your typical bread recipe, is more compact and doesn’t rise a lot.
The most important here, is the you make the bread and enjoy with a cup of coffee or tea, because in the cool afternoons there is nothing better than that.

INGREDIENTS

For the Dough:

  • 21/2 cups flour
  • 1/3 cup sugar
  • 1/4 cup soft butter
  • 2 eggs
  • 1/3 cup warm milk
  • 2 teaspoon of dry yeast
  • 1 teaspoon vanilla extract
  • pinch of salt

For the filling:

  • 1 teaspoon butter
  • 2 apples, cut into chunks
  • pinch of salt
  • 1 teaspoon grown cinnamon
  • 1/2 cup Dulce de Leche

DIRECTIONS

Preheat the oven to 350°F.

Bread 1

Add the yeast to the warm milk and let it proof for about 5 minutes, you can sprinkle some sugar to help.
In a bowl mix flour, eggs, vanilla extract, salt add the yeast (once ready) and mix to combine with a wooden spoon, add the butter little by little and mix until is all incorporate.
In a slightly flour surface, place the dough and knead for a few minutes, place in the bowl aging and let it rest for 30 minutes.

In the meant time place dulce de leche, cinnamon, salt and apples in a pot and cook for 5 minutes in low heat. Let it cool completely, this is important we don’t want a hot filling for out dough.

Ok now the fun part, form a rectangle with the dough and place it in a baking sheet cover with parchment paper, add the filling in the center and cut the sides, about 10 each side, but from the center to the outside, is a little messy but thats ok, my little daughter help me with this one and it was super fun.

See what  I mean, when I have help everything looks so beautiful, ok then put the little pieces one on top of the others, remember to close the ends, you can brush some egg mix with little water to make it more brown and delicious.
Bake for 40 minutes.

This recipe makes 1 braid bread.

Preparation time: 45 minutes
Cooking time: 40 minutes

homemade hash brownI’m so happy you are join us for today #SundaySupper and be part of the Unprocessed movement, the Andrew Alder started a few year ago.
Although we know, must of the food we buy at the supermarket is brain processed in some way, we want to encourage you to eat more healthy, local, and even plant by your own hands.
That’s what we mean with unprocessed, just by trying a homemade everyday food, makes this a unique way to eat everyday and you can feel better knowing whats in your plate.
Like my Homemade Hash Browns,is so easy and so delicious the nobody is going to believe they are homemade, with little crispy bits and the fresh flavor of cilantro, this makes a unique and perfect way to start your sunday morning.
Enjoy and remember, homemade is better.

INGREDIENTS

  • 3 Idaho potatoes
  • 1/2 cup dice onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon oil
  • 4 teaspoons butter
  • Salt and pepper to taste

DIRECTIONS

Preheat the oven to 350°F. Rinse and dry the potatoes, bake for 1 hour. Once ready let it cool and peel them.

Using a grater or a food processor, grate the potatoes, yes I used the one you see on the photo.

Heat a pan to medium heat add oil and 1 teaspoon of butter, add the onion and cook until it become transparent, about 3 minutes.

Add the grated potatoes, a good amount of salt, pepper and the rest of the butter, and cook for about 8 minutes.

After that time it would look like this, sprinkle the cilantro for a fresh flavor, I love soft with little pieces of crispiness, but if you like more crunchy just leave it longer.
They are perfect as a complement to a meat, breakfast or just because you are hungry and want a midnight snack.

Cooking time: 1 hour 25 minutes
